Though sturgeon that has been present since the Cretaceous, which people call a living fossil, is endangered, about four species of sturgeon have been cultivated in our country, and we are making efforts to examine its nutrients and demonstrate its value so that it can be used in various fields. For this, we first analyzed its proximate composition, minerals, vitamins, fatty acid composition, amino acid composition, functional materials, and investigated their properties. First, the results show that protein content as a proximate component is highest among sturgeon's nutrients, which accounts for 20.53% per edible portion of 100g, while total lipid accounts for 8.45%, and total ash content 1.42%. Minerals were K 351, P 285, Na 63, Mg 47, and Ca 18mg/100g, The content of selenium was 16.7mg/100g, which is not found in fish and food resources. Selenium as anticancermineral has been reported to have beneficial effects on cardiovascular disease, cancer, immune system, and spermatogenesis. Among vitamins per edible portion of 100g, A, and E contents were higher, and niacin, folate, vitamin B₁₂appeared a relatively high. The content of unsaturated fatty acids in the fatty acids per edible portion of 100g appeared about six times higher than that of saturated fatty acids. While saturated fatty acids are high in the contents of palmitic acid, unsaturated fatty acids are high in the content of stearic acid and ω-3 fatty acid. These ω-3 fatty acid have a positive effect on cardiovascular disease by decreasing blood cholesterol levels and have been reported to have high value as nutrition of brain and retina. Sturgeon contains high level essential amino acids in the protein, especially lysin contents was highest as 1.93mg in the essential amino acids. However, other components of sturgeon, such as betaine, phytosterol, caffeine, theobromine, carotenoid, and lutein were not detected. Consequently sturgeon's excellent nutrients proven through this research can be used to develop health-oriented processed food with a high added value. we developed beverage-type food and health functional food using sturgeon and medicinal herbs
