For this, the investigator measured the solid body contents, appropriate acidity, pH, and specific gravity of the extraction of brown rice Phellinus linteus mycelium by changing temperatures and solvents. Study findings are as follows: When temperature increases, the solid body contents in the extraction increase too. However, when the concentration of ethanol increases, the solid body contents decrease. Appropriate acidity increases with the increase of temperature and ethanol concentration. However, pH decreases with the increase of temperature and ethanol concentration. Specific gravity is not influenced by the changes of ethanol concentration, but it decreases with the increase of temperature. The content of β-glucan, namely the most important factor, is influenced not by the changes of temperature but by the changes of ethanol concentration. The content of β-glucan is optimal at the temperature of 60℃~80℃ and the ethanol concentration of 0~30%.
