A structured protein composition according to claim 1, which has an average shear strength of 1500 to 1800 grams, or 1800 to 2000 grams, or 2000 to 2600 grams. 3. A structured protein composition according to claim 1, which has a shear strength of 1500 to 1800 grams, or 1800 to 2000 grams, or 2000 to 2600 grams. 4. The structured protein product according to claim 1, wherein the arrangement of protein fibers is such that at least 55% are aligned, have an average shear strength of at least 1800 grams, and have an average shred characterization of at least 15% by weight of pieces of 2.5 cm in length or greater. 5. The structured protein product according to claim 4, wherein the arrangement of protein fibers is such that at least 55% are aligned, have a shear strength of at least 1800 grams, and have a shred characterization of at least 15% by weight of pieces of 2.5 cm in length or greater. 6. The structured protein product according to claim 1, wherein the arrangement of protein fibers is such that at least 55% are aligned, have an average shear strength of at least 2200 grams, and have an average shred characterization of at least 20% by weight of pieces of 2.5 cm in length or greater. 7. The structured protein product according to claim 6, wherein the arrangement of protein fibers is such that at least 55% are aligned, have a shear strength of at least 2200 grams, and have a shred characterization of at least 20% by weight of pieces of 2.5 cm in length or greater. 8. The structured protein product according to claim 1, wherein said plant is selected from the group consisting of legumes, corn, peas, canola, sunflowers, sorghum, rice, amaranth, potato, tapioca, arrowroot, canna, lupin, rape, wheat, oats, rye, barley, or mixtures thereof. 9. The structured protein product according to claim 8, wherein said plant protein is derived from soybeans. 10. The structured protein product according to claim 9, wherein the plant protein is selected from the group consisting of a soy protein isolate, a soy protein concentrate, a soy protein flour, or mixtures thereof. 11. The structured protein product according to claim 1, wherein said plant is wheat. 12. The structured protein product according to claim 1, further comprising one or more ingredients selected from the group consisting of a starch, flour, gluten, dietary fiber, or mixtures thereof. 13. The structured protein product according to claim 1, wherein said structured protein product is an extrudate. 14. The structured protein product according to claim 1 further containing antioxidants, antimicrobial agents or a combination thereof. 15. The structured protein product according to claim 1 further comprising a colorant composition. 16. Use of the structured protein product according to claim 1 for preparing a restructured meat composition. 17. Use according to claim 16, wherein the restructured meat composition also comprises animal meat or comminuted vegetable or comminuted fruit.
