한편 전분의 양이온화공정에서 반응속도는 촉매로 사용하는 NaOH의 양에 많은 영향을 받으므로 전분의 호화는 가능한 억제하면서 NaOH의 첨가량을 증가시키는 것이 중요하다. 따라서 알칼리호화 억제제인 Na_(2)SO_(4)의 호화억제 효과를 정량분석하였다. 40℃에서 10% 옥수수전분 현탁액에 4% Na_(2)SO_(4)를 첨가한 경우 AGIC는 24.1 meq NaOH/g-starch에서 33.0 meq NaOH/g-starch로 증가하였으며 그 증가율은 Na_(2)SO_(4) 첨가량 및 현탁액의 온도와 일정한 상관관계를 보였다.
옥수수전분 현탁액의 AGIC와 전분의 농도, 온도 및 호화억제제 첨가량과의 상관관계를 기초로 RSM을 이용하여 양이온화 반응조건을 최적화하였다. 8%의 양이온화 시약을 첨가하여 18시간 반응시킨 경우 38.48℃에서 Na_(2)SO_(4)를 1.89%(w/w) 첨가한 경우 AGIC 보다 6.75 meq/g-starch 만큼 높은 NaOH농도에서 치환도 0.03022(67.28%의 반응효율)의 양이온성전분을 제조할 수 있었다. 양이온화시약 첨가량을 20%로 증가시켜 40℃에서 24시간까지 양이온화를 진행하였으나 RSM 분석 결과 반응이 완료되지 않은 것으로 밝혀져 water-slurry process에 의한 고치환 양이온성전분을 최적조건으로 제조하기 위해서는 그 이상의 반응시간이 필요한 것을 알 수 있었으며 실험 구간내의 최적조건은 Na_(2)SO_(4)를 1.99%(w/w) 첨가하고 AGIC 보다 5.73 meq/g-starch 만큼 NaOH를 증가시켜 첨가한 경우로, 치환도 0.0642(반응효율 57.37%)의 양이온성전분을 제조할 수 있었다.

In this study, we discuss the characterization of alkali gelatinization of corn starch and the physiochemical characteristics of corn starch during the process.
Degree of gelatinization of corn starch increased exponentially with the amount of NaOH added. Alkali gelatinization initiation point(AGIP) was obtained from the critical point where the degree of gelatinization was markedly changed.
The effects of temperature and concentration of corn starch on alkali gelatinization was studied with 10%(w/w) corn starch suspension. Corn starch was gelatinized in the 24.1 meq/ g-starch of NaOH at 40℃, whereas 9.8 meq/ g-starch at 60℃. Moreover, 40%(w/w) corn starch suspension was gelatinized with 9.5 meq/ g-starch even at 40℃. These results indicated that the amount of alkali added for the gelatinization of corn starch had reverse relation against the temperature and concentration of corn starch.
In contrast, solubility and amount of eluted polysaccharides and amyloses increased proportionally to the amount of alkali added. X-ray diffraction patterns and DSC thermogram showed that, in early stage of alkali gelatinization, crystallinity of starch granules was disrupted compared to that of heat gelatinization. This resulted in the low amylose contents in eluted saccharides while granule sizes were little changed in the alkali treated corn starch. Endotherm peak in DSC thermogram shifted toward higher temperature region as the degree of gelatinization increased, suggesting that retained starch granules were more compactly crystallized during alkali gelatinization than during heat process. It is concluded that, during alkali gelatinization of corn starch, disruption of weak particles would occur first before swelling of granules.

Therefore, the decrease of integrity of a starch granule was due to the substitution of cationic groups concentrated on the amorphous region.
The analysis of rheological properties of 1% gelatinized cationic corn starch solution showed that natural corn starch was Newtonian fluid but a cationic starch was psedoplastic fluid. The viscosity was increased with the degree of substitution but decreased with the electrical conductivity of a starch suspension increased. The viscosity was proportional to the degree of substitution at a constant shear rate and the swelling power was sharply increased around the gelatinization temperature region.
When a cationic starch was added to the paper making process in the final concentration of 1% based on the weight of dry pulp, fine retention rate and freeness were increased with the increase of the degree of substitution and the tensile index and Scott internal bond were also increased.
