○ 연구결과
새로운 개념의 곡물인 녹색 WG의 산업화를 위하여 대량 생산 체계 구축을 완료하였으며 적합한 품종 선발 및 재배법을 개발하고 건강기능성에 대한 연구를 실시하였다. 대량 생산에 필요한 일관 기계화 시스템을 개발함과 동시에 영양성분 분석을 통한 기능성 식품을 연구하였다. 유통 및 저장 시 발생하는 문제점을 해결하고 수출화를 위한 전략을 수립하였으며 그 결과는 다음과 같다.
1. 군산시와 녹색 WG 생산․가공․유통 등에 필요한 기반 조성 구축을 MOU를 체결하고 (2010, 12. 24) 녹색곡물 생산단지 및 저장
○ 연구결과
새로운 개념의 곡물인 녹색 WG의 산업화를 위하여 대량 생산 체계 구축을 완료하였으며 적합한 품종 선발 및 재배법을 개발하고 건강기능성에 대한 연구를 실시하였다. 대량 생산에 필요한 일관 기계화 시스템을 개발함과 동시에 영양성분 분석을 통한 기능성 식품을 연구하였다. 유통 및 저장 시 발생하는 문제점을 해결하고 수출화를 위한 전략을 수립하였으며 그 결과는 다음과 같다.
1. 군산시와 녹색 WG 생산․가공․유통 등에 필요한 기반 조성 구축을 MOU를 체결하고 (2010, 12. 24) 녹색곡물 생산단지 및 저장․가공 시설 등을 설치하였다. 충남대 산업협력단과 (유)새만금홀그레인(지역영농단체)는 녹색 WG의 대량생산 및 가공방법(출원번호: 10-2011-0025776)에 대한 기술이전 계약을 완료(2011.11.11)하고 기술이전료 28,000,000원을 징수하였다. 또한, 향토산업육성사업(사업명 : 녹색 WG의 산업화 2012. 12) 선정으로 지속적 생산과 함께 전국적인 농업인의 참여를 확대시킬 수 있는 가능성을 확보하였다. 사업기간동안 녹색 WG 보리와 WG쌀은 각각 34,870kg, 63,638kg 생산하여 그 판매금액은 134,562,000원과 230,111,400원이었다. 녹색 WG밀은 보리와 쌀과는 달리 생산이 어려워 소량 생산후 연구용으로 이용되었다.
2. 지적 재산권 확보 및 판매를 위하여 온알곡으로 상표를 출원하였으며(제5류, 제 29류, 제30류) 본 사업단 연구와 관련하여 국내 3개(곡물 겨를 이용한 고섬유소 누룽지 및 그 제조방법 10-2011-0117614, 녹색 WG 가공을 위한 연속 순환식 건조 시스템 및 그 건조방법 10-2011-0048280, 전곡립을 첨가한 발효유의 제조방법 10-2011-0101707)와 해외특허(녹색 통곡물의 가공 및 대량생산 방법 미국(출원번호 : 13/425885), 일본(출원번호 : 2011-256268) 를 출원 중에 있다. 홍보를 위하여 국문, 영문, 일문, 중문 브로셔를 제작하여 전시회 등에 배포하였다.
3. 녹색 WG쌀을 생산하기 위한 벼 품종들의 적정 수확시기는 일반적으로 출수 후 15일~25일 경이 가장 적당하였다. 벼 품종별 한계 수확시기인 출수 후 25일경 수량은 찰벼 품종으로는 신선찰벼가 가장 많았으며 메벼 품종은 칠보벼가 가장 많았다. 이앙시기별 녹색 WG쌀의 수량은 일반적으로 5월30일 이앙이 6월 20일 이앙보다 많았으며 수확시기인 출수 후 15-25일 수량은 품종에 따라 다양하였다. 녹색 WG쌀에 적합한 벼 품종은 찰벼는 5월30일 이앙재배일 경우 동진찰벼, 생동찰벼, 보석찰벼, 신선찰벼가 적합하고 6월 20일 이앙재배는 보석찰벼, 백옥찰벼, 신선찰벼가 적합하다. 메벼일 경우 5월 30일 이앙재배는 삼광벼, 눈보라, 칠보벼가 적합하고 6월 20일 이앙재배일 경우 황금노을, 호품벼, 칠보벼가 적합하였다.
