It took approximately one day for the imitation cheese to dry. At that time moisture contents were 40.27%. 3. Lactose contents were decreased rapidly from 24.64% to 5.43% after 4 weeks, when the cheese ripened at 12℃, 95% R.H with P. camemberti. 4. Noncasein nitrogen and nonprotein nitrogen were increased from 28.10 mg/ml to 50.61 mg/ml and from 6.58 mg/ml to 21.59 mg/ml, respectively after 4 weeks, when the cheese ripened at 12℃ with vacuum packing. 5.
