반추동물에게 사료를 정확하게 배합해서 주기 위해서는 동물의 체내에서 어떻게 분해되는지 체계적으로 알아볼 필요성이 있다. 주정박(DDG, dried distiller’s grain)은 에탄올 산업의 지속적인 발전에 따라 많은 종류의 주정박들이 개발되어 화학적 조성과 가공형태에 따라 종류도 다양하다. 따라서 DDG의 DM(dry matter)과 CP(crude protein)가 체내에서 분해될 때 특성을 알아보기 위해 대표적인 DDG 3종류(옥수수 DDG(corn DDG), 고단백 옥수수 DDG(HP-DDG, high-protein corn DDG), 밀 DDG(WD, wheat DDG))과 대두박(SBM, soybean meal)을 실험사료로 사용하였다. 4가지 사료를 cannular가 삽입된 한우의 반추위에서 1, 2, 4, 6, 8, 12, 24, 48시간 동안 배양시켰다. DM의 fraction A는 WD가 37.25%로 가장 높았으며, corn DDG와 SBM이 중간 정도 였으며, HP-DDG가 가장 낮았다. CP의 fraction A는 WD에서 가장 높았고, corn DDG에서는 중간 정도였으며, HP-DDG와 SBM에서는 가장 낮았다. 반면에, fraction C는 HP-DDG에서 가장 높았고(41.2%), corn DDG에서는 중간 정도였으며(29.7%), WD와 SBM가 가장 낮았다(4.7, 3.9%). DM의 fraction B의 분해속도(% h−1)는 SBM(13.3%), WD(9.1%), corn DDG 및 HP-DDG(5.3, 5.1%)의 순서였으며, CP의 fraction B의 분해속도(% h−1)는 SBM(17.6%), WD(11.6%), corn DDG 및 HP-DDG(4.9, 3.9%)의 순서였다. 통과속도를 0.06h−1라고 가정할 때 CP의 효율적 분해율은 SBM(73.9%)과 WD(71.2%)가 가장 높았고, corn DDG는 중간 정도였으며(42.5%), HP-DDG(28.6%)은 가장 낮았다(P < 0.001). 결과적으로 실험사료의 RUP는 HP-DDG 71.4%, corn DDG 57.5%, WD 28.8%, SBM 26.1%로 계산되었으며, 이러한 사실로 볼 때, corn DDG와 HP-DDG는 반추위에서의 단백질 분해가 낮아 소장으로 넘어가는 단백질이 높은 사료임을 알 수 있었다. 또한 이러한 결과는 영양소의 소화관 내 이용성을 고려하여 사료의 배합을 좀 더 정확하게 할 수 있는 기초자료로써 유용하게 쓰일 수 있을 것이다.
Exp 2. 사료의 CP 함량 및 RUP 수준 차이가 면양의 영양소 섭취량, 소화율 및 체내질소균형에 미치는 영향
본 연구는 사료의 CP 함량 및 RUP 수준 차이가 면양의 영양소 소화율 및 체내 단백질 축적율에 미치는 영향을 평가하기 위해 실시하였다. 시험사료는 총 16종의 사료원료를 이용하여 제조하였으며, TDN을 포함한 다른 화학성분은 최대한 비슷하게 하여 처리별로 각각 low protein(LP) : CP= 12%(RUP 35.1%), high protein-low RUP(HPLR) : CP= 15%(저 RUP 33.7%, SBM), high protein-high RUP(HPHR) : CP = 15%(고 RUP 45.8%, DDG)로 차이를 주어 처리하였다. 실험동물은 숫 면양 5두를 대조구와 처리구에 완전 임의로 할당하여 대사틀에 넣고 3번의 시행에서 동일 면양이 특정 처리구에 반복 이용되지 않도록 하였다. CP함량 및 RUP 수준 차이는 면양의 DM 섭취량과 DM 소화율에는 영향을 주지 않았으며, 일일 CP 섭취량, 가소화 CP 섭취량 및 CP 소화율은 증가하였다. RUP 수준 차이에 따른 섭취량 및 소화율 차이는 없었다. 높은 CP 함량으로 인해 HPLR구와 HPHR구의 N 섭취량이 높았으나 분과 뇨의 N 배설량에는 유의적 차이가 없었다. 이로 인해 체내 N 축적량은 HPHR구에서 가장 높았으며, LP구에서 가장 낮았다. 결과적으로 CP 함량 및 UIP 수준 차이는 면양의 섭취량과 소화율에는 영향을 주지 않으면서 CP의 증가를 RUP로 조절해 줄 경우 RDP때 보다 낮은 N 배설량으로 인한 체내 축적량을 증가시켜 N 이용효율을 향상시키는 것으로 나타났다. 이러한 질소이용성의 향상은 환경오염저감에 긍정적인 효과를 줄 수 있을 것으로 판단되며 추후 이와 관련된 한우 사양 실험 및 반추위 내 실험이 동반되어야 할 것으로 판단된다.
