환경오염의 원인은 다양하다. 그 중에서도 식품공학 기술을 통해 해결할 수 있는 환경오염 원인은 플라스틱 식품 포장재와 육류 생산일 것이다. 플라스틱 포장재는 난분해성이므로 폐기될 시 최종 분해까지 수백 년 이상이 걸려 토양 및 해양을 오염시키고, 이를 소각할 시에는 다이옥신 및 퓨란 등의 독성을 지닌 유기화합물이 생성되어 대기 또한 오염시킨다. 육류는 고유한 식감과 풍미를 지녀 많은 이들에게 선호되는 양질의 단백질원이다. 그러나 이를 생산하기 위해서는 막대한 규모의 목축지와 상당한 양의 사료 곡물이 요구되기 때문에 자원 소비가 매우 클 뿐 아니라 동량의 식물성 단백질원에 비해 생산에 투입되는 에너지 효율이 매우 낮다. 또한, 가축들이 배출하는 메탄가스는 지구온난화를 야기하는 온실가스의 상당 부분을 차지한다. 즉, 축산을 통해 얻는 육류는 지구상에서 더 이상 지속 가능하지 않다. 본 논문에서는 플라스틱 식품 포장재와 육류 생산으로 인한 환경오염에 대한 해결책으로 각각 식품 포장 기술을 이용하여 생분해성 식품 포장재를, 식품 가공 기술을 이용하여 대체육 제품을 개발하였다. 생분해성 식품 포장재는 우수한 생분해성을 지니므로 기존의 플라스틱 식품 포장재의 난분해성으로 인한 환경오염 문제를 해결할 수 있다. 한편, 대체육 제품은 실제육 패티를 대체함으로써 육류 소비 감소에 기여하고, 결론적으로 육류 생산에 의한 환경오염 문제 해결에 보탬이 될 수 있을 것이다. 생분해성 식품 포장재 및 대체육 패티 제품에 첨가될 지방대체제의 원료로는 모두 천연 고분자를 이용하였다. 여러 가지 천연자원들 중에서도 각각 식물, 조류, 박테리아에서 유래한 녹두 전분, 한천, 박테리아 셀룰로오스를 주요 고분자 소재로 채택하여 본 논문의 장들을 구성하였다. 녹두 전분 및 한천은 생분해성 식품포장재 개발을 위한 원료로 사용되었으며, 박테리아 셀룰로오스는 생분해성 식품 포장재 및 지방대체제 개발을 위한 원료로 이용되었다. 즉, 본 논문의 전체적인 목표는 플라스틱 식품 포장재 및 육류 생산으로 인한 환경오염을 해결하기 위한 목적으로 식품공학 기술과 다양한 천연자원에서 얻은 천연 고분자를 활용하여 생분해성 식품 포장재 및 대체육 제품을 개발하는 것이었다. 본 논문은 제1–4장으로 구성되어 있다. 제1장은 총설이며 제2–4장의 세부 내용은 다음과 같다. 제2장에서는 해바라기씨유 혼입을 통해 수분 차단성이 향상된 녹두 전분 기반 가식성 필름 개발하였다. 제3장에서는 항균활성을 지니는 계피 정유가 포함된 한천/폴리비닐알코올 혼합 생분해성 필름을 개발하였다. 제4-1장에서는 생분해성을 지니는 박테리아 셀룰로오스 필름 3종 개발하였다. 마지막으로 제4-2장에서는 박테리아 셀룰로오스 페이스트를 지방대체제로 이용한 대체육 패티 제품을 개발하였다. 전분은 우수한 필름 형성성, 가식성, 생분해성, 무독성, 무색·무미·무취 등의 장점을 지닌다. 그러나 높은 친수성으로 인하여 수분 차단성이 낮아 식품 포장 소재로 활용하기에 제약이 따른다. 따라서, 본 연구에서는 소수성을 지니는 해바라기씨유를 전분 용액에 혼입하여 전분 필름의 수분 차단성을 향상시키는 방안을 고안하였다. 그 결과, 전분 용액의 1%(w/w)의 해바라기씨유를 첨가한 필름의 수분 용해도 및 수분 투과도가 대조군 (해바라기씨유 무첨가 필름)에 비하여 약 30%씩 감소하였다. 