The infant formula of claim 1, wherein the monoglycerol palmitate is obtained from enzymatic hydrolysis of lard, tallow, or combinations thereof. 7. The infant formula of claim 1, wherein from about 85% to about 100% of the palmitic acid residues are at the Sn-1 position. 8. The infant formula of claim 1, wherein the fat system additionally comprises high oleic safflower oil. 9. The infant formula of claim 8, wherein the fat system additionally comprises coconut oil. 10. The infant formula of claim 9, wherein the fat system additionally comprises corn oil. 11. A method comprising utilizing the infant formula of claim 1 to provide a nutritional source to an infant. 12. A homogenized infant formula comprising protein, carbohydrate, and a fat system, the fat system comprising at least 10 wt % of monoglycerol palmitate, wherein at least 70% of palmitic acid resides in the monoglycerol palmitate are at the Sn-1 position, wherein the infant formula has the fat system homogenized with the protein and the carbohydrate, and wherein the infant formula is shelf stable and is selected from a liquid emulsion or a powder reconstitutable into a liquid emulsion. 13. The infant formula of claim 12, wherein at least 80% of the palmitic acid residues are at the Sn-1 position. 14. The infant formula of claim 12, wherein the fat system comprises at least 15 wt % of monoglycerol palmitate. 15. The infant formula of claim 12, wherein the fat system comprises from about 12 wt % to about 45 wt % of monoglycerol palmitate. 16. The infant formula of claim 12, wherein the fat system comprises from about 15 wt % to about 25 wt % of monoglycerol palmitate. 17. The infant formula of claim 12, wherein from about 85% to about 100% of the palmitic acid residues are at the Sn-1 position. 18. The infant formula of claim 12, wherein the fat system additionally comprises at least one of a high oleic safflower oil, a coconut oil, a corn oil, and combinations thereof. 19. A method comprising utilizing the infant formula of claim 12 to provide a nutritional source to an infant.
