본 연구대상은 서울시에 소재하면서 종일반을 운영하고 있는 사립유치 원 52개소와 그 기관의 종일반 유아들의 어머니 192명을 연구대상으로 하였다. 또한 유치원 종일반 유아의 간식 및 점심급식의 섭취량을 알아보기 위해서는 간식 및 점심급식 식품을 정량으로 제공받고 있는 63명의 유아를 대상으로 하였다.

1. 간식급식 실태는 간식의 실시횟수에 따라 오후 1회만 실시하는 유치원이 57.7%였고 오전·오후 2회를 실시하는 유치원은 38.5%였다. 오후간식만 실시하는 경우 그 이유의 80.0%가 점심급식에 지장을 주기 때문인 것으로 나타났다.
간식시간은 오전간식이 10:00-11:00 사이에 60.0%가 실시하고 있었으며 개별간식도 25.0%가 실시하고 있었다. 오후간식시간은 3:30-4:30 사이에 83.4%의 유치원이 실시하고 있었다. 간식의 1인 1회비용은 200원에서 800원까지로 그 범위가 넓었으며 오전간식의 비용이 오후간식비용의 절반정도였다. 간식의 준비방법에서는 오전간식은 55.0%가 구입간식으로만 준비하고 있었고, 오후간식은 조리·구입간식을 겸해서 준비하였다. 간식분량은 오전, 오후간식에 일정 분량만큼 주는 곳이 70.0%, 45.0%였고, 먹고 싶은 만큼 주는 경우도 30.0%, 55.0%로 나타났다.
2. 점심급식 실태는 점심급식의 준비방법으로 88.5%가 밥과 반찬 모두를 유치원에서 준비하였다. 점심급식 분량은 먹고 싶은 만큼 준다가 51.0%였다. 점심급식의 1인 1회비용은 1200원-1400원이 48.1%로 가장 많았다. 점심급식 장소는 대부분 교실로 나타났고, 취사시설은 조리실만 있는 곳이 69.2%였고 조리실과 식당을 같이 완비하고 있는 유치원은 25.0% 였다.
3. 식단작성관리로 식단작성자는 원장(57.7%)이나 교사(11.6%)등에 의해 작성되는 곳이 많았고, 영앙사에 의해 작성되는 곳은 13.4%였다. 식단작성시 참고자료는 77.6%가 영양관련 책자를 이용하였고 식단작성주기는 1개월이 가장 많았다. 식단작성시 우선적으로 고려하는 사항은 식품의 영양가였다.
4. 간식 및 점심급식에 대한 교사의 이해 정도로 간식이 필요한 이유는 영양보충이 가장 많았다. 점심급식을 하는 목적은 바람직한 식습관 형성이 65.4%였고 영양개선 및 건강증진이 25.0%였다. 간식 및 점심급식 운영시 가장 어려운점은 영양가 확인의 곤란이 57.7%였다. 점심의 맛과 질 제고를 위한 방안은 신선한 재료 사용이 42.3%였고, 전문 조리인력 확보 가 34.6%였다. 간식 및 점심급식의 개선방향은 영양이 고른 식단제공이 71.2%였다.
5. 간식 및 점심급식의 영양소 제공량 및 섭취량을 살펴본 결과, 간식 및 점심급식의 영양소 제공현황에서 간식의 제공량은 열량이 적당한 반면, 단백질, 칼슘, 인, 칠분, 비타민 A, 비타민 B_1, 비타민 B_2, 비타민 C는 과다 제공한 것으로 나타났다. 점심의 제공량을 보면 열량, 철분은 적당 한데 칼슘, 비타민 B_2는 부족하게 제공되었고 단백질, 인, 비타민 A, 비타 민 B_1, 비타민 C는 과다 제공된 것으로 나타났다.
간식 및 점심급식의 영양소 섭취현황으로 간식의 섭취량은 열량, 철분, 비타민 A가 적당한데 비해 비타민 C는 부족하게 섭취되었으며 단백질, 칼슘, 인, 비타민 B_1, 비타민 B_2는 과다 섭취된 것으로 나타났다. 점심의 섭취량은 열량, 철분은 적당한 반면, 칼슘, 비타민 B_2는 부족한 것으로 나타났고 단백질, 인, 비타민 A, 비타민 B_1, 비타민 C는 과다 섭취된 것으로 나타났다.
6. 유아의 가정에서의 영양과 관련한 생활실태로 유아의 건강상태는 대체로 양호하였다. 유아의 기상시간은 65.6%가 오전 7시~8시 사이였고 오전 7시 이전에 기상하는 유아도 9.4%가 있었다. 유아의 취침시간은 오후 9시~10시 사이에 취침하는 경우가 45.8%였고 10시 이후에 자는 경우 도 42.2%로 매우 높았다.
아침식사 유무는 매일 규칙적으로 하는 유아가 50.0%로 절반에 불과했다. 아침식사를 불규칙하게 하는 유아가 다니는 유치원의 경우, 오전간식 여부와 간식시간은 96명의 유아가 다니는 유치원 중 69.8%는 오전간식이 없었고 오전간식을 하는 유아는 30.2%였다. 간식시간은 등원하자마자가 10.4%, 개별간식이 31.0%, 10:00~11:00 사이에 58.6%로 나타났다.
불규칙한 아침식사 이유는 유아가 먹으려 하지 않기 때문이 33.3%였고 유아의 기상시간이 늦기 때문인 경우가 29.2%, 부모가 바빠 식사준비를 못해 주는 경우도 22.9%였다. 아침식사 내용은 밥과 국 위주의 식사를 하는 것으로 나타났다. 종일반에서 자녀��저녁식사 제공여부에 대해 희망하는 경우는 29.2%였지만 35.7%가 퇴근이 늦기 때문이었고 저녁식사 비용추가 여부도 92.9%가 원했다.