즉, 해바라기씨유를 전분 용액에 혼합할 경우, 전분 필름의 수분 차단성이 효과적으로 개선되어 식품 포장재로 활용되기에 적합한 것으로 평가되었다. 폴리비닐알코올은 기계적 강도 및 유연성이 우수한 생분해성 합성 고분자이지만 제1장에서 다룬 전분과 마찬가지로 높은 친수성으로 인하여 수분에 취약하기 때문에 식품 포장재로 활용되기 어렵다. 따라서, 본 연구에서는 강력한 겔화 능력 및 고분자 사슬 망 구조를 지녀 수분과 접촉 시에 그 형태가 팽윤되기는 하지만 붕해되지 않는 한천을 혼합하여 한천/폴리비닐알코올 생분해성 필름을 개발하였다. 또한, 광범위한 항균활성을 지니는 계피 정유를 항균물질로서 첨가하여 최종적으로 항균활성을 지니는 한천/폴리비닐알코올 생분해성 필름을 완성하였다. 폴리비닐알코올의 25%-75%(w/w)를 한천으로 대체할 경우 한천의 강력한 사슬 망 구조가 수분에 의한 폴리비닐알코올의 사슬의 분해를 효과적으로 억제하였다. 특히, 폴리비닐알코올의 25%(w/w)가 한천으로 대체될 경우 기계적 특성 및 투광도가 우수하고 대조군(한천 무첨가 필름)에 비하여 수분용해도가 약 27% 감소된 필름이 완성되었다. 박테리아 셀룰로오스는 초산균이 생합성하는 셀룰로오스로 식물 유래 셀룰로오스에 비해 순도, 기계적 강도, 중합도 등이 높다는 장점을 지닌다. 그럼에도 불구하고 이를 식품 포장 소재로 활용한 연구는 매우 드물다. 본 연구에서는 박테리아 셀룰로오스에 세 가지 서로 다른 필름 가공법을 적용함으로써 각각 상이한 특성을 지니는 삼종의 생분해성 박테리아 셀룰로오스 필름을 완성하였다. 이들 중 박테리아 셀룰로오스를 배양된 막 형태 그대로 공기건조한 필름은 나머지 두 필름들 보다 촘촘한 내부 구조로 인하여 가장 우수한 산소 차단성을 나타냈다. 박테리아 셀룰로오스를 막 형태 그대로 동결건조한 후 고압에서 압착함으로써 얻은 필름은 높은 다공성 구조에서 기인한 우수한 수화특성으로 인하여 나머지 두 필름들보다 12배 이상 더 높은 수분흡수율을 나타냈다. 마지막으로, 주조법을 통해 박테리아 셀룰로오스를 마쇄물을 필름화함으로써 얻어진 필름은 3종의 필름들 중 가장 우수한 생분해성을 보였다. 한편, 박테리아 셀룰로오스 마쇄물이 지방과 유사하게 유백색의 외관, 부드러운 질감, 미끄러운 구강촉감, 그리고 가소성을 지니고 있는 것에 주목하여 이를 대체육 제품 제조 시에 지방대체제로 활용하였다. 지방에 대한 박테리아 셀룰로오스 마쇄물 대체 비율이 25-50%일 경우 대조군(박테리아 셀룰로오스 마쇄물 무첨가 패티)에 비하여 외관 특성이 더 우수하였고 조리 손실은 21% 이상 감소하였다. 모든 결과를 종합하였을 때, 지방에 대한 박테리아 셀룰로오스 마쇄물의 대체율에 증가할수록 대체육 패티의 색은 더 붉고, 조리 손실율은 더 낮고, 치수 안정성은 더 우수하고, 씹힘성은 더 높았다. 해당 논문의 연구 내용들은 플라스틱 식품 포장재 및 육류에 대한 대안을 제시함으로써 이들에 의해 야기되는 환경오염을 해결하는 데 도움이 될 수 있을 것이다. 또한, 본 논문은 다양한 천연자원에서 얻은 천연 고분자들을 식품 포장 분야에서부터 식품 가공 분야에까지 확대 적용 함으로써 천연 고분자를 기반으로 한 광범위한 식품 공학 기술 연구를 구축하였다. 따라서, 본 논문은 천연 고분자 소재들을 어떠한 목적과 방식으로 식품공학 분야에 응용할 수 있을지에 대한 기초 자료로도 활용될 수 있을 것이다.

