The purpose of this study was to develop a method predicting the oxidation time in deep-fat fried foods using the ratios of fatty acid profiles. The usefulness of the developed method was evaluated through conjugated dienoic acid (CDA) and p-anisidine value(p-AV) methods. Corn oil, olive oil, palm oil, and "L" company oil were heated at 180℃ for 5 hour and fatty acid profiles, conjugated dienoic acid (CDA) value, and p-anisidine value(p-AV) were analyzed in every hour. Relative percentage of saturated fatty acids(SFAs) increased and those of unsaturated fatty acids(USFs) decreased significantly (p<0.05). As heating time increased, contents of oleic acid, linoleic acid, linolenic acid, and total unsaturated fatty acids decreased while CDA and p-AV increased significantly (p0.05). As heating time increased, the ratio of STAs and USFs increased and showed relatively good linearity. Contents of trans fatty acids increased during thermal oxidation. CDA and p-AV also showed linear changes. Fried samples using corn oil, olive oil, palm oil, and "L" company oil were analyzed for the fatty acid composition, CDA, and p-AV to predict the frying time. The ratio of fatty acids like UFA/SFA predicted accurately more than CDA and p-AV. The ratio of fatty acids can be used as an indicator to predict the oxidation time of fried foods. However, fats and oils from foods may interfere the usefulness of this method using the ratios of fatty acids.