4. 수량은 질소함량이 많을 때 호품벼는 수량의 증가를 볼 수 있었고 운광벼, 신선찰벼는 감소하는 경향을 보였다. 이앙시기가 늦어짐에 따라서 호품벼와 신선찰벼는 수량이 증가되었지만 운광벼는 감소하였다. 만식재배에 적절한 품종은 호품벼, 운광벼, 신선찰벼가 적절하였고 녹색 WG쌀로 이용하고자 할 때는 질소시비 수준을 높게 하여 재배해야 할 것으로 사료된다. 5월 30일 이앙하여 출수 후 25-30일 수확하여 사용할 경우 재배기간을 2주 정도 단축시킬 수 있고 6월 20일 이앙하여 수확하여 사용할 경우 재배기간을 5주 정도 단축시켜 농경지 활용에 적합하다. 녹색 WG쌀로 섭취하기 위하여 출수 후 25-30일이 적절하였고 이 시기에 건물생산량이 높고 잎과 줄기의 성분이 좋아 가축의 사료로 사용이 적합하였다.
5. 공시된 쌀보리 15품종 모두 녹색 WG보리로 생산은 가능하였다. 수량을 측정하여 1회 시험에서 수량 및 녹색보리로의 활용도가 낮은 내한쌀보리, 다송쌀보리, 다풍쌀보리, 두원찰쌀보리, 송학쌀보리 5품종은 제외시키고 10품종에 대해 재공시하여 수량을 측정하였다. 그 결과 새쌀보리, 새한찰쌀보리, 동한찰쌀보리, 광활쌀보리 순으로 가장 많았고 호반찰쌀보리, 진주찰쌀보리, 재안찰쌀보리 순으로 적었다.
6. 녹색도를 검정한 결과 출수 후 15일까지는 모든 품종의 품질이 좋았으며 출수 후 20일에는 재공시한 10품종만 녹색도를 유지하였다. 녹색 WG보리로 이용가능한 시기인 출수 후 20일에서 25일 사이의 탈부율은 새쌀보리와 호반찰쌀보리가 가장 높았다. 녹색기간을 유지하기 위한 시비방법으로는 질소 추비량을 달리하여 구명하였는데 질소를 기비 30%, 생육재생기에 추비 30%, 1차 추비 후 20일 뒤 2차 추비 40% 시비방법이 녹색도가 2∼3일정도 더 유지 되었으며 탈부율도 높은 결과를 보였다.
7. 녹색 WG밀을 생산하기 위한 적정 수확시기는 금강밀을 대상으로 품질과 수량을 검토한 결과 출수 후 32일부터 35일까지 수확하는 것이 가장 좋은 것으로 판단하였다. 녹색 WG밀 용으로 적합한 품종을 선발하기 위하여 금강밀 등 20품종을 대상으로 출수 후 30일째에 수확하여 blanching 한 후 품질과 수량을 조사하여 품종을 선발한 결과, 녹색도와 수량을 기준하여 백중밀, 연백밀 2품종을 선발하였다.
8. 밀 파종시기에 따른 녹색 WG밀의 수량과 품질을 구명하기 위하여 금강밀 등 3품종을 대상으로 추파(10월 중, 하순, 11월상순)와 춘파(2월중순)를 실시한 결과 추파하였을 때 대체로 수량과 품질이 양호하였고, 출수시기는 8-15일의 차이를 보여 분산 수확이 가능하였다.
9. 제 2형 당뇨병 환자 중 중등도의 당뇨병 유병기간을 가진 폐경 후 비만 여성에게 녹색 WG섭취는 혈당 조절의 개선은 유도하지 못하였지만 식사의 만족도를 유지하였고 체중감량을 통하여 인슐린저항성의 개선을 유도할 수 있음을 보여 주었다. 특히 포만감을 유지하여 섭취량 감소와 간식 섭취를 유도할 수 있었으며 일반적인 잡곡밥과 성분 비교에서도 총 식이섬유소 뿐 아니라 항산화 비타민인 비타민 B1과 비타민 E가 높았는데 이는 대사증후군과 당뇨병환자의 식이양상을 조사한 선행연구에서 HDL-콜레스테롤 농도와 관련이 있었고 이것은 심혈관질환의 위험을 낮추는데 효과적임을 시사하였다. 따라서 복부비만군이 정상군에 비해 HDL-콜레스테롤 농도가 낮았고 우리나라 여성에게서 폐경 후 비만을 동반하는 당뇨병환자 분포가 많음을 고려하면 녹색 WG은 당뇨병 치료와 관리 뿐 아니라 심혈관계질환 예방에도 도움이 될 것으로 기대된다.