There are many causes of environmental pollution. Among them, the causes that can be solved using food engineering technology will be plastic food packaging materials and meat production. Since plastic packaging materials are non-biodegradable, when discarded, it takes hundreds of years or more to finally decompose, polluting the soil and the ocean. In addition, when it is incinerated, toxic organic compounds such as dioxins and furans polluting the air are generated. Meanwhile, meat is a high-quality protein source preferred by many people because of its unique texture and flavor. However, since a vast amount of pasture and a considerable amount of feed grains are required to produce it, resource consumption is very high, and the energy efficiency put into production is very low compared to the same amount of vegetable protein sources. In addition, methane emitted by livestock accounts for a large portion of greenhouse gases that cause global warming. Therefore, meat obtained through livestock farming is no longer sustainable on earth. In this dissertation, as solutions to the environmental pollution caused by plastic food packaging materials and meat production, biodegradable food packaging materials and low-fat meat alternatives were suggested through food packaging and food processing technology, respectively. Since natural polymer-based food packaging materials have excellent biodegradability, it is possible to solve the environmental pollution problems caused by the non-biodegradability of the existing plastic food packaging materials. Meanwhile, the developed meat alternatives will contribute to the reduction of meat consumption by replacing the actual meat products and ultimately solve the environmental pollution problem caused by meat production. Natural polymers were used as raw materials for biodegradable food packaging materials and fat replacers in meat alternatives. Among various natural resources, mung bean starch, agar, and bacterial cellulose derived from plants, algae, and bacteria were selected as major natural polymers to constitute the chapters of this dissertation. Mung bean starch and agar were used as raw materials for the development of biodegradable food packaging materials, and bacterial cellulose was used as raw materials for the development of biodegradable food packaging materials and fat replacers. That is, the overall purpose of this dissertation was to develop biodegradable food packaging materials and meat alternatives using food engineering technology and natural polymers obtained from various natural resources to solve environmental pollution caused by plastic food packaging materials and meat production. This dissertation consists of Chapters 1–4. Chapter 1 is the general introduction, and the details of Chapters 2–4 are as follows: Chapter 2) Development of mung bean starch-based edible film with enhanced water-resistant properties via the incorporation of sunflower seed oil; Chapter 3) Development of agar/polyvinyl alcohol composite biodegradable film containing cinnamon bark oil with antimicrobial activity; Chapter 4-1) Development of three types of biodegradable bacterial cellulose films; Chapter 4-2) Development of patty-type meat alternatives using bacterial cellulose paste as a fat replacer. Starch has advantages such as excellent filmogenicity, edibility, biodegradability, non-toxicity, colorless, tasteless, odorless, etc. However, starch has limits to use as a food packaging material due to its high hydrophilicity, which causes low water barrier properties. Therefore, this dissertation devised a method to enhance the water barrier properties of the starch film by incorporating hydrophobic sunflower seed oil into the starch solution. As a result, the water solubility and water vapor permeability of the starch film containing 1% (w/w) sunflower seed oil was decreased by about 30% compared to the control (sunflower seed oil-free film). That is, when sunflower seed oil was added to the starch solution, the water barrier properties of the starch film were effectively improved, and this film was evaluated as suitable for use as a food packaging material. Polyvinyl alcohol is a biodegradable synthetic polymer with excellent mechanical strength and flexibility, but it is challenging to use as a food packaging material due to it being vulnerable to moisture due to its high hydrophilicity, like the starch discussed in Chapter Ⅱ. Therefore, in this dissertation, an agar/polyvinyl alcohol biodegradable film was developed by blending an agar that does not disintegrate, although it swells when in contact with water due to its strong gelling ability and polymer chain structure. In addition, cinnamon bark oil having a broad spectrum of antibacterial activity was added as an antibacterial agent to complete an agar/polyvinyl alcohol biodegradable film having antibacterial activity. When 25%–75% (w/w) of polyvinyl alcohol was replaced with agar, the strong chain structure