  • The physiological activities of the cell-free extracts containing GABA from the selected yeast strains were determined as follows. Antihypertensive angiotensin I-converting enzyme (ACE) inhibitory activity was assayed by the method of Cushman and Cheung [29] using ACE from rabbit lung. Antioxidant activity was assayed with DPPH as the substrate [30], and superoxide dismutase-like activity was assayed by the method of Lee et al.
