The possibility of utilization of Lentinus edodes as an ingredient of brown sauce was evaluated because Lentinus edodes has not been known to be for making sauce in spite of its excellent flavors, nutrients, and functional effects. The optimal amounts of Lentinus edodes and Agaricus bisporus added to same mother sauce were decided by a sensory evaluation. The differences of Lentinus edodes and Agaricus bisporus brown sauce manufactured in these conditions were evaluated based on physicochemical and sensory characteristics. The 20 g of Lentinus edodes and 15 g of Agaricus bisporus per 200 mL of mother sauce was selected as an optimized amount, respectively. Brown sauce manufactured in the optimized conditions were compared by analyzing the general food composition, the amount of Ca, and the contents of free amino acids. The moisture content of the mother sauce was decreased by adding the Lentinus edodes and Agaricus bisporus. The amount of crude proteins in the mother sauce was decreased by adding the Lentinus edodes and Agaricus bisporus, but there was no differences of the amount of crude proteins between them. However, the contents of crude fat, crude ash, and carbohydrate of brown sauce were increased feasibly by adding of mushrooms. The contents of Ca of mother sauce, Agaricus bisporus brown sauce, and Lentinus edodes brown sauce were 286.87 mg%, 426.22 mg%, and 474.71 mg%, respectively. The amount of total free amino acids was 1,259.46 mg% of Agaricus bisporus brown sauce, 738.72 mg% of Lentinus edodes brown sauce, and 604.04 mg% of mother sauce. Major free amino acids in all samples were glutamic acid, alanine, aspartic acid, and arginine. The amount of essential amino acids was 401.77 mg% of Agaricus bisporus brown sauce, 296.63 mg% of Lentinus edodes brown sauce, and 247.83 mg% of mother sauce. Major essential amino acids in all samples were arginine, valine, and phenylalanine. Amino acid derivatives was higher in order of Lentinus edodes brown sauce (644.55 mg%)>Agaricus bisporus brown sauce (595.87 mg%)>mother sauce (405.60 mg%). Major amino acid derivatives in mother sauce were ammonia>taurine>carnosine>γ-amino isobutyric acid>phospho serine. Major amino acid derivatives in Agaricus bisporus brown sauce were ammonia>taurine>carnosine>ornithine>γ-amino isobutyric acid. Major amino acid derivatives in Lentinus edodes brown sauce were sarcosine>ammonia>γ-amino isobutyric acid>phospho ethanolamine>carnosine>taurine. The viscosity of mother sauce, Agaricus bisporus brown sauce, and Lentinus edodes brown sauce were 463.33±12.47 cP, 1976.67±38.59 cP, and 2686.67±60.18 cP, respectively. This results showed higher increase of viscosity by adding mushroom. The L values in color characteristics of mother sauce, Agaricus bisporus brown sauce, and Lentinus edodes brown sauce were 25.20±1.93, 29.12±0.36, and 32.24±0.99, respectively. The value of a and b by adding mushrooms was greatly increased and the samples were dark brown compared to the mother sauce. The sensory characteristics of brown sauces added by the optimal amounts of Agaricus bisporus and Lentinus edodes were compared. The sensory score of color was not different both mushrooms, but those of flavor, taste, and viscosity of Lentinus edodes brown sauce were higher than those of Agaricus bisporus brown sauce. Also overall acceptability of Lentinus edodes brown sauce was superior than that of Agaricus bisporus brown sauce. Especially sensory evaluation score on the flavor of Lentinus edodes brown sauce (7.6±0.49) was recorded higher than that (5.1±0.83) of Agaricus bisporus brown sauce. The sensory characteristics of Lentinus edodes brown sauce made by adding 8, 12, 16 mL of red wine to 200 mL of mother sauce were evaluated. In flavor and viscosity, Lentinus edodes brown sauce added with 12 or 16 mL red wine was better than that added with 8 mL. However, the best acceptability on taste was 12 mL added sauce. Therefore, Lentinus edodes brown sauce with 12 mL of red wine was selected to be best. The viscosity of the mother sauce, Lentinus edodes brown sauce without wine, and Lentinus edodes brown sauce with red wine were 463.33±12.47 cP, 2,686.67±60.18 cP, and 1653.33±40.97 cP, respectively.
