The restaurants and food services industry, which represent the diversity of the modern service industry, has a high proportion of human resources. Therefore, the role of the management in the restaurants and food services industry is very important because the role of employees who directly face customers in the field is becoming important.
The purpose of this study is to derive the core competencies based on the recent social trends in identifying the core competencies that managers should have in the restaurants and food services industry with high human dependency. In addition, this study aimed to suggest the necessary factors for the development of the restaurants and food services industry by grasping the effect of the derived food service supervisor's capacity on store operations.
The purpose of the study is as follows.
First, through the preceding research, the concept of social trend, core capacity of supervisor and store operation performance are summarized, and the research model and hypothesis are established by deriving the measurement variables necessary for this study.
Second, Identifying the core competencies of food service supervisors based on social trends, it is also figured out the relationship between core competencies and store operation performance.
Third, with grasping the core competencies of food service supervisors based on social trends, this study attempts to suggest directions and implications for the effective store operation performance of restaurants and food services industry.
Fourth, this study aimed to provide the basic data for future restaurants and food services industry research by studying the relationship between social trends and core competencies of the food service supervisor.
The results of this study are summarized as follows.
First, as a result of the research hypothesis that the supervisor's core competencies will affect behavioral intention outcomes, it appeared that financial management ability, HRM(human resource management) and store operation management ability among the supervisor's core competencies had effect on behavioral intention outcomes. However marketing promotion management ability and facility safety management ability had no effect on, and were dismissed. Based on these results, the activities that use the media and text messages to promote discounts, events, and stores are considered to have been rejected because they lacked some parts of touching and genuine that make moving the customer’s confidence.
Second, as a result of the research hypothesis that the supervisor's core competencies will affect the emotional formation performance, it showed that marketing promotion management capability, HRM(human resource management) capability, store operation management and facility safety management capability among the supervisor's core competencies had effect on behavioral intention outcomes. However, the financial management ability was shown to have no effect on and was dismissed.
Third, in the analysis of moderating effects of social trends, all variables are appeared to regulate the relationship between the supervisor's core competency and store operation performance. Supervisor's core competencies have a great influence on the store's performance, and if you apply New-tro, Small but Certain Happinesssmall, manner maketh the consumer, delivery application, one-person consumption, Work-life balance, which are used as variables of this research among social trends, it can be seen that the store operation performance is more effective.
In future studies, if it is identified more social trend variables and applied changing trends quickly, it addresses that this study suggests many implications for the restaurants and food services industry.
