본 연구에서는 채식중심 급식을 하는 학교의 식단 및 급식서비스를 분석하기 위하여 식단 수집 및 설문조사를 실시하였다. 표집대상은 전국 채식 중심 급식을 하는 8개 중 · 고등학교 중 서울, 경기, 강원, 충남지역 4개 학교이며 기호도 조사 655명, 급식서비스 조사 640명 이었다. 식단은 2003년 5월 19일부터 24일까지 제공된 식단과 1인분량으로 제공되는 식단의 recipe를 수집하였으며 점심시간에 배식 되는 1인분량을 측정하였다. 수집된 식단의 영양평가에는 학교급식에서 사용하는 auto-cook program을 이용하여 영양소 함량을 구하였고 제 7차 한국인의 영양권장량 중 16∼19세 남학생의 1일 권장량의 1/3에 대한 비율로 기준을 정하였다. 본 설문지는 1부 조사대상 학생의 일반사항과 학교급식 메뉴에 대한 기호도 2개 부분으로 구성하였으며, 2부 조사대상 학생의 일반사항, 식생활행동, 급식서비스 만족도, 급식서비스 인식도, 잔반평가 등 5개 부분으로 구성되었으며 조사결과는 다음과 같다. 1, 식단의 분석결과 어 · 육류는 전혀 사용하지 않고 있는 것으로 조사되었으며, 대용식품으로 콩 가공식품(베지버거, 베지미트, 콩치킨, 콩햄, 밀고기 등)을 사용하고 있는 것으로 나타났다. 주식은 잡곡밥, 현미밥을 제공하고 국은 맑은 국과 된장국을 다양하게 제공하고 있는 것으로 조사되었다. 열량은 권장량의 123.8%를 제공하고 있었으며, 단백질도 4개 학교 모두 권장량을 상회하였으며, 평균 136.5%를 제공하고 있는 것으로 조사되었다. 칼슘의 경우 3개 학교는 권장량에 미달하였으며, D학교만 336.72㎎(112.2%)으로 권장량을 상회하는 것으로 조사되었으며 평균 제공량은 287.34㎎(95.8%)으로 나타났다. 철분(188.6%), 인(120.6%), 비타민 A(145.4%), 비타민 B_1(166.5%), 비타민 B_(2) (294.8%), Niacin(155.8%), 비타민 C(318.8%)를 제공하고 있었으며 칼슘을 제외한 영양소들은 권장량을 모두 상회하는 결과를 나타내었다. 2. 조사대상 학생들의 기호도를 보면 밥 종류에서 쌀밥(4.13)을 가장 선호하였으며 팥밥(2.70)을 가장 싫어하는 것으로 조사되었다. 국 및 찌개에서는 김치찌개(4.37)의 기호도가 가장 높게 나타났으며 배추국의 기호도가 가장 낮게 나타났다. 김치에서는 배추김치(4.09)를, 튀김에서는 고구마튀김(4.20)을, 볶음에서는 김치볶음(4.30), 부침에서는 김구이(4.10), 계란후라이(4.10)의 기호도가 가장 높은 것으로 조사되었다. 조림에서는 메추리알조림(4.26)을 가장 좋아하는 것으로 나타났으며, 찐고구마(4.10), 도토리묵무침(3.45), 콩나물 무침(3.57), 냉면(4.30)을 좋아하는 것으로 조사되었으며, 일품요리의 기호도가 가장 높게 나타났으며, 무침류의 기호도가 가장 낮은 것으로 조사되었다. 또한 동일한 조리법 중에서도 채소류가 주재료인 음식에 대한 기호도가 낮은 것으로 나타나 학생들의 기호도를 반영한 조리법 개발과 식단의 작성이 필요하며 채소류에 대한 영양교육과 편식에 대한 지도가 필요할 것으로 판단된다. 3. 조사대상 학생들은 대부분 규칙적인 식습관(64.2%)을 가지고 있었고 아침식사를 매일 하는 학생은 47.2%로 조사되었다. 아침식사를 결식하는 학생이 54.8%로 가장 많으며 결식이유는 '시간부족'(43.4%)이 가장 많은 것으로 나타났다. 아침 결식은 간식과 잔반으로 나타나게 되므로 학생들이 규칙적인 식습관을 형성할 수 있도록 가정과 학교에서의 지도가 필요한 것으로 사료된다. 69.7%의 학생이 간식을 하는 것으로 조사되었고, 담백한 맛(36.4%), 한식(41.6%)을 가장 좋아한다고 응답하였다. 철저한 채식을 하는 학생은 4.2%에 불과한 것으로 조사되었고, 급식을 하는 이유는 '도시락이 번거로워서'(38.0%)가 가장 많은 것으로 나타났으며, 채식중심 식단에 대한 만족도는 보통이다(35.6%)가 가장 많은 것으로 조사되었다. 4. 조사대상 학생들의 급식서비스 인식도 조사결과 신뢰성 영역(2.93)의 인식도가 가장 높게 조사되었으며, 확신성(2.53)의 인식도가 가장 낮은 것으로 나타났다. 성별에서는 남학생(2.84)이 여학생(2.66) 보다 인식도가 높은 것으로 나타났으며, 음식의 품질영역을 제외한 모든 영역에서 유의한 차이를 보였다. 중학생(2.90)이 고등학생(2.79) 보다 인식도가 높은 것으로 조사되었으며 종교에서는 제칠일 안식일 예수 재림교(2.79)가 기타종교(2.67) 보다 높은 인식도를 나타내었으며 품질성, 유형성, 확신성 영역에서 유의찬 차이가 있는 것으로 조사되었다. 5. 급식서비스 만족도에서도 남학생(2.82)이 여학생(2.67) 보다, 중학생(2.94)이 고등학생(2.62) 보다 만족도가 높은 것으로 조사되었다. 규칙적인 식사를 하는 집단(2.94)이 그렇지 않은 집단(2.51) 보다 만족도가 높게 나타났으며, 간식을 안 하는 집단(2.81)이 간식을 하는 집단(2.55) 보다 급식서비스 만족도가 높은 것으로 조사되었다. 채식을 하는 집단(2.88)이 육식을 하는 집단(2.68) 보다 만족도가 높은 것으로 나타났으며 위생과 확신성 영역을 제외한 모든 영역에서 유의한 차이가 있는 것으로 조사되었다. 학교 식습관에서 음식을 남기지 않을수록, 채식중심 식단에 대한 만족도가 높을수록 급식서비스 만족도가 높은 것으로 나타났다. 6. 잔반 평가에서는 남학생(4.15)이 여학생(3.97) 보다 잔반을 적게 남기는 것으로 나타났으며, 중 · 고, 신장, 체중, BMI, 급식기간, 모직장 여부에서는 모든 영역에서 유의한 차이가 나타나지 않는 것으로 조사되었다. 규칙적인 식사를 하는 집단(4.14)이 그렇지 않은 집단(3.82) 보다 잔반량이 적으며, 간식을 안 하는 집단(4.29)이 간식을 하는 집단(3.91) 보다 잔반량이 적은 것으로 조사되었다. 학생들의 건강 증진을 위함과 급식비용 손실을 줄이고 환경오염의 방지를 위해서 간식을 안하고 규칙적인 식사를 할 수 있도록 교육하고 지도하는 것이 반드시 필요하다고 사료된다. 잔반 이유는 '맛이 없어서'라는 응답이 가장 많은 것으로 나타났으며 밥은 '양이 많아서', 국 및 주찬 반찬은 '좋아하지 않는 음식이라서'라는 응답이 많은 것으로 조사되었다. 배식시에 1인 분량에 맞게 배식하고 학생들의 기호를 반영하여 메뉴를 개선하고 잔반에 대한 교육을 실시한다면 잔반량의 감소효과가 있을 것으로 생각되어진다.