10. 녹색 WG 생산에 있어 가장 중요한 steam blanching 시스템, 냉각, 제습 유닛을 각각 설계제작 및 조립하여 성능 시험을 수행하고 적정 blanching 조건을 구명하였다. 생산을 함과 동시에 전 시스템의 성능을 개선하였다. 투입부-토출부 자동화 설비를 도입하면서 blanching 처리한 곡물을 건조 시스템으로 자동 이송하는 장치를 제작 연결 부착하여 일관 작업체계를 구축하였고 시스템 성능을 개선함으로써 작업인력을 줄이며 작업능률을 크게 향상시킬 수 있었다(blanching: 3500kg/h, 제품생산시간 45h). 건조 공정까지 처리된 녹색 밀, 쌀 및 쌀보리의 탈부시스템을 개발하여 녹색 WG의 대량생산에 필요한 기계화 시스템을 구축하여 본 사업의 핵심인 hardware system이 완료되었다.
11. 녹색 WG 생산을 위한 수확물을 blanching한 후 안정적으로 건조시키기 위하여 최종적으로 회전식강제 온풍․송풍 건조 시스템을 적용하였다. 1차 건조 시 원료에 포함된 지푸라기, 검불, 미세먼지를 80-90%이상 제거함으로써 2차 건조공정에서 사용하고 있는 순환식 건조기의 건조 하중을 줄이고 건조 소요 시간을 감소시킬 수 있었다. 이 시스템은 blanching 시간과 같은 시간으로 1차 건조를 수행할 수 있으며 2차 공정으로 도정 할 수 있는 수준(함수율 14-15%)으로 건조가 가능하였다. 대용량 처리를 위하여 10ton 규모로 2대 설치함으로써 녹색 WG의 대량생산 기반을 확보하였다. 정선 시스템은 원료가 회전식 강제 온풍․송풍 건조 시스템을 통하여 2차 건조공정까지 마친 후 도정이나 저장고 보관이 가능하게 하였으며 단위시간당 3ton의 녹색 WG 원료를 정선할 수 있도록 설계 제작 하였다.
12. 녹색 WG 시료 중 밀, 보리 성분분석의 결과 녹색을 띠는 WG 일수록 L값이 감소해서 어두워지며 a값이 (-)값이 되어 녹색임을 확인할 수 있었다. 또한 조지방과 지방산, 환원당의 함량이 녹색일수록 증가하는 것으로 나타났으며 β-carotene은 녹색 WG 시료에서만 값이 측정되었다. 녹색 WG를 첨가한 가공품의 경우 함유량이 증가할수록 녹색이 짙어졌다. 녹색 WG밀의 함유량이 증가함에 따라 머핀과 식빵은 Hardness가 증가하여 단단함을 느낄 수 있었으나 쿠키는 감소한 것을 알 수 있었다. 관능검사 결과, 식빵을 제외하고 머핀과 쿠키의 전반적인 선호도는 큰 유의적 차이가 없었다.
13. 녹색 WG쌀을 이용한 백설기는 30% 함유 했을 때 선호도가 좋았으며 일반 혹은 황숙기비하여 호숙기(출수 후 15일)의 원료를 사용했을 때 선호도가 높았다. 찹쌀 바게뜨는 녹색 WG 쌀을 함유 했을 경우에 선호도가 높게 나타났다. 이외에 녹색 WG보리를 첨가한 식빵의 경우 첨가량이 증가할수록 전분의 노화를 지연시키는 효과가 있었다. 녹색 WG쌀과 WG보리 미숫가루의 조리적성을 높이기 위해서는 현미를 비롯한 다른 곡물 미숫가루을 혼합하여 제조하는 것이 바람직하다고 사료되었다. 녹색 WG밀의 가루를 20% 첨가한 피자를 제조한 결과 대조군보다 두께가 얇고, 응집성과 경도가 높은 조직감을 나타내었다. 녹색 WG를 함유한 가공식품은 well-being에 입각한 소비자의 선호도를 높이며, 영양학적 부가가치가 높은 가공식품을 개발할수 있을 것으로 판단되었다.
