The objectives of this study was performed in order to determine the appropriate contents of vinegar in onion and pepper pickles. Pickled onion and pepper were prepared with vinegar in content of 20%, 30%, 40% and stored at 20℃ for 30 days. Then pH, total acidity, changes of color, hardness, propionic acid content, total microorganism population and sensory test were evaluated. pH level of both samples was decreased, while total acidity was increased at the all treatments. There were changes of color during period of storage. The lightness was increased, yellowness and redness were decreased. The hardness of both samples was increased in initial stage of fermentation with increase of vinegar content, while the hardness of onion pickles was decreased after 20 days of fermentation. The hardness of pepper pickles was decreased after 10 days. In all treatments, propionic acid was not detected during fermentation. While less number of total microorganism population was observed with increase of vinegar content. So antibacterial of vinegar has proven. Overall acceptability of pickled onion in sensory evaluation was highly ranked as 7.3 point at the samples with content of 40% vinegar stored for 10days. Overall acceptability of pickled pepper was highly ranked as 7.0 point at the samples with content of 40% vinegar stored for 5 days. Pickled onion and pepper that prepared with 40% vinegar showed the best quality in terms of sensory and physicochemical properties.