of agar effectively inhibited the disintegration of polyvinyl alcohol chains by water. In particular, when 25% (w/w) of polyvinyl alcohol was replaced with agar, a film showed excellent mechanical properties and light transmittance. In addition, the water solubility of the film was reduced by about 27% compared to the control (agar-free film). Bacterial cellulose is biosynthesized by acetic acid bacteria and has the advantage of higher purity, mechanical strength, and degree of polymerization compared to plant-derived cellulose. Nevertheless, there are very few studies using it as a food packaging material. In this dissertation, three types of biodegradable bacterial cellulose films with different properties were completed by applying three film processing methods to bacterial cellulose. In this dissertation, three types of biodegradable bacterial cellulose films with different properties were completed by applying three different film processing methods to bacterial cellulose. Among the three films, air-dried bacterial cellulose membrane film showed the best oxygen barrier properties due to a denser internal structure than the other two films. The film obtained by freeze-drying bacterial cellulose membrane and then compressing it at high pressure showed a water absorption ratio 12 times higher than that of the other two films due to the excellent hydration properties from the highly porous structure. Finally, the film obtained by filming the bacterial cellulose paste (grinding material of bacterial cellulose) through the casting method showed the best biodegradability among the three types of films. On the other hand, I noted that the bacterial cellulose paste has a milky-white appearance, soft texture, slippery mouthfeel, and plasticity similar to fat. Therefore, bacterial cellulose paste was used as a fat replacer in the meat analog patties. When the replacement ratio of bacterial cellulose paste to fat was 25%–50%, the appearance characteristics of patties were better, and the cooking loss was reduced by more than 21% compared to the control (bacterial cellulose paste-free patty). Taking all the results together, the color of the meat alternative patty was redder, the cooking loss rate was lower, the dimensional stability was higher, and the chewiness was higher as the replacement rate of the bacterial cellulose paste for fat increased. The research content of this dissertation was intended to help solve the environmental pollution problem caused by plastic food packaging and meat production by presenting biodegradable food packaging and meat analog products as an alternative to plastic food packaging and meat. In addition, this dissertation established a wide range of food engineering technology research based on natural polymers by applying them in the food packaging field to the food processing field. Therefore, this dissertation can be used as primary data on what purpose and method natural polymer materials can be applied to the field of food engineering.

In this dissertation, as solutions to the environmental pollution caused by plastic food packaging materials and meat production, biodegradable food packaging materials and low-fat meat alternatives were suggested through food packaging and food processing technology, respectively. Since natural polymer-based food packaging materials have excellent biodegradability, it is possible to solve the environmental pollution problems caused by the non-biodegradability of the existing plastic food packaging materials. Meanwhile, the developed meat alternatives will contribute to the reduction of meat consumption by replacing the actual meat products and ultimately solve the environmental pollution problem caused by meat production. Natural polymers were used as raw materials for biodegradable food packaging materials and fat replacers in meat alternatives. Among various natural resources, mung bean starch, agar, and bacterial cellulose derived from plants, algae, and bacteria were selected as major natural polymers to constitute the chapters of this dissertation. Mung bean starch and agar were used as raw materials for the development of biodegradable food packaging materials, and bacterial cellulose was used as raw materials for the development of biodegradable food packaging materials and fat replacers. That is, the overall purpose of this dissertation was to develop biodegradable food packaging materials and meat alternatives using food engineering technology and natural polymers obtained from various natural resources to solve environmental pollution caused by plastic food packaging materials and meat production. This dissertation consists of Chapters 1–4. Chapter 1 is the general introduction, and the details of Chapters 2–4 are as follows: Chapter 2) Development of mung bean starch-based edible film with enhanced water-resistant properties via the incorporation of sunflower seed oil; Chapter 3) Development of agar/polyvinyl alcohol