13. 출수 15일의 녹색 WG (삼광벼와 추청벼)을 이용하여 밥을 짓기 전과 비교했을 때 밥을 하고 난 후 L값은 높아졌으며 a, b값이 감소하는 것을 보아 녹색이 감소하는 것을 확인할 수 있었다. 또한 지방산, β-carotene, phytosterol, tocopherol, 환원당의 함량은 밥을 지은 후 현저히 낮게 나타났지만 수분과 조지방 함량은 높게 측정되었다. 무기질과 구성아미노산의 함량은 출수 후 15일에서 비교적 가장 높은 함량을 함유하고 있었다. 이를 취사하면 추청쌀 밥에서 필수아미노산인 Val, Met, Lys의 함량은 각각 215.1, 74.4, 147.1 g/100g 함유되고 있었으며, 삼광쌀밥에서 Val 174.8 mg/100g, Met 66.2 mg/100g, Lys 118.6 mg/100g 함유되어 있었다. 따라서 녹색 WG쌀을 가공제품으로 이용시 영양학적 가치가 높을 것으로 사료되었다.
14. 습식 상태의 녹색 WG밀을 소금물로 처리하여 파우치(폴리에틸렌)에 포장하여 4℃에 저장하였다. 농도에 상관없이 저장기간이 길어짐에 따라 지방산조성, 수분함량, phytosterol 함량, 환원당 함량, 단백질 함량 등은 서로 유의적인 차이를 보이지 않았다. 반면에 베타카로틴, tocopherol 함량, 비타민 C 함량은 저장 기간이 길어지면서 감소하는 경향을 나타내었다. 인체 내에서 중요한 생리활성 성분인 choline의 경우, 저장기간이 길어짐과 동시에 증가하는 경향을 보였으며, betaine은 저장기간별로 차이는 없었으며 통조림 캔에 포장된 습식 녹색 WG밀의 경우 파우치 포장과 유사한 경향을 보였다.
15. 녹색 WG의 최적 첨가율을 시험하기 위하여 4종류의 WG(쌀 2종, 보리, 밀)을 2, 4, 6%로 발효유에 첨가하여 배양하였고, 그 결과 보리와 밀을 첨가한 발효유가 pH 4.5에 도달시간이 배양 12시간으로 다른 첨가구에 비하여 가장 빠르고 높은 점도를 보였다. 관능검사 결과는 대체적으로 2% 첨가한 발효유가 좋은 기호성을 나타냈으며, 액상발효유와 호상발효유에서도 대조구에 비하여 산생성과 유산균수의 증가, 점도도 월등히 높은 결과를 나타내었다. 고형분의 첨가가 높아짐에 따라 좋은 식감을 나타냈으며, 특히 찹쌀과 멥쌀을 첨가한 발효유는 대조구에 비하여 유사하거나 높게 나타나 향후 상업용으로 제품화될 경우 좋은 기능성 발효유가 될 것으로 기대된다.
16. 녹색 WG밀과 WG보리를 각각 10% 첨가하여 만든 찐빵은 중력분과 강력분만으로 만든 찐빵과 비교했을 때, 글루텐 형성과 발효, 색, 맛, 광택, 단면의 기공에서 거의 차이를 나타내지 않았으나 첨가율이 늘어날수록 수분부족 현상이 심해졌다. 그러나 쪘을 경우 식감은 더욱 쫄깃하게 느껴졌으며 밀보다 보리가 색과 광택, 향에서 더 좋았다. 쿠키는 버터와 쇼트닝이 충분히 들어가므로 밀, 보리, 쌀, 찹쌀 모두 30% 이상 넣어도 만드는데 무리가 없을 것으로 사료되었다.