Exp 3. 사료의 CP 함량 및 RUP 수준 차이가 거세한우의 증체, 혈중대사물질 및 도체특성에 미치는 영향
본 연구는 사료의 CP 함량과 RUP 수준 차이가 육성 비육기 거세한우의 사료섭취량, 증체량, 혈액특성 및 도체특성과 경제성 평가에 미치는 영향을 알아보기 위해 실시하였다. 평균체중 253.8±21.8 kg(평균 8.2± 0.5개월령)의 거세한우 36두를 공시하여 처리구별 12두, 처리당 3칸, 칸당 4두씩 체중을 고려하여 임의 배치하였다. 시험사료는 TDN을 포함한 다른 화학성분은 최대한 비슷하게 하면서, 육성기는 low protein(LP) : CP= 12% (RUP 35.1%), high protein-low RUP(HPLR) : CP= 15%(저 RUP 33.7%, SBM), high protein-high RUP(HPHR) : CP = 15%(고 RUP 45.8%, DDG). 비육전기는 LP = 12%(RUP 36.8%), HPLR = 14%(저 RUP 35.7%, SBM), HPHR = 14%(고 RUP 44.6%, DDG)로 차이를 주어 처리하였다. 비육후기는 LP = 12%(RUP 48.8%), HPLR = 13%(저 RUP 46.7%, SBM), HPHR = 13%(고 RUP 51.1%, DDG)로 차이를 주어 처리하였다. 사료는 1일 2회(아침, 저녁) 공급하였고, 사료와 물은 자유 섭취하도록 하였다. 육성기 축사바닥의 환경평가 결과 총질소와 암모니아 함량은 HPLR구에서 가장 높았으며, LP구에서 가장 낮았다. 한우 거세우 육성 비육기의 CP 함량 및 RUP 수준의 차이는 증체량 및 DM, TDN 섭취량에는 유의적 영향을 미치지는 않았지만, 처리구의 높은 CP 섭취량으로 인해 사료 CP요구율이 높게 나타났다. 혈액 검사결과 정상적 범위의 혈액 화학치를 보여 탄수화물, 지방, 단백질의 체내 대사와 간 기능, 신장기능 및 혈액 세포 수치에 별다른 영향을 미치지 않는 것으로 판단되었다. 초음파 측정 결과 HPHR구에서의 고급육 출현가능성이 높음을 확인 할 수 있었으며, 도축 결과 도체중, 등지방 두께, 등심단면적에는 차이가 없으면서, HPHR구에서 고급육 출현율이 뚜렷하게 높게 나타났다. 따라서 육성비육기별로 단백질 수준을 12% 이상(15~13%)으로 증가시켰을 때 RUP의 수준이 높은 것이 한우의 증체에는 영향을 주지 않으면서 근내지방도 향상에 뚜렷이 도움이 되는 것으로 사료되었다. 또한, 사료 단백질 수준의 증가로 인해 사료비용이 증가하였으나, RUP로의 CP 증가는 높은 고급육 출현률로 인한 판매 조수익의 증가로 이어져 한우 농가의 소득증대에 뚜렷한 효과가 있었다.
결과적으로 반추위 분해 특성 결과 DDG는 높은 RUP를 가진 단백질 사료이며 CP 함량을 15%로 증가 시 면양의 섭취량 및 소화율에는 차이가 없었으며, CP 내 RUP 수준이 높은 것이 체내 질소 이용효율이 높았다. 또한 CP 함량을 15%로 증가 시 높은 RUP 수준이 한우의 증체 및 혈액성상에는 영향을 주지 않으면서 근내지방도 향상으로 인한 고급육 출현에 도움을 주어 한우 농가의 수익증대 뚜렷한 효과가 있는 것으로 사료된다.

