As the appearance of 1++ grade high-quality meat increases due to specification management centered on the increase in muscle fat content, many problems such as defective meat occur. In this study, statistical analysis was conducted using 3,801,174 Hanwoo rating data conductors from 2017 to 2021. During the period of about 5 years from 2017 to 2021, the appearance rate of high-quality beef of Korean beef 1++ grade increased 2.5 times from 74,788 heads in 2017 to 189,233 heads in 2021, and the rate of myositis of 1++ among defective meat increased 5.6 times from 2017 (525 heads) to other grades. In the 1++ grade, all defects steadily increased, and in myositis, it increased the most compared to other defect items by 5.6 times from 525 heads in 2017 to 2,951 heads in 2021. Since the cause of myositis has not been accurately identified so far, we would like to estimate the incidence rate of myositis and the incidence rate of myositis by gender, meat, region, and quarter to find out the factors that affect myositis a lot. As a result of analyzing the correlation between high-quality meat and myositis, Cow had a higher incidence of myositis than bull and steer in gender, and meat grade A was higher overall than B and C in terms of meat. In the region, Gyeongsangnam-do region based on the grade judgment region was higher overall than other regions, and when the incidence of myositis was surveyed quarterly, it was higher overall in the fourth quarter.
