This study analyzed the flavor components, which are related to actual scent and taste by two different groups; freeze dehydrated fig and wet fig. Those compounds were composed of acid (17) alcohol (18) aldehyde (7) aromatic (9) ester (40) hydrocarbon (10) ketone (10) overall 118 species were detected in the freeze dehydrated fig. Those compounds were composed of acid (14) alcohol (15) aldehyde (23) aromatic (7) ester (10) hydrocarbons (33) ketone (11) terpene (5) and 5 other species of compounds; overall 123 species were detected in a wet fig. In case of the freeze dehydrated fig, most of the acids were detected when it was at stage 3 and decreased. But hexadecanoic acid increased gradually as it was getting more ripe. Most of the wet figs decreased and increased a little when they were ripened completely. However hexadecanoic acid decreased continuously as it was getting more ripen.