In order to determine the effects of crude protein (CP) content and ruminally undegradable protein (RUP) level of diet, experiments were conducted on in situ and in vivo digestibility using sheep, and also in vivo feeding trial with regard to weight gain in fattening period, properties of blood, and appearance in high-quality meat of Hanwoo steers.
Exp 1. In situ ruminal degradation characteristics of dry matter (DM) and CP from dried distiller’s grains (DDG) and soybean meal (SBM)
In order to accurately formulate the diet for ruminants, it is necessary to systematically identify the degradation profile of feed ingredient. As continuous advancement of ethanol industry, there are various dried distiller’s grains (DDG) that are being developed with different chemical and physical properties. Therefore, in order to investigate the degradation characteristics of DM and CP in the rumen, 3 major types of DDG (corn DDG, high-protein corn DDG and wheat DDG) and SBM were used as the experimental animal feeds. The representative feed samples were incubated in situ for 1, 2, 4, 6, 8, 12, 24 and 48 hours. Fraction A of DM was highest in a wheat DDG (WD) at 37.3%, medium for corn DDG and SBM, and lowest for high protein corn DDG (HP-DDG). Fraction A of CP was highest in WD, medium level at corn DDG and lowest at HP-DDG and SBM. On the other hand, the fraction C was highest in HP-DDG (41.2%), medium in corn DDG (29.7%), and lowest in WD and SBM (4.7, 3.9%). The degradation rate (% h−1) of fraction B of DM showed in order of SBM (13.3%), WD (9.1%), corn DDG and HP-DDG (5.3, 5.1%), whereas the degradation rate (% h−1) of fraction B of CP followed the order of SBM (17.6%), WD (11.6%), corn DDG and HP-DDG (4.9, 3.9%). Assuming the passage rate of 0.06 h−1, the effective degradation rate of CP was highest (P < 0.001) in SBM (73.9%) and WD (71.2%), medium in corn DDG (42.5%) and lowest in HP-DDG (28.6%). The findings of this study present the comparative estimate of ruminal DM and CP degradation characteristics for three DDG co-products and SBM, which might be useful for their inclusion in the diet according to ruminally undegradable and degradable ratios.
Exp 2. Influence of CP content and RUP level differences of feed on the nutrients, intake amount, digestibility and nitrogen balance in sheep
This study was performed to assess the influence of CP content and RUP level differences of feed on nutrient digestibility and nitrogen balance of sheep. The experimental diets were formulated using a total of 16 feed ingredients and other chemical components including TDN were treated as similar as possible with only a difference in crude protein as: low protein (LP): CP = 12% (RUP 35.1%), high protein, low RUP (HPLR): CP = 15% (Low RUP 33.7%, SBM) and high protein, high RUP (HPHR): CP = 15% (High RUP 45.8%, DDG). Five male Corriedale sheep were randomly assigned to control group and treatment groups, then they were put into the metabolism crate. CP content and RUP level differences did not affect DM intake. Daily CP intake, digestible CP intake and CP digestibility increased in sheep fed HPHR diet. No difference was observed in both intake amount and digestibility according to RUP level difference. Nitrogen intake amounts of HPLR and HPHR groups were high due to high CP content, but no significant difference was observed in N excretion amount within feces and urine. Because of this, HPHR group showed the highest N retention amount and LP group showed the lowest N retention rate. As a result, CP content and UIP difference did not affect intake amount and nutrient digestibility, and N utilization efficiency was improved by increasing the retained amount within a body due to lower N excretion amount than that in RDP if adjusting the CP increase using RUP. It is thought that such an increase of N utilization positively influences on reducing the environmental pollution, and it is necessary to conduct relevant experiments with Korean native cattle.