유아의 등원시간은 오전 8시~9시 사이에 70.0%였고 귀가시간은 오후 6시~7시 사이에 가장 많은 46.4%였다. 맞벌이의 경우, 71.4%의 유아가 돌보아줄 보호자가 없는 것으로 나타났고 유치원 종일반의 선택 이유는 88.5%가 어머니가 직업이 있기 때문인 것으로 나타났다.

2. How are lunches served in all day kindergartens?
3. How is the menu made in all day kindergartens?
4. How do teachers understand the supply of snacks and lunch in all day kindergartens?
5. Is the supply of snacks and lunch good as compared with children's daily nutrition and the recommended dietary allowances for children in all day kindergartens?
6. How are children's habitual lives connected with nutritions in home?
The subjects in this study are 52 private all day kindergartens in Seoul and 192 children's mothers from those kindergartens. And 63 children who are served with the standard portion amount of snacks and lunch are included for investigating the nutrient intake of children's snacks and lunch in all day kindergartens.
The questionnaire was used for investigating food service management of snacks and lunch in all day kindergartens. Food service management of snacks and lunch and nutrient intakes of children were compared with the recommended dietary allowances for Koreans.
The selected materials of this study were calculated with frequency and percentage, CAN-Pro program was used for analyzing the contents of nutrient and SPSS/PC' was used.
The results are as follows;
1. 57.7% of kindergartens served snacks once in the afternoon and 38.5% of kindergartens twice(the morning snacks and the afternoon snacks). In the case of serving snacks in the afternoon, they served snacks only in the afternoon because it influences lunch negatively(80.0%).
With regard to the time of lunch, in 60.0% of kindergartens children eat snacks between 10:00am and 11:00am and in 25.0% of kindergartens the individual snack time was also practiced. And afternoon snacks were served between 3:30pm and 4:30pm in 83.4% of kindergartens. The cost of snacks a person ranged widely 200won to 800won and the cost of snacks in the afternoon is as twice as that of snacks before noon. Regarding the method of preparing snacks, 55.0 % of the morning snacks was just bought and afternoon snacks were prepared in the way of both buying and cooking. With regard to the amount of snacks, the standard amount was given in both the morning(70.0%) and afternoon snacks.(45.0%) But some kindergartens served the morning snacks(30.0%)and the afternoon snacks(55.0%) as children please.
2. 88.5% of kindergartens prepared steamed rice and side dishes for itself for lunch. 51.0% of kindergartens served lunch as children please. The cost of lunch a person ranged 1,200won to 1,400won(48.1%). Most of children eat lunch in the classroom. 69.2% of kindergartens had only kitchen and only 25.0% of kindergartens furnished kitchen and dining room.
3. A president(57.7%) or a teacher(11.6%) decided the contents of snacks and a dietician made a menu in only 13.4% of kindergartens. When deciding the menu, they referred to books on nutrition(77.6%) and nutrient was most regarded. And most of kindergartens made a menu once a month.
4. Most teachers thought that snacks should be served for nutrition supplement. Of the purposes of the lunch, making desirable meal habit is 65.4% and improving nutritions and advancing health is 25.0%. The most difficulty in food service management of snacks and lunch is that to certify the nutritive value(57.7%). For the ways of developing the taste and quality of lunch, fresh ingredients should be used(42.3%), special cook personnel be necessary(34.6%), and menu be served well in terms of nutritions(71.2%).
5. With regard to food service management of snacks, calories were suitable but protein, calcium, phosphorus, iron, vitamin A, B₁, B₂, and C were oversupplied. Regarding food service management of lunch, calories and iron were suitable, calcium, and vitamin B₂ were insufficient and protein, phosphorus, vitamin A, B₁, and C were oversupplied.
With regard to nutrient intakes from the snacks, calories, iron and vitamin A were ingested suitably, vitamin C was ingested insufficiently and protein, calcium, phosphorus, vitamin B₁, B₂ were over-ingested. With regard to nutrient intakes from lunch, calories and iron were ingested suitably, calcium and vitamin B were ingested insufficiently. But protein, phosphorus, vitamin A, B₁, and C were over-ingested.
6. Children's health state was generally good in home. 65.6% of children get up between 7:00 am and 8:00 am and 9.4% of children do before 7:00 am. 45.8% of children go to bed between 9:00pm and 10:00 pm and 42.2% of children do after 10:00pm.
With regard to breakfast, only 50.0% of children have breakfast regularly, In the case of kindergartens which children who don't have breakfast regularly go to, 69.8% of 96 children don't have snacks before noon and only 30.2% of children have snacks before noon. And 10.4% of children have snacks as soon as they come to the kindergarten, 31.0% of children have snacks individually, and 58.6% of children have snacks between 10:00 and 11:00.
Children don't have breakfast because they are not willing to have it(33.3%). The reasons arc followed; children get up late(29.2%), or parents are so busy that they can't prepare breakfast for children(22.9%). The contents of breakfast were mainly steamed rice and soup, 29.2% of parents want kindergartens to supply supper because 35.7% of them come back home late and 92.9% of them want to pay more for supper.
Children go to the kindergarten between 8:00 am and 9:00 am(70.0%) and come home between 6:00pm and 7:00 pm(46.4%). In case that both of parents work, there was no one who cares children(71.4%). Therefore it appears that parents choose the all-day kindergarten because mother of children has to work(88.5%).