This study intends to examine vegetable-centered menus and the quality of the school foodservice through analyses of a survey and collected samples of menus. The data were compiled from four schools in Seoul, Kyonggi, Kangwon and Chung-nam areas out of the eight nationwide middle and high schools that most often serve vegetable menus. There were 655 respondents to the survey of menu preferences, and 640 to that of the quality of the school food service. The recipes for the menus provided in one-servings from May 19 through May 24, 2003 and the information regarding the size of one serving were collected and analyzed. For the nutritional evaluation of the collected menus, the nutritional values were calculated based on the auto-cook program of the school foodservice. The criterion for the nutritional evaluation was 1/3 of the 7th recommended dietary allowances for Korean boys between the ages of 16 and 19. The survey consisted of two parts. Part 1 was again divided into two subparts including the general characteristics of recipients and menu preferences. Part 2 was made up of 5 subparts including general information of the respondent-students, their dietary habits, the degrees of their satisfaction and preception with school foodservice quality and the types of leftovers. The findings are as follows. 1. According to the results, no fish or meats of any kind were ever provided, and instead, as an alternative, bean or legume-processed foods, such as vegeburgers, vegemeat, bean-chicken, bean-ham, wheat-meat, were served. Mixed-grain rice or brown rice was served as the staple accompanied by various kinds of soup, for example, clear soup, bean paste soup, etc. This menu took up about 123.8% of the recommended daily calorie intake, with the protein exceeding the recommended daily value - about 136.5% to be more specific- at all of the four school. In case of Calcium, three schools failed to provide the recommended dietary allowances with the average of 287.34㎎(95.8%). The fourth school, the only exception, exceeded the recommended value with 336.72㎎(112.2%). The findings indicate that the menus of these schools contained Iron(188.6%), Phosphorous(120.6%), Vitamin A(145.4%), Vitamin B_(1)(166.5%), Vitamin B_(2)(294.8%), Niacin(155.8%), and Vitamin C(318.8%). It can be concluded that all types of nutrients with the exception of Calcium were provided in sufficient amounts. 2. According to the results of the menu preference survey, the largest number of students preferred white rice (4.13) over any other kind of grain staple, and the smallest number of students chose rice with red beans (2.70) as their favorite. In case of soups or stews, their number one choice was Kimchi stew (4.37), and at the bottom of the list of their choices was Baechu (Chinese cabbage) soup. For the preferred kind of Kimchi, they chose Baechu Kimchi (4.09). Among different kinds of deep fried menus, their favorite was deep fried sweet potatoes (4.20). Among pan-fried dishes and variously fried dishes, they most preferred pan-fried Kimchi (4.30), laver (4.10) and fried eggs(4.10) respectively. When it came to their most favorite boiled dish, it was boiled quail eggs(4.26). Their other favorite menus were steamed sweet potatoes (4.10), seasoned acorn jelly (3.45), seasoned bean sprouts (3.57) and Nengmyeon (cold noodles) (4.30). The results demonstrated a very high degree of preference for one-dish menus and a very low one for seasoned dishes. Furthermore, it was shown that among dishes with similar recipes, dishes of which the main ingredients were vegetables were not found to be very much to the liking of the surveyed students. Therefore, the development of new recipes which reflect the preferences of students as well as the instruction and guidance regarding nutritiousness of vegetables and unbalanced diet is called for. 3. Most of the respondents had regular eating habits (64.2%). 