A cutting wheel using knives with slice thickness gauging surfaces defining, with the knife cutting edges, a thickness dimension of sliced food products and a throat dimension measured perpendicular to the wheel cutting plane between each knife cutting edge and the terminal edge of the adjacent gauging surface, wherein the knives each have a single primary bevel extending practically tangent to the cutting plane on the side of the knife facing towards the cutting plane and a smooth transition area on the opposite side of the knife, and the ratio of throat dimension to slice thickness dimension is 1 to 1.7.

Food slicing apparatus including circularly spaced, radially extending knives, said knives supported and arranged for movement about a central axis of rotation and having cutting edges at the leading edges of the knives disposed in a cutting plane extending perpendicular to the central axis, said knives each including a rearward facing gauging surface facing in a direction from which food products to be sliced are supplied to the knives, said gauging surface terminating at a terminal end of the gauging surface, said terminal end disposed opposite the cutting edge of the knife, and with each knife terminating at a terminal edge located at a terminal extremity of the knife opposite the cutting edge, with said terminal end of the gauging surface located adjacent the terminal edge of the knife, and wherein the terminal ends of the gauging surfaces of the knives are disposed in an axially forward or downstream axially spaced relationship relative to the direction of motion of food products sliced by the knives and relative to the cutting edges of the next adjacent knives in a trailing direction relative to knife movement direction with the terminal ends of the gauging surfaces extending substantially parallel with the next trailing cutting edges, to thereby define gate openings that correspond to slice thickness of food products sliced by the knives, and throat spaces defined by uniform spaces between the terminal ends of the gauging surfaces and the cutting edges of the next adjacent knives in a trailing direction, wherein the ratio of throat dimension to slice thickness is 1 to 1.7; wherein the terminal end of the gauging surface of each knife is connected to the terminal edge of the knife by a surface extending in a forward or downstream direction relative to sliced food product movement between the terminal end of the gauging surface and the terminal edge of the knife; and wherein said surface is defined by a bevel at the terminal edge of the knife. 2. Food cutting apparatus as claimed in claim 1, including discrete circular indentations in said gauging surface disposed along said terminal end of the gauging surface. 3. Food slicing apparatus including circularly spaced, radially extending knives, said knives supported and arranged for movement about a central axis of rotation and having cutting edges at the leading edges of the knives disposed in a cutting plane extending perpendicular to the central axis, said knives each including a rearward facing gauging surface facing in a direction from which food products to be sliced are supplied to the knives, said gauging surface terminating at a terminal end of the gauging surface, said terminal end disposed opposite the cutting edge of the knife, and with each knife terminating at a terminal edge located at a terminal extremity of the knife opposite the cutting edge, with said terminal end of the gauging surface located adjacent the terminal edge of the knife, and wherein the terminal ends of the gauging surfaces of the knives are disposed in an axially forward or downstream axially spaced relationship relative to the direction of motion of food products sliced by the knives and relative to the cutting edges of the next adjacent knives in a trailing direction relative to knife movement direction with the terminal ends of the gauging surfaces extending substantially parallel with the next trailing cutting edges, to thereby define gate openings that correspond to slice thickness of food products sliced by the knives, and throat spaces defined by uniform spaces between the terminal ends of the gauging surfaces and the cutting edges of the next adjacent knives in a trailing direction, wherein the ratio of throat dimension to slice thickness is 1 to 1.7, wherein each knife extends in a principal plane and includes a planar area extending along its cutting edge facing away from the gauging surface and a single primary bevel only along the cutting edge facing towards the side of the knife including the gauging surface, a final hone bevel along the cutting edge on the side of said cutting edge including said primary bevel, and a back hone bevel along the side of the cutting edge opposite said side including the primary bevel; wherein said primary bevel is inclined 8.5° relative to the knife principal plane and said final hone bevel and back hone bevel each extend 12-13° relative to the principal plane; and further wherein said knife comprises a hardened high carbon steel sheet element measuring 0.015 in. (0.4 mm) thick, and wherein said primary bevel is 0.080-0.100 in. (2-2.5 mm) wide from cutting edge to an intersection of the bevel with a knife non-beveled outer surface. 