Experiments were performed on 50 healthy college students, 25 males and 25 females without any digestive malfunctions, regarding the relationship between the number of times they chewed during food consumption and their corresponding total mealtime, rate of eating, intake volume, and their change in hunger and satiety rate. Based on the collected data, this research offers a method for improving eating behavior for those that are obsess by establishing a relationship between chewing frequency and weight control. First, 25 males and 25 females were provided with abundant amount of “Fried rice” and allowed to consume at their own pace. Then, chewing frequency, amount of one bite, total mealtimes, rate of eating, total intake and calories were measured as well as analyzed between the gender. The females had significantly higher chewing frequency than males (p<0.001). Males had larger amount of one bite compared to females (p<0.001). Males also had shorter mealtime compared to females (p<0.05). And males had a significantly faster rate of eating compared to females (p<0.001). Males also had about twice the total intake and calorie compared to females (619.2 g, 1342.4 kcal vs 315.3 g, 683.6 kcal), and this founding was statistically significant as well (p<0.001). Furthermore, upon setting body mass index of 23kg/m3 as a standard, the group was divided between “obese” and “non-obese”, and their data were analyzed. The non-obese had more chewing frequency than the obese. The obese had significantly bigger amount of one bite than the non-obese (p<0.05), and the obese also had shorter mealtime compared to the non-obese (p<0.01), and the obese had faster rate of eating than the non-obese as well (p<0.01). As for total intake and calorie, those of the obese were significantly more than those of the non-obese (1213.6 kcal vs 927.0 kcal, p<0.01). Males tended to chew less, consume faster, consume in larger amount of one bite and consume more than females. And the same relationship held true between the obese and non-obese. Secondly, the group was made to alter their chew count to examine its effect on the change in food consumption, rate of eating and satiety rate. The group's data were compared between when they chewed at their own pace to when they chewed more than twice as many times. When they chewed twice the number of times as their norm, their total intake and calorie, became significantly reduced than when their usual chewing frequency (1009.6 kcal vs 778.9 kcal, p<0.001). And spooning up frequency became reduced from 22.9 to 15.7 (p<0.001). Also, their total mealtimes significantly increased from 19.4 minutes to 24.5 minutes (p<0.001). Their eating rate also significantly decreased from 26.1 g/min to 16.2 g/min (p<0.001). Yet eve as total intake decreased as the number of chews increased, there was no statistically significant change in the hunger and satiety rate. These results can be explained as the degree of satiety not necessarily correlating with intake volume, while chewing for an extended time does in fact correlate with higher satiety rate. This research concludes that chewing for an extended time helps suppress appetite and increases the satiety rate, resulting in a reduction in to food consumption. The repetition of chewing numerous times over an extended period of time every meal provides means to increasing satiety rate and reducing food consumption, thereby improving eating behavior for those that are obese and help them with their weight control.
