The food serving bar has a plurality of elongate, generally parallel, spaced apart dividers of thermally conductive material extending lengthwise of the serving bar. The dividers have side walls dividing the food serving bar into a plurality of elongate generally parallel cavities. A temperature control system controls the temperature of the side walls of the dividers. Upwardly facing surfaces on the dividers support food-holding pans in positions in which the pans extend down into the cavities adjacent the side walls of the dividers for being heated or cooled thereby. Thermal barriers below the upwardly facing surfaces inhibit the transfer of heat between the side walls of the dividers and the surfaces.

A temperature-controlled food serving bar comprisinga cabinet having a bottom, opposite sides and opposite ends defining an interior space, a top wall, and an opening in the top wall above said interior space, a plurality of elongate, generally parallel, spaced apart dividers of thermally conductive material extending lengthwise of the cabinet in or below said opening, said dividers having side walls extending down into said interior space dividing said interior space into a plurality of elongate generally parallel cavities extending lengthwise of the cabinet, a temperature control system for controlling the temperature of the side walls of the dividers, upwardly facing surfaces on the dividers for supporting food-holding pans in positions in which the pans extend down into said cavities adjacent the side walls of the dividers for being heated or cooled thereby, and thermal barriers below said upwardly facing surfaces for inhibiting the transfer of heat between the side walls of the dividers and said surfaces. 2. The serving bar set forth in claim 1 wherein said side walls of the dividers comprise upwardly facing shoulders and said thermal barriers comprise vertical flanges which overlie said shoulders.3. The serving bar set forth in claim 2 wherein said temperature control system comprises at least one heat transfer line extending along a side wall of each divider at a location outside said cavities for controlling the temperature of the side wall.4. The serving bar set forth in 3 wherein said at least one heat transfer line is closely adjacent a respective shoulder.5. The serving bar set forth in claim 1 wherein said temperature control system is free of heat transfer lines extending transversely across the cavities at locations corresponding to locations between adjacent pans in the cavities.6. The serving bar set forth in claim 1 wherein said temperature control system comprises a plurality of heat transfer lines forming separate heat transfer coils surrounding respective cavities for controlling the temperature of respective cavities.7. The serving bar set forth in claim 1 wherein said upwardly facing surfaces comprise at least one wear resistant cap bridging adjacent side walls of said dividers, and wherein at least one of said thermal barriers is disposed below the cap.8. The serving bar set forth in claim 1 wherein said upwardly facing surfaces are generally coplanar with said top wall.9. The serving bar set forth in claim 1 wherein said upwardly facing surfaces are disposed at an elevation below said top wall.10. The serving bar set forth in claim 1 wherein each elongate cavity is undivided along an entire length of the cavity.11. A temperature-controlled food serving bar comprisinga cabinet having a bottom, opposite sides and opposite ends defining an interior cabinet space, a top wall, and an elongate opening in the top wall above said interior cabinet space, at least one divider of thermally conductive material extending the length of the elongate cabinet opening and dividing the interior cabinet space into a plurality of elongate, pan-receiving cavities each of which opens upwardly along the entire length of the cavity to allow placement of multiple food-holding pans in the cavity at any desired location along the cavity, said at least one divider having generally parallel, closely spaced divider side walls defining a narrow, elongate interior divider space between the divider side walls, a plurality of food-holding pans received in each pan-receiving cavity, and a temperature control system comprising a plurality of heat transfer lines in said interior divider space for controlling the temperature of the divider side walls to heat or cool said food-holding pans in said cavities, said heat transfer lines forming separate heat transfer coils surrounding respective cavities for the heating or cooling of the food-holding pans held in the cavities. 12. The serving bar set forth in 11 wherein said cavities have a width not substantially greater than the width of the food-holding pans.13. The serving bar set forth in 12 wherein said cavities have a width greater than the width of the food-holding pans by a distance not greater than about 0.3 inches.14. The serving bar set forth in 11 wherein said heat transfer lines are refrigeration lines.15. The serving bar set forth in claim 14 wherein said at least one divider comprises a channel having two opposing side walls and a bottom wall, the side walls and bottom wall of the channel combining to define one of said cavities for receiving multiple food-holding pans therein.16. The serving bar set forth in claim 15 further comprising at least one heating element along the bottom wall of said channel.17. The serving bar set forth in claim 11 wherein each pan-receiving cavity is undivided along an entire length of the cavity.18. The serving bar set forth in claim 11 wherein said temperature control system is free of heat transfer lines extending transversely across the cavities at locations corresponding to locations between adjacent pans in the cavities.19. A retrofit kit for installation on an existing food serving bar cabinet having a top wall with an opening allowing access to an interior space of the cabinet, the retrofit kit comprisinga plurality of elongate, generally parallel, spaced apart dividers of thermally conductive material for placement in or below the opening to extend lengthwise of the cabinet, said dividers having side walls for extending down into said interior space to divide said interior space into a plurality of elongate generally parallel cavities extending lengthwise of the cabinet, a temperature control system for controlling the temperature of the side walls of the dividers, upwardly facing surfaces on the dividers for supporting food-holding pans in positions in which the pans extend down into said cavities adjacent the side walls of the dividers for being heated or cooled thereby, and thermal barriers below said upwardly facing surfaces for inhibiting the transfer of heat between the side walls of the dividers and said surfaces. 