Exp 3. Influence of CP content and RUP level differences in feed on the weight gain, metabolites in blood and carcass characteristics of the Hanwoo steers
This study was performed to investigate the influence of CP content and RUP differences of diet on feed intake, weight gain, blood metabolites, carcass characteristics and economic assessment of the Hanwoo steers in fattening period. A total of 36 heads of Hanwoo steers with average weight of 253.8 ± 21.8 kg (average age of 8.2± 0.5 months) were selected and randomly assigned to three groups, then each group was divided into 3 pens with 4 heads in each pen. Experimental diets were formulated to differ in CP and RUP levels as: low protein (LP): CP = 12% (RUP 35.1%), high protein low RUP (HPLR): CP= 15% (Low RUP 33.7%, SBM), high protein high RUP (HPHR): CP = 15% (High RUP 45.8%, DDG) by maintaining other chemical components including TDN as similar as possible. In addition, the diets for fattening period were formulated as LP = 12% (RUP 36.8%), HPLR = 14% (Low RUP 35.7%, SBM), HPHR = 14% (High RUP 44.6%, DDG) and diets for late fattening period were LP = 12% (RUP 48.8%), HPLR = 13% (Low RUP 46.7%, SBM), HPHR = 13% (High RUP 51.1%, DDG). Feed was supplied twice a day (morning and evening) and water was provided freely. The total nitrogen amount and ammonia content were highest in HPLU group and lowest in LP group. The difference in CP and RUP level in fattening period had no significant effect on the weight gain and intake amounts of DM and TDN. Since blood test results showed normal range of blood metabolites, it appears that the energy and protein metabolisms as well as liver functions and kidney functions cells were not changed by CP and RUP levels. Ultrasonic wave measurement results confirmed that HPHR group showed high probability of producing high-quality meat. The result of slaughter also showed that HPHR group evidently had a high probability in appearance rate of high-quality meat. Based on these evidences, it is thought that high level of RUP clearly helps an improvement of appearance rate of high-quality meat and marbling score when increased protein level by over 12% (13~15%) in each production period. Although the cost for feed increased due to an increase of protein level, an increase of CP as RUP source resulted in the increase of sales gross profit due to high appearance rate of high-quality meat, thereby increasing the income of Hanwoo farmers.
In conclusion, it was known from the degradation characteristics in the rumen that DDG is a protein feed with high RUP and showed no difference in both intake amount and digestibility in sheep when CP content increased up to 15%. In addition, the high RUP level within CP showed high nitrogen utilization efficiency. Moreover, when increasing CP content to 15%, it is thought that high RUP level helps clearly improve the high-quality meat appearance rate and marbling score, thereby leading to an increase of profit in the Hanwoo farmers.
In order to determine the effects of crude protein (CP) content and ruminally undegradable protein (RUP) level of diet, experiments were conducted on in situ and in vivo digestibility using sheep, and also in vivo feeding trial with regard to weight gain in fattening period, properties of blood, and appearance in high-quality meat of Hanwoo steers.
Exp 1. In situ ruminal degradation characteristics of dry matter (DM) and CP from dried distiller’s grains (DDG) and soybean meal (SBM)
In order to accurately formulate the diet for ruminants, it is necessary to systematically identify the degradation profile of feed ingredient. As continuous advancement of ethanol industry, there are various dried distiller’s grains (DDG) that are being developed with different chemical and physical properties. Therefore, in order to investigate the degradation characteristics of DM and CP in the rumen, 3 major types of DDG (corn DDG, high-protein corn DDG and wheat DDG) and SBM were used as the experimental animal feeds. The representative feed samples were incubated in situ for 1, 2, 4, 6, 8, 12, 24 and 48 hours. Fraction A of DM was highest in a wheat DDG (WD) at 37.3%, medium for corn DDG and SBM, and lowest for high protein corn DDG (HP-DDG). Fraction A of CP was highest in WD, medium level at corn DDG and lowest at HP-DDG and SBM. On the other hand, the fraction C was highest in HP-DDG (41.2%), medium in corn DDG (29.7%), and lowest in WD and SBM (4.7, 3.9%). The degradation rate (% h−1) of fraction B of DM showed in order of SBM (13.3%), WD (9.1%), corn DDG and HP-DDG (5.3, 5.1%), whereas the degradation rate (% h−1) of fraction B of CP followed the order of SBM (17.6%), WD (11.6%), corn DDG and HP-DDG (4.9, 3.9%). Assuming the passage rate of 0.06 h−1, the effective degradation rate of CP was highest (P < 0.001) in SBM (73.9%) and WD (71.2%), medium in corn DDG (42.5%) and lowest in HP-DDG (28.6%). The findings of this study present the comparative estimate of ruminal DM and CP degradation characteristics for three DDG co-products and SBM, which might be useful for their inclusion in the diet according to ruminally undegradable and degradable ratios.
