Devices and methods are disclosed for extracting fluids from within a container sealed by a cork or septum without removal of the cork or septum or the contamination of the fluid within the container by reactive gases or liquids. Embodiments of the device can include a needle connected to a valve which is in turn connected to a source of pressurized gas for displacing the fluid. Further embodiments of the device can comprise additional components that act to force the needle to be inserted through the cork or septum along a linear path, to aid in preventing buckling of the needle, to clamp the device to the container, to prevent expulsion of the cork or septum from the container, and to guide the needle through a specified region of the cork or septum. Various valves, pressure regulators, pressure ranges, needle geometries, gas selections are also presented. This device is particularly suited for the dispensing and preservation of wine.

A wine extraction device for the extraction of wine from within a bottle sealed by a cork, comprising: a lower piece having a clamp arm arranged to engage a neck of a wine bottle and secure the lower piece relative to the bottle;an upper piece mounted for movement relative to the lower piece along a linear path;a needle attached to the upper piece, the needle having an inlet and an outlet and wherein the needle is adapted to penetrate through the cork with movement of the upper piece relative to the lower piece such that the needle outlet is passed through the cork and positioned within the bottle with the needle inlet positioned outside of the bottle;a pressurized source of gas; anda valve having a first valve inlet fluidly connected to the pressurized source of gas and a first valve outlet fluidly connected to the needle inlet, the valve being arranged to control gas flow from the pressurized source of gas to the needle inlet such that gas is controllably delivered into the bottle through the needle,wherein the needle is arranged to penetrate through the cork to deliver gas into the bottle and conduct wine out of the bottle, and such that upon removal of the needle from the cork, the cork reseals to prevent passage of fluid and gas through the cork. 2. The device of claim 1, wherein the lower piece includes a pair of clamp arms that are both pivotally mounted at respective axes to the lower piece. 3. The device of claim 1, wherein the valve includes a second valve outlet fluidly coupled to the needle inlet and the valve is arranged to control flow of wine from the needle outlet to the second valve outlet. 4. The device of claim 1, wherein the needle is a hollow non-coring needle with a single lumen. 5. The device of claim 1, wherein the needle is operable to penetrate through a foil-covered cork without damaging an ability of the cork to reseal the bottle after removal of the needle from the cork. 6. The device of claim 1, wherein the upper piece includes a guide rod arranged to move in a guide hole of the lower piece and guide movement of the upper piece relative to the lower piece. 7. The device of claim 6, wherein the guide rod includes a flat front surface. 8. The device of claim 1, further comprising a needle guide attached to the lower piece and having a through hole through which the needle passes during advancement of the needle through the cork. 9. The device of claim 8, wherein the needle guide is arranged to contact the cork with the clamp arm engaged with the bottle neck to resist expulsion of the cork from the bottle. 10. The device of claim 8, wherein the clamp arm and the needle guide are arranged to engage the bottle neck and guide the needle to penetrate the cork away from a center of the cork. 11. The device of claim 8, wherein the clamp arm and the needle guide are arranged to engage the bottle neck and guide the needle to penetrate the cork at a center of the cork. 12. The device of claim 1, wherein the valve is movable between a first position in which gas is permitted to flow from the pressurized gas source to the needle outlet, and a second position in which flow from inside of the bottle from the needle outlet to a valve exit is permitted. 13. The device of claim 12, wherein the valve is normally biased to be in the second position by a spring, and a force applied against the spring bias is required to move the valve to the first position. 14. A wine extraction device for the extraction of wine from within a bottle sealed by a cork, comprising: a lower piece arranged to engage a neck of a wine bottle and secure the lower piece relative to the bottle, the lower piece including a needle guide;an upper piece mounted for movement relative to the lower piece along a linear path;a needle attached to the upper piece, the needle having an inlet and an outlet and wherein the needle is adapted to penetrate through the cork with movement of the upper piece relative to the lower piece such that the needle outlet is passed through the cork and positioned within the bottle with the needle inlet positioned outside of the bottle;a pressurized source of gas; anda valve having a first valve inlet fluidly connected to the pressurized source of gas and a first valve outlet fluidly connected to the needle inlet, the valve being arranged to control gas flow from the pressurized source of gas to the needle inlet such that gas is controllably delivered into the bottle through the needle,wherein the needle is arranged to penetrate through the cork to deliver gas into the bottle and conduct wine out of the bottle, and wherein the lower piece and the needle guide are arranged to engage the bottle neck and guide the needle to penetrate the cork at a location away from a center of the cork. 15. The device of claim 14, wherein the needle is arranged such that upon removal of the needle from the cork, the cork reseals to prevent passage of fluid and gas through the cork. 16. The device of claim 14, wherein the needle guide includes a through hole through which the needle moves to penetrate the cork. 17. The device of claim 14, wherein the lower piece includes a pair of clamp arms arranged to engage the neck of the bottle. 18. The device of claim 14, wherein the valve includes a second valve outlet fluidly coupled to the needle inlet and the valve is arranged to control flow of wine from the needle outlet to the second valve outlet. 19. The device of claim 14, wherein the upper piece includes a guide rod arranged to move in a guide hole of the lower piece and guide movement of the upper piece relative to the lower piece. 20. The device of claim 14, wherein the valve is movable between a first position in which gas is permitted to flow from the pressurized gas source to the needle outlet, and a second position in which flow from inside of the bottle from the needle outlet to a valve exit is permitted. 21. The device of claim 20, wherein the valve is normally biased to be in the second position by a spring, and a force applied against the spring bias is required to move the valve to the first position.