4. Food slicing apparatus including circularly spaced, radially extending knives, said knives supported and arranged for movement about a central axis of rotation and having cutting edges at the leading edges of the knives disposed in a cutting plane extending perpendicular to the central axis, said knives each including a rearward facing gauging surface facing in a direction from which food products to be sliced are supplied to the knives, said gauging surface terminating at a terminal end of the gauging surface, said terminal end disposed opposite the cutting edge of the knife, and with each knife terminating at a terminal edge located at a terminal extremity of the knife opposite the cutting edge, with said terminal end of the gauging surface located adjacent the terminal edge of the knife, and wherein the terminal ends of the gauging surfaces of the knives are disposed in an axially forward or downstream axially spaced relationship relative to the direction of motion of food products sliced by the knives and relative to the cutting edges of the next adjacent knives in a trailing direction relative to knife movement direction with the terminal ends of the gauging surfaces extending substantially parallel with the next trailing cutting edges, to thereby define gate openings that correspond to slice thickness of food products sliced by the knives, and throat spaces defined by uniform spaces between the terminal ends of the gauging surfaces and the cutting edges of the next adjacent knives in a trailing direction, wherein the ratio of throat dimension to slice thickness is 1 to 1.7, wherein said knife comprises an assembly of a holder, a flexible knife blade element clamp and at least one fastener, wherein the knife blade element is clamped by said clamp against a concave arcuate support surface of said holder located under the knife blade element, said clamp being urged against the knife blade element by the at least one fastener, said cutting edge located on the distal end of said knife blade element at a terminal end of a knife extension of the knife blade element extending distally beyond a terminal leading edge of the holder relative to the rotation direction, and wherein said terminal leading edge of said holder comprises a fulcrum against which a distal end area of the knife blade element is urged by the clamp upon tightening of said at least one fastener against the knife blade element, so that the knife blade element cutting edge moves opposite to the motion of the knife blade element located beneath said at least one fastener upon tightening or loosening movement of said at least one fastener, and wherein the range of motion of said cuffing edge relative to the cutting plane is at least 0.006 in. (0.15 mm). 5. Food slicing apparatus including circularly spaced, radially extending knives, said knives supported and arranged for movement about a central axis of rotation and having cutting edges at the leading edges of the knives disposed in a cuffing plane extending perpendicular to the central axis, said knives each including a rearward facing gauging surface facing in a direction from which food products to be sliced are supplied to the knives, said gauging surface terminating at a terminal end of the gauging surface, said terminal end disposed opposite the cutting edge of the knife, and with each knife terminating at a terminal edge located at a terminal extremity of the knife opposite the cutting edge, with said terminal end of the gauging surface located adjacent the terminal edge of the knife, and wherein the terminal ends of the gauging surfaces of the knives are disposed in an axially forward or downstream axially spaced relationship relative to the direction of motion of food products sliced by the knives and relative to the cutting edges of the next adjacent knives in a trailing direction relative to knife movement direction with the terminal ends of the gauging surfaces extending substantially parallel with the next trailing cutting edges, to thereby define gate openings that correspond to slice thickness of food products sliced by the knives, and throat spaces defined by uniform spaces between the terminal ends of the gauging surfaces and the cutting edges of the next adjacent knives in a trailing direction, wherein the ratio of throat dimension to slice thickness is 1 to 1.7, wherein each knife extends in a principal plane and includes a planar area extending along its culling edge facing away from the gauging surface and a single primary bevel only along the cutting edge facing towards the side of the knife including the gauging surface, a final hone bevel along the cutting edge on the side of said cutting edge including said primary bevel, and a back hone bevel along the side of the culling edge opposite said side including the primary bevel; wherein said primary bevel is inclined 8.5° relative to the knife principal plane and said final hone bevel and back hone bevel each extend 12-13° relative to the principal plane; and further wherein said knife comprises a hardened high carbon steel sheet element measuring 0.015 in. (0.4 mm) thick, and wherein said primary bevel is 0.080-0.100 in. (2-2.5 mm) wide from cutting edge to an intersection of the bevel with a knife non-beveled outer surface; and said primary bevel defining a primary bevel surface, said primary bevel surface being oriented substantially tangentially to said culling plane.
