A microwave moderator for partially attenuating and/or modifying microwave energy to achieve, for instance, more uniform cooking of comestible articles in microwave ovens. A microwave energy moderator comprising structure which is initially macroscopically relatively transparent to microwave energy of a predetermined frequency range, said moderator further comprising means for undergoing a sufficient structural transition that it will become substantially less transparent to said microwave energy as the temperature of said means is increased through a predetermined range of temperature.