Exp 2. Influence of CP content and RUP level differences of feed on the nutrients, intake amount, digestibility and nitrogen balance in sheep
This study was performed to assess the influence of CP content and RUP level differences of feed on nutrient digestibility and nitrogen balance of sheep. The experimental diets were formulated using a total of 16 feed ingredients and other chemical components including TDN were treated as similar as possible with only a difference in crude protein as: low protein (LP): CP = 12% (RUP 35.1%), high protein, low RUP (HPLR): CP = 15% (Low RUP 33.7%, SBM) and high protein, high RUP (HPHR): CP = 15% (High RUP 45.8%, DDG). Five male Corriedale sheep were randomly assigned to control group and treatment groups, then they were put into the metabolism crate. CP content and RUP level differences did not affect DM intake. Daily CP intake, digestible CP intake and CP digestibility increased in sheep fed HPHR diet. No difference was observed in both intake amount and digestibility according to RUP level difference. Nitrogen intake amounts of HPLR and HPHR groups were high due to high CP content, but no significant difference was observed in N excretion amount within feces and urine. Because of this, HPHR group showed the highest N retention amount and LP group showed the lowest N retention rate. As a result, CP content and UIP difference did not affect intake amount and nutrient digestibility, and N utilization efficiency was improved by increasing the retained amount within a body due to lower N excretion amount than that in RDP if adjusting the CP increase using RUP. It is thought that such an increase of N utilization positively influences on reducing the environmental pollution, and it is necessary to conduct relevant experiments with Korean native cattle.
Exp 3. Influence of CP content and RUP level differences in feed on the weight gain, metabolites in blood and carcass characteristics of the Hanwoo steers
This study was performed to investigate the influence of CP content and RUP differences of diet on feed intake, weight gain, blood metabolites, carcass characteristics and economic assessment of the Hanwoo steers in fattening period. A total of 36 heads of Hanwoo steers with average weight of 253.8 ± 21.8 kg (average age of 8.2± 0.5 months) were selected and randomly assigned to three groups, then each group was divided into 3 pens with 4 heads in each pen. Experimental diets were formulated to differ in CP and RUP levels as: low protein (LP): CP = 12% (RUP 35.1%), high protein low RUP (HPLR): CP= 15% (Low RUP 33.7%, SBM), high protein high RUP (HPHR): CP = 15% (High RUP 45.8%, DDG) by maintaining other chemical components including TDN as similar as possible. In addition, the diets for fattening period were formulated as LP = 12% (RUP 36.8%), HPLR = 14% (Low RUP 35.7%, SBM), HPHR = 14% (High RUP 44.6%, DDG) and diets for late fattening period were LP = 12% (RUP 48.8%), HPLR = 13% (Low RUP 46.7%, SBM), HPHR = 13% (High RUP 51.1%, DDG). Feed was supplied twice a day (morning and evening) and water was provided freely. The total nitrogen amount and ammonia content were highest in HPLU group and lowest in LP group. The difference in CP and RUP level in fattening period had no significant effect on the weight gain and intake amounts of DM and TDN. Since blood test results showed normal range of blood metabolites, it appears that the energy and protein metabolisms as well as liver functions and kidney functions cells were not changed by CP and RUP levels. Ultrasonic wave measurement results confirmed that HPHR group showed high probability of producing high-quality meat. The result of slaughter also showed that HPHR group evidently had a high probability in appearance rate of high-quality meat. Based on these evidences, it is thought that high level of RUP clearly helps an improvement of appearance rate of high-quality meat and marbling score when increased protein level by over 12% (13~15%) in each production period. Although the cost for feed increased due to an increase of protein level, an increase of CP as RUP source resulted in the increase of sales gross profit due to high appearance rate of high-quality meat, thereby increasing the income of Hanwoo farmers.
In conclusion, it was known from the degradation characteristics in the rumen that DDG is a protein feed with high RUP and showed no difference in both intake amount and digestibility in sheep when CP content increased up to 15%. In addition, the high RUP level within CP showed high nitrogen utilization efficiency. Moreover, when increasing CP content to 15%, it is thought that high RUP level helps clearly improve the high-quality meat appearance rate and marbling score, thereby leading to an increase of profit in the Hanwoo farmers.
