In this study, bay salt and sodium chloride (NaCl) were parched at 300℃, 800℃ and 1400℃ for 3 hours, respectively, and used for investigating their antimicrobial effect on E. coli, Staphylococcus aureus, Salmonella Typhimurium, Enterobacter sakazakii, Bacillus cereus and Candida albicans as well as for analyzing physicochemical characteristics. The results are as followed:

The pH values of control NaCl solutions (2%, 3.5%, and 7%) ranged from 5.83 to 6.25, whereas the pH values of parched bay salt ranged from 9.39 to 9.75 with the alkali and showed no remarkable differences between parching temperatures nor salt concentrations. The salinity values of control NaCl solutions showed same values according to NaCl concentration whereas those of bay salt solutions were lower than their salt concentrations.
2. The values for electric resistance of bay salt solutions were higher than those of control NaCl solutions. The values for electric resistance decreased with parching temperature increased as well as salt concentration increased. In case of color change after salts were parched, the L-value increased with temperature increased; a- and b- values of control NaCl decreased with temperature increased whereas those of bay salt increased with temperature increased.

The control NaCl did not show different antimicrobial effects between parching temperature. The antimicrobial effect of the parched bay salts, however, ranked in the order in which they were parched at 800℃, 1400℃, and 300℃, respectively.
5. Tofu was soaked in 3.5% salt solution at 20℃, and then the pH change and the viable cell count of the solution were monitored. The pH values of the bay salt solution parched at 800℃ and 1400℃ decreased slowly compared to the pH changes of other salt solutions. There are no viable counts in tofu-soaked salt solutions parched at 800℃ and 1400℃ for 12 hr and the lower viable counts were maintained up to 24 hr.