composite biodegradable film containing cinnamon bark oil with antimicrobial activity; Chapter 4-1) Development of three types of biodegradable bacterial cellulose films; Chapter 4-2) Development of patty-type meat alternatives using bacterial cellulose paste as a fat replacer. Starch has advantages such as excellent filmogenicity, edibility, biodegradability, non-toxicity, colorless, tasteless, odorless, etc. However, starch has limits to use as a food packaging material due to its high hydrophilicity, which causes low water barrier properties. Therefore, this dissertation devised a method to enhance the water barrier properties of the starch film by incorporating hydrophobic sunflower seed oil into the starch solution. As a result, the water solubility and water vapor permeability of the starch film containing 1% (w/w) sunflower seed oil was decreased by about 30% compared to the control (sunflower seed oil-free film). That is, when sunflower seed oil was added to the starch solution, the water barrier properties of the starch film were effectively improved, and this film was evaluated as suitable for use as a food packaging material. Polyvinyl alcohol is a biodegradable synthetic polymer with excellent mechanical strength and flexibility, but it is challenging to use as a food packaging material due to it being vulnerable to moisture due to its high hydrophilicity, like the starch discussed in Chapter Ⅱ. Therefore, in this dissertation, an agar/polyvinyl alcohol biodegradable film was developed by blending an agar that does not disintegrate, although it swells when in contact with water due to its strong gelling ability and polymer chain structure. In addition, cinnamon bark oil having a broad spectrum of antibacterial activity was added as an antibacterial agent to complete an agar/polyvinyl alcohol biodegradable film having antibacterial activity. When 25%–75% (w/w) of polyvinyl alcohol was replaced with agar, the strong chain structure of agar effectively inhibited the disintegration of polyvinyl alcohol chains by water. In particular, when 25% (w/w) of polyvinyl alcohol was replaced with agar, a film showed excellent mechanical properties and light transmittance. In addition, the water solubility of the film was reduced by about 27% compared to the control (agar-free film). Bacterial cellulose is biosynthesized by acetic acid bacteria and has the advantage of higher purity, mechanical strength, and degree of polymerization compared to plant-derived cellulose. Nevertheless, there are very few studies using it as a food packaging material. In this dissertation, three types of biodegradable bacterial cellulose films with different properties were completed by applying three film processing methods to bacterial cellulose. In this dissertation, three types of biodegradable bacterial cellulose films with different properties were completed by applying three different film processing methods to bacterial cellulose. Among the three films, air-dried bacterial cellulose membrane film showed the best oxygen barrier properties due to a denser internal structure than the other two films. The film obtained by freeze-drying bacterial cellulose membrane and then compressing it at high pressure showed a water absorption ratio 12 times higher than that of the other two films due to the excellent hydration properties from the highly porous structure. Finally, the film obtained by filming the bacterial cellulose paste (grinding material of bacterial cellulose) through the casting method showed the best biodegradability among the three types of films. On the other hand, I noted that the bacterial cellulose paste has a milky-white appearance, soft texture, slippery mouthfeel, and plasticity similar to fat. Therefore, bacterial cellulose paste was used as a fat replacer in the meat analog patties. When the replacement ratio of bacterial cellulose paste to fat was 25%–50%, the appearance characteristics of patties were better, and the cooking loss was reduced by more than 21% compared to the control (bacterial cellulose paste-free patty). Taking all the results together, the color of the meat alternative patty was redder, the cooking loss rate was lower, the dimensional stability was higher, and the chewiness was higher as the replacement rate of the bacterial cellulose paste for fat increased. The research content of this dissertation was intended to help solve the environmental pollution problem caused by plastic food packaging and meat production by presenting biodegradable food packaging and meat analog products as an alternative to plastic food packaging and meat. In addition, this dissertation established a wide range of food engineering technology research based on natural polymers by applying them in the food packaging field to the food processing field. Therefore, this dissertation can be used as primary data on what purpose and method natural polymer materials can be applied to the field of food engineering.