17. 면류는 30% 첨가구는 신장도가 감소하여 면류로써 제조하기에는 다소 무리가 있는 것으로 판단된다. 우유와 함께 쌀과 보리 10%, 20% 첨가구는 면의 조직이 부드러우면서 맛도 뛰어나 산업화에 매우 좋은 제품으로 생각되었다. 녹색 WG를 이용한 식빵 제조는 일반 WG보리나 쌀을 첨가했을 때보다 모두 대조구가 맛과 향이 좋았으며, 30% 처리구에서 조직감이 가장 좋았다. 녹색 WG쌀과 녹색 WG보리를 이용한 또르티아는 표면색과 맛은 30% 첨가구가 모두 좋았으며, 기호도는 녹색 WG쌀은 10%, 녹색 WG보리는 20% 첨가구에서 좋았다
18. 녹색 WG쌀, 보리, 밀의 입자 크기가 클수록 분쇄가 덜 되었다. 수제비 제조 시 밀 함량이 많을수록 반죽이 어렵고 점성이 저하되었으며 경질화 되었다. 따라서 녹색 WG를 이용할 경우 함량과 입자의 크기는 50%-500㎛이 적당할 것으로 사료되었다. 녹색 WG 첨가 쿠키에서 조단백질, 수분, 베타카로틴의 양이 대조구에 비하여 많았으며 조지방은 적었다. 대장균은 검출되지 않았으며 저장 10주차에서 4.7 cfu/g 수준으로 대조구에 비하여 적었다. 포장재와 저장일수에 따른 저장품질 실험에서 저장 60일 경과후 포장재 A에서 식이섬유와 베타카로틴 함량이 우수하였으며, 미생물학 측면에서도 저장 30일까지 총균이 불검출 되었다. 따라서 녹색 WG용 제품을 위한 포장재로는 A Type(폴리에틸렌)이 적당하다고 판단되었다.
19. 습식 상태의 녹색 WG밀은 파우치 저장할 경우에 총균은 저장 25일 경과시 3% 소금물 처리구가 7.53log(cfu/g)로 가장 적었으며, 소금물의 농도가 증가함에 따라 총균수는 감소하였다. 파우치와 통조림 모든 처리구에서 대장균군은 검출되지 않았다. 통조림에서는 저장 150일 경과 후에 2.43log(cfu/g)수준으로 검출되었다. 관능평가 결과 3% 소금물 처리구가 외관, 냄새, 맛, 조직감 및 전반적인 기호도면에서 모두 우수한 점수를 받았다. 따라서 습식상태의 녹색 WG의 처리는 3%처리 소금물이 적합할 것으로 사료되었다.
20. 녹색 WG는 기존에 확립된 유통체계를 가지고 있지 않기 때문에 더욱 새롭고 매우 통찰력이 있는 혁신방안이 모색되어야 한다. 마케팅 최우선 순서는 국내외 바이어를 만나기 위하여 식품박람회 등을 통한 전시회에 참여라고 사료된다. 녹색 WG는 인간식생활의 밑바탕이 되는 에너지 공급원인 기존의 밀이나 쌀 감자 등에 속하는 전분질이다. 그러나 일반적인 전분질의 원료로서 시장에 공급을 할 경우 시장에서의 경쟁력을 가지고 소비를 창출한다고 보기에는 매우 어렵다. 따라서, 전시회에서는 찾아온 바이들에게 녹색 WG의 영양적인 특성, 즉 영양학적인 또는 기능적인 면을 적극 홍보하고 구체적인 자료를 공급하여 구매가 이뤄지도록 하여야할 것이다.

The purpose of this study is to develop the agricultural technology to produce a new kind of Green Whole Grain (GWG), to distribute it to farmers and increase their profits, to seek a way to increase the production and consumption of wheat and barley and other whole grains, and therefore improve the health of people. The technology for the test cultivation of GWG was developed in a previous study, however it was inadequate for full scale adoption in the agricultural industry. Thus, for the industrialization of GWG, we studied 1)the large scale production systems of GWG, 2)new varieties of GWGs and cultivation technologies, 3)the health enhancing properties of GWG, 4)the development of a consistent mechanized system of production, 5)the nutritional content, 6)development of functional foods with GWGs and 7)marketing strategies and export possibilities. The following is a summarization of this study.
1. An MOU has been signed with Gunsan-si for the production, processing and distribution of GWG (Dec. 24th, 2010). The GWG farming complex and the storage and processing facility have been constructed. The industry-university cooperation group of Chungnam National Universty has signed a contract to transfer the technology (Patent No.10-2011-0025776) for mass production and processing of the GWG with Saemangeum Whole Grain, ltd.(a local agricultural corporation) and collected the fee of 28,000,000 KRW.
