It was also measured physicochemical properties and nutritional changes of bioactive components during heating process, and the amounts of amino acids in pumpkin seed oil pomace for possible use of animal feed. The experimental groups were divided into four; oil extraction without roasting (CON), oil extraction after roasting at 120℃ (R120), at 150℃ (R150), and at 180℃ (R180). Bioacive components of pumpkin seed were 83.94% for polyunsaturated fatty acids, consisting mainly of oleic acid (32.73%) and linoleic acid (37.72%). α-tocopherol, γ-tocopherol and β-sitosterol were 2.33, 11.96, and 21.25 ㎎/100 g pumpkin seed, respectively. Extraction rate of R150 group was shown the highest value of 73.28%. When heated for pumpkin seed oil extraction, the higher the heating temperature, the more the γ-tocopherol contents, the less the contents of α-tocopherol and β-sitosterol. Especially, γ-tocopherol was the highest in R150 (11.72 ㎎/100 g pumpkin seed oil). On the other hand, acid value and viscosity were increased and iodine value decreased as the heating temperature increased. Saturated fatty acid was increased while unsaturated fatty acid was decreased, and α-tocopherol, γ-tocopherol, β-sitosterol tended to decrease during heating process. In pumpkin seed oil pomace, methionine and lysine were the lowest in the CON group, and the highest in R180 (p<0.05). In conclusion, pumpkin seeds were rich in bioacive components, and recovery rate was the highest in 150℃ roasting for pumpkin seed oil extraction. The best possible pumpkin seed oil might be produced by heating at 150℃ without much changes of bioacive components.
