The objective of this study was to investigate the effects of freezing rate on ice crystal size and aroma retention and to examine the mechanism of aroma retention. Freezing conditions have a strong influence on the quality of the final freeze-dried products in freeze-drying system. Our experiments were carried out with self-manufactured freeze-dryer. 2% gelatin gels (Φ80×20mm) containing diacetyl(2mg/ml) were frozen unidirectionally (Neumann's model) from the bottom at -15, -20, -30, -45℃ and followed with freeze-drying. Under tile upper conditions we measured freezing rate and the change of temperature and pressure during freeze drying. Freeze-dried gelatins were cut horizontally into 5mm thick from the bottom and measured their pore sizes and diacetyl contents. And we observed the effect of the relative humidity on the diacetyl contents freeze-dried gelatin during storage. The results obtained are summarized as follows; 1. During freeze-drying, profiles of pressure and temperature were shown constant tendency regardless of freezing temperature and we could expect the end-point of freeze drying by considering pressure and temperature together. 2. In temperature profiles, tile point which temperature increase significantly was observed duirng freeze-drying. We thought the point was the end-point of sublimation(primary drying). We considered that the results were caused by heat conductivity difference of frozen and dried parts. As freezing temperature was decreased, drying rate of primary drying was increased. 3. As freezing temperature increase, ice crystal size(X^(*)) which correspond ta 63.2% of cumulative frequency was increased and at the same freezing temperature ice crystal size(X^(*)) was decreased as distance from tile bottom of the sample becomes further. 4. The retained diacetyl content was increased at high freezing temperature and in order of 0-5, 15-20, 5-10, 10-l5mm section from the bottom of tile sample. Because the retained diacetyl content was very high in 19-20mm section from the sample bottom, the retained diacetyl content was high in 15-20mm section. 5. The retained diacetyl content and freeze-dried gelatin stored in the condition of high relative humidity was decreased significantly but in the low relative humidity case, was it decreased in small amount. 6. The results of our experiment presents that the low temperature freezing and low humid storing condition is effective for preserving aroma compound in food.