20. The retrofit kit set forth in 19 further comprising a frame attached to said dividers and sized to fit in the opening of the cabinet.21. The retrofit kit set forth in claim 19 wherein said temperature control system comprises at least one heat transfer line for installation along a side wall of each divider at a location outside said cavities for controlling the temperature of the side wall.22. The retrofit kit set forth in 21 wherein said dividers comprise at least two parallel rails for installation at spaced apart locations to define a cavity therebetween for receiving multiple food-holding pans therein, each rail having spaced apart generally vertical side walls defining an interior space for containing said at least one heat transfer line, one of said divider side walls forming a temperature-controlled wall of one of said cavities and the other of said divider side walls forming a temperature-controlled wall of another of said cavities.23. The retrofit kit set forth in claim 22 wherein said at least two rails constitute center rails for installation in said opening in the top wall of the cabinet at locations spaced from opposite sides of the opening, and wherein said dividers also include a pair of side rails for installation at opposite sides of the opening, each side rail having a side wall opposing the side wall of an adjacent center rail to define one of said cavities therebetween.24. The retrofit kit set forth in claim 19 wherein said upwardly facing surfaces comprise wear resistant caps bridging the side walls of said dividers.25. The retrofit kit set forth in claim 19 wherein said upwardly facing surfaces are adapted for installation at an elevation below said top wall.26. A temperature-controlled food serving bar comprisinga plurality of elongate, generally parallel, spaced apart dividers of thermally conductive material extending lengthwise of the serving bar, said dividers having side walls dividing the food serving bar into a plurality of elongate generally parallel cavities, a temperature control system for controlling the temperature of the side walls of the dividers, upwardly facing surfaces on the dividers for supporting food-holding pans in positions in which the pans extend down into said cavities adjacent the side walls of the dividers for being heated or cooled thereby, and thermal barriers below said upwardly facing surfaces for inhibiting the transfer of heat between the side walls of the dividers and said surfaces. 27. The serving bar set forth in claim 26 further comprising a frame attached to said dividers for supporting the dividers.28. The serving bar set forth in claim 27 wherein said serving bar has a top wall with an opening allowing access to an interior space of the serving bar and said frame is sized and shaped to fit said opening.29. The serving bar set forth in claim 27 wherein said temperature control system comprises at least one heat transfer line for installation along a side wall of each divider at a location spaced outside said cavities for controlling the temperature of the side wall.30. The serving bar set forth in claim 29 wherein said dividers comprise at least two parallel rails for attachment to said frame at spaced apart locations to define a cavity therebetween for receiving multiple food-holding pans therein, each rail having spaced apart generally vertical side walls defining an interior space for containing said at least one heat transfer line, one of said divider side walls forming a temperature-controlled wall of one of said cavities and the other of said divider side walls forming a temperature-controlled wall of another of said cavities.31. The serving bar set forth in claim 30 wherein said at least two rails constitute center rails attached to said frame at locations spaced from opposite sides of the frame, and wherein said dividers also include a pair of side rails attached to said frame at opposite sides of the frame, each side rail having a side wall opposing the side wall of an adjacent center rail to define one of said cavities therebetween.32. The serving bar set forth in claim 26 wherein said upwardly facing surfaces comprise wear resistant caps bridging the side walls of said dividers.33. A temperature-controlled food serving bar comprisinga cabinet having a bottom, opposite sides and opposite ends defining an interior cabinet space, a top wall, and an elongate opening in the top wall above said interior cabinet space, at least one divider of thermally conductive material extending the length of the elongate cabinet opening and dividing the interior cabinet space into a plurality of elongate, pan-receiving cavities each of which extends lengthwise of the cabinet opening and opens upwardly along the entire length of the cavity to allow placement of multiple food-holding pans in the cavity at any desired location along the cavity, said at least one divider having generally parallel divider side walls, and a temperature control system comprising a plurality of heat transfer lines adjacent at least one of said divider side walls for controlling the temperature of said at least one side wall to heat or cool said food-holding pans in said cavities. 34. The serving bar set forth in claim 33, wherein said at least one divider comprises a rail having spaced apart generally vertical side walls defining an interior divider space for containing at least two of said heat transfer lines.35. A serving bar according to said claim 33 wherein said at least one divider comprises a channel having two opposing side walls and a bottom wall combining to define one of said pan-receiving cavities for receiving multiple food-holding pans therein.36. The serving bar set forth in claim 33, wherein said at least one divider comprises a plurality of dividers having upwardly facing surfaces for supporting food-holding pans in positions in which the pans extend down into said cavities adjacent the sidewalls of the dividers for being heated or cooled thereby.37. The serving bar set forth in claim 36 further comprising thermal barriers below said upwardly facing surfaces for inhibiting the transfer of heat between the side walls of the dividers and said surfaces.38. The serving bar set forth in claim 33 wherein said temperature control system is free of heat transfer lines extending transversely across the cavities at locations corresponding to locations between adjacent pans in the cavities.39. The serving bar set forth in claim 33 wherein said temperature control system comprises a plurality of heat transfer lines forming separate heat transfer coils surrounding respective cavities for controlling the temperature of respective cavities.