It was also selected as one of the government projects for promoting rural industries(Project name : Industrialization of Green Whole Grain(Dec. 12th, 2012)), thus securing the possibility of participation of country-wide agricultural households. During the project period, the GWG, barley and rice production were 34,870kg and 63,638kg, respectively and the sales were 134,562,000 KRW and 230,111,400 KRW, respectively. Only a small amount GWG was produced, due to the difficulty of production compared to rice and barley, and was used for research purposes.
2. For the purpose of protecting intellectual property rights and sales promotion, the trademark "On-Al-Gok" has been submitted for (category 5, 29 and 30) and three(3) domestic patents, "Making of nurungii with bran rich in dietary fiber" (patent no. 10-2011-0117614), "A continuous circulation drying system for processing whole grain" (patent no. 10-2011-0048280) and "Making of fermented milk with added whole grain" (patent no. 10-2011-0101707) and two(2) foreign patents, "Mass production and processing technology of green whole grain" (USA: patent no. 13/425885 and Japan: patent no. 2011-256268). For export promotion, GWG brochures written in Korean, English, Japanes, and Chinese were printed and distributed at various food exhibitions.
3. The optimum harvest time for GWG rice was 15-25 days after the earing period. By limiting the harvest time to 25 days after earing, 'Sinsun' yielded the most among the glutinous rice species and 'Chilbo' among the common non-glutinous rice species. The time of transplantation also affect the production. The transplantation on May 25th yielded more than that of June 20th. The yield varies for species when harvested 15 days after the earing. Cultivars suitable for GWG rice, assuming that the transplantation is on May 25th, are 'Dongjin', 'Saengdong', 'Boseok' and 'Sinsun' among the glutinous species.
Assuming a June 20th transplantation, suitable glutinous cultivars are 'Boseok', 'Baekok' and 'Sinsun'. Among the common non-glutinous cultivars, they are 'Samkwang',
'Nunbora' and 'Chilbo' for May 25th transplantation and 'Hwanggumnoul', 'Hopum' and 'Chilbo' for June 20th transplantation.
4. When the soil is rich in nitrogen, 'Hopum' has shown incresed yield. However, glutinous cultivars such as 'Unkwang' and 'Sinsun' have shown reduced production.
Purposefully delaying transplantation resulted in higher yields for 'Hopum' and 'Sinsun', and lesser yields for 'Unkwang'. 'Hopum', 'Unkwang' and 'Sinsun' were decided as suitable as late planting cultures. It is recommended that fertilizer with higher than average nitrogen content be used when growing GWG rice. Cultivation time was shortened by two(2) weeks, compared to ordinary rice, if one opts for May 25th transplantation and harvests 25-30 days after the earing. It was five(5) weeks less than when one opts for June 20th transplantation and harvests 25-30 days after the earing. Thus, growing GWG helps more effective utilization of land. GWG rice harvested after 25-30 days was most suitable for eating, produced more dried end product and the by-products, leaves and stems, were rich in nutrition and suitable as livestock feed.
5. Fifteen(15) naked barley(Sal-bo-ri) cultivars were tested for GWG. The first test cultivation eliminated five(5) cultivars, 'Naehan-Salbori', 'Dasong-Salbori', 'Dapoong-Salbori', 'Doowon-Chalsalbori' and Songhak-Salbori because they were not very suitable for GWG. The remaining ten(10) species were test cultivated again and the products were measured. The highest-yielding cultivars were 'Sae-Salbori' and 'Saehan-Chalsalbori', 'Donghan-Chalsalbori' and Kwanghwal-Salbori progressively yielded less. The lowest-yielding cultivars were 'Hoban-Chalsalbori', 'Jinju-Chalsalbori', and 'JaeAn-Chalsalbori'.
6. Whole grains harvested 15 days after earing time showed all green color. However, of those harvested 20 days after earing, only ten(10) cultivars re-cultivated maintained a green color. At the optimum harvest time of 20-25 days after earing, "Sae-Salbori' and 'Hoban-Chalsalbori' showed the best hulling efficiency. To extend the period of green-ness, the optimum nitrogen fertilization was investigated. The scheme of 30% nitrogen basal fertilization, 30% additional fertilization at the initial growing period and 40% fertilization added 20 days after the first additional fertilization resulted in a 2-3 day extension of the green period and better hulling efficiency.
