This study was intended to examine systematically and deepen the understanding about the Korean medicinal cuisine which is one stream of the Korean traditional food culture in the middle of globalization of social and food culture, by reviewing the existing literatures related to the traditional oriental herb medicine and its recipes. Furthermore, this research was purposed to play a pivotal role in making sure that the positions of Korean medicinal cuisine culture is more hard and steady in the world food cultures as well as a tool for the consumer-oriented menu developments. To accomplish the research objectives mentioned above, the previous researches were reviewed to warrant the validity of the study. The major contents of the literature review are as follows. First, the Korean traditional foods and its food culture were dealt with briefly. Second, the status quo of the menu of the traditional foods and its consumption was reviewed. Based on the reviewes focusing on the importance of attributes of the menus of medicinal dishes, the specific research objectives were established. The primary objectives of the study are: first, to analyze the differences in the criteria of the menu selection behavior for Korean traditional medicinal cuisines according to the demographic variables of the consumers; second, to examine the dissimilarities in the importances attached to attributes of individual medicinal dishes according to the demographics; third, to identify the existence of discrepancies in the menu selection criteria among the different consumer clusters according to their lifestyles. The survey of structured questionnaire method was employed for the data collection for empirical analyses. 195 male and female consumers living in Daegu City and Gyeongbuk Province used as the research samples. The samples were judged to be representative of the general consumer profiles of the entire region, to some degree. The analysis results show as follows. First, AHP(Analytical Hierarchy Process) method was used to investigate the decision making behaviors of the respondents with regard to the menu preferences of the Korean traditional medicinal cuisine, and the differences in the importances attached to each Korean traditional medicinal dishes was tested. The test results reveal that the gender turned out to be the significant predictor of the selections of the medicinal dishes. Other demographic variables such as age, marital status, and number of children were appeared to be not a significant variables affecting the importance of the medicinal foods, although some degree of differences in the mean values was detected in the subgroups of these factors. In conclusion, the demographic variables could be important factors that imply the existence of difference in the importance of the medicinal dishes, perceived by the consumers. Second, the evaluation of major attributes of the dishes through the use of the conjoint analysis method indicates that respondents think much of the food materials used to do the cooking rather than the recipes used, and the importance attached to the food material versus the recipe differed in terms of the demographic factors. This analysis result implicates that the consideration of which food materials should be used be made in developing the Korean traditional medicinal cuisine to be more consumer-oriented menu. Third, although no significant difference was discovered in the importance given to the factors of menu selection among the consumer clusters based on their lifestyle, such as safety cluster, well-being cluster, gourmet cluster and down-to-earth cluster, the post-hoc test results revealed that demographics could be one of major factors influencing on the menu selection behaviors in that difference in some mean value was detected in each subgroups.