47.2% of them had breakfast every day. 54.8% skipped breakfast mostly due to a lack of time (43.4%). Skipping breakfast led to snacking and snacking, in turn, resulted in more leftovers from lunch. Thus, these students should be given guidance so as to help them form regular eating habits. 69.7% of the students said that they snacked and they preferred bland-tasting (36.4%) and Korean dishes (41.6%). Only 4.2% of the respondents were strictly vegetarian. The most important reason for participating school lunch programs was the inconvenience of bring lunch to school (38.0%). As to the degree of the satisfaction with the vegetable-centered menus, the largest portion of the students responded that it was average (35.6%). 4. The findings from the survey that investigated the degree of the perception of the school foodservice are as follows. The highest degree of perception was found in the domain of reliance (2.93), while the lowest in the domain of assurance (2.53). There were gender differences, with the degree of the male students (2.84) significantly higher than that of the female students (2.66) in all of the domains except for that of the food quality. Middle school students (2.90) showed a higher degree of perception than high school students (2.79). Among various religious groups, the Seventh-day Adventists demonstrated a significantly higher degree of perception (2.79) than any other religious groups (2.67), especially in the domains of the quality, types, and assurance. 5. With regards to the degree of their satisfaction with the quality of the school foodservice, the male students (2.82) came up with a higher degree than the female students (2.67), and the middle school students (2.94) higher than the high school students (2.62). Those with regular eating habits (2.94) were more satisfied with the service than those with irregular eating habits (2.51), and those without snacking habits (2.81) were more content than those with such habits (2.55). The respondents who preferred vegetables over meats (2.88) demonstrated a higher degree of satisfaction than those who preferred meat dishes (2.68) in all of the domains except for those of sanitation and assurance. The results suggest that the less leftovers they left, and the more satisfied they were with the vegetarian menus, the more satisfied they were with the quality of the food service. 6. According to the results of the leftover analysis, a smaller number of male students (4.15) left less leftovers than female students (3.97). Regardless of the respondent being a middle or high school student, his/her weight and height, whether the respondent's mother had a job outside home, there were no significant differences in all of the domains. The respondents who had regular meals (4.14) left less leftovers than those who did not (3.82). Likewise, the students with no snacking habits (4.29) left less leftovers than those with snacking habits (3.91). The results point to the need for the instruction and guidance for students for the enhancement of their health, cost-efficiency of the food service, and the protection of the environment. The main reason for which the students left leftovers was that the provided dish did not suit their taste. In case of rice, the staple, they responded that one serving was more than enough for them. As to soups and main dishes, the largest number of students left leftovers because the served dishes or soups were not their favorite kinds. It can be concluded that the size of one serving should be readjusted and new menus should be developed to reflect the demands of students. In addition, the instruction on leftovers should be offered as a way to reduce leftovers.