7. The optimum harvest time for producing the GWG wheat was 32-35 days after earing as investigated for yield and quality with the 'Gumkang' wheat cultivars. We test cultivated 20 cultivars of wheat, harvested 30 days after earing and tested for yield and quality for each cultivar. We selected two(2) cultivars, 'Baekjung' and 'Yonbaek' after considering the green-ness and the quantity of the produced GWG.
8. To investigate the production quatity and the quality of the GWG wheat depending on the seeding time, we tested autumn seeding(mid to late October) and spring seeding(mid February) with three(3) species including the 'Gumkang'. Autumn seeding showed higher yield and quality in general, and, also the earing time of the species was spread over 8-15 days so that it was possible to control the harvest time.
9. In terms of type II diabetes, for a group of obese woman after menopause who suffered medium term diabetes, the consumption of GWG had no positive effect on lowering blood sugar, however it gave the feeling of a satisfactory meal and led to an improvement on insulin resistant diabetes by weight loss. The ability to maintain the feeling of full and satisfied was very good so that actual meal size was reduced. Compared to the ordinary multigrain rice, it has higher total dietary fiber, vitamin B1 and vitamin E, which are typical antioxidative agents. These substances were shown to be related to the HDL cholesterol level, by the precedent study on the diet aspect of metabolic syndrome and diabetic patients and, thus, suggest that consumption of GWG may reduce the risk of cardiovascular disease. As the abdominal obese group has lower HDL cholesterol level than the normal ones and considering that many Korean women, after menopause, often suffer with obesity and diabetes, GWG is expected to be helpful for the cure and control of dibetes and, also for preventing cardiovascular disease. .
10. A steam blanching system, the most important machine for producing GWG, cooling unit, and dehydration units were developed, manufactured and assembled for the performance test of the whole system. As a result of the performance test, the optimal blanching conditions were determined. Improvements on system performance were carried out during the production stage. The input and discharge of grain was automated and an automatic feeding system was added for transferring grain from the blanching system to the dehydration system. The overall performance of the system was vastly improved and the man-power needed for the production of GWG was reduced (blanching rate : 3500kg/hr and the total processing time required for the GWG product : 45 hr). The fully automated integrated drying and hulling system for the production of rice, wheat and barley GWG was developed. thus enabling the mass production of GWG. The development of such a hardware system was a major part of this project.
11. To dehydrate GWG after blanching, a rotating drum machine was adopted with awarm air circulation system. More than 80% of hay, leaves, chaff and dust were removed from raw GWG during the 1st dehydration period and thus can reduce the load and required time for the 2nd stage circulation dehydration system. The 1st stage dehydration process takes about the same time required for the blanching. The moisture content of raw GWG becomes 14-15% after 2nd stage dehydration, which is suitable for the hulling process. We installed two(2) 10 ton capacity automated systems to establish a foundation for large scale GWG production.
The grain selection system is capable of processing raw grain at 3 ton/hr. The system processes raw GWG, after 2nd stage dehydration, for further polishing by pounding or for the storage.
12. As we analysed the components of wheat and barley GWG, the one which has darker green color has lower L and negative(-) a values. Also, we confirmed higher crude fat, fatty acid and reducing sugar content in grains with darker green color and β-carotene components was found only in green grains. For processed foods with added GWG, the green color becomes darker as GWG content increase. Bread and muffins become harder
when more GWG is added while cookies become softer. In sensory tests of food containing GWG, there was not much preference over the foods without GWG except for the bread.
13. For rice cakes (Baekseolgi) using GWG rice, 30% GWG content was preferred by many people. Dough-ripe stage(15 days after earing) GWG was preferred over the common or yellow ripe stage GWG. For barley GWG bread, the delaying of the starch aging effect become greater with increased GWG content. It was found that mixing brown rice and other grains is advisable for producing better and readily cookable GWG rice and/or barley powder. When 20% of GWG was added to pizza, the pizza was thinner and harder compared to one without any GWG. There will be enough potential for developing highly nutritious and profitable processed foods with GWG, preferred by health-conscious consumers.
13. When testing cooked GWG rice 'Samkwang', harvested 15 days after earing, compared to uncooked rice, we found that the L value was higher, a and b values were lower.
Hence, it was confirmed that the green color become lighter with cooking. Also, fatty acids, β-carotene, phytosterol, tocopherol and reducing sugar content become much lower after cooking. However, moisture and crude fat content were determined to be much higher. The mineral content and protein composition amino acids were highest with GWG harvested 15 days after earing. The cooked GWG rice, 'Chuchung', has essential amino acids of 215 mg valine, 74.4 mg methionine and 147.1 mg lysine per 100g. The 'Samkwang' contains 174.8 mg, 66.2 mg and 118.6 mg per 100g, respectively. It is safe to conclude that the nutritional value of GWG processed food is very high.
14. GWG wheat before the dehydration was prepared with salt water, put into a polyethylene pouch and kept in storage at 4℃. Fatty acid, moisture, phytosterol, reducing sugar, protein contents showed no noticiable change regardless of storage period. However,
β-carotene, tocopherol, vitamin C contents become less as the storage time. The important bioactive substance, choline showed tendency to increase with the strorage time. However, betaine showed no such tendency. Canned GWG wheat, without dehydration, showed about the same properties as the pouched one.
15. The optimal mixing ratio of GWG determined by experimenting with four(4) kind of rice, two(2) barley and two(2) wheat GWGs. 2, 4 and 6% of the above GWG were added to fermented milk and cultured. The ones with added barley and wheat showed shorter culturing time of 12 hours for reaching pH 4.5 and they are also thicker(higher viscosity) than the others. Sensory test showed that 2% added ones are more tasteful. They also showed better acid production, greater numbers of lactic acid bacteria, and higher viscosity than the comparison group for both yoghurt beverage and fermented milk. The increase of solid content led to better texture, and the fermented milk containing glutinous rice and common rice was preferred over the comparison group. This is highy promising for developing commercially viable fermented milk products.
16. Steamed buns with 10% GWG wheat and barley content showed no noticeable changes in gluten formation, color, taste, surface texture and porosity formation. As the content increased, the buns became drier. However, the steamed texture was very chewy and the one with barley content was better than the one with wheat content in many aspects such as color, surface texture and aroma. As a sufficient amount of shortening and butter are added when making cookies, it is expected that 30% or more rice, barley and wheat GWG can be added without much problems.
17. When 30% of GWG was added to the noodle product, a loss of glutinous properties made the option unsuitable. Noodles with 10% and 20% rice content and barley GWG have very soft and tasteful texture and are thus suitable for commercialization. Bread with rice and barley GWG content showed less desirable taste and aroma compared to the others and the group with 30% GWG content resulted in the best texture. For tortillas with GWG rice and barley content, the 30% groups all have good taste and surface texture. The preferred content ratio was 10% in the case of GWG rice and 20% in the case of barley.
18. As the grain size increases with GWG rice, barley and wheat, grinding into flour was more difficult. As the granule content increase, kneading of dough for sujebi (clear soup with dumplings) become more difficult, less glutinous and harder. Hence, it is suggested that the GWG content be adjusted to 50% and the granule size to 500㎛. The cookies containing GWG contained more crude protein, moisture and β-carotene, and less crude fat compared to the other groups. No colon bacillus was detected and determined to be 4.7cfu/g after ten(10) weeks of storage, which is lower than those of comparison groups.
From an experiment on packing material and storage periods, it was determined that material A was superior in preserving dietary fiber and β-carotene content after 60 days of storage. The material also showed no sign of any harmful bacillus after 30 days of storage. thus we recommend the type A material, polyethylene for packing GWG products.
19. For the wet GWG wheat products stored for 25 days in a pouch, the group with 3% salt water treatment showed the lowest total amount of bacillus, 7.53log(cfu/g) and with the increase of salt water density, the total amount of bacillus was decreased. No colon bacillus was detected for both the pouched and canned specimens. For canned specimens, colon bacillus was detected, 2.43log(cfu/g), after 150 days of storage. Sensory tests showed that 3% salt water treatment scored the best for appearance, smell, taste, texture and overall preference. Thus, we conclude that 3% salt water is the most appropriate treatment method for wet GWG products
20. GWG does not have an established distribution system and thus requires a new and innovative way of distribution with keen insight. One way is to participate in various food exhibitions to communicate with buyers both foreign and domestic. The main nutritional content of GWG is carbohydrate which is the same as rice, wheat and potato, the main source of calories. Thus, it will not be competitive in the market against such traditional food materials as a source of carbohydrates. Therefore GWG will be promoted by
explaining, to the buyers, the nutritional content of GWG that differentiates it from the traditional food material and its functional properties. Supporting materials with scientific data will also be provided to the buyers for actual sales.
