S. cerevisiae Sa59 변이주를 진탕배양 한 경우 단위부피당 glutathione 함유량(60.0 mg/L)은 정치배양(34.5 mg/L)의 경우보다 약 70% 증가하였다. 포도당 첨가량에 따른 glutathione 함유량은 포도당 농도를 1∼5% 까지 변화시켰을 때 농도 증가에 따라 glutathione 함유량이 감소하였다. 이러한 결과는 포도당 첨가 시 생성된 에탄올이 glutathione 생성을 억제하는 것으로 생각된다. 그러나 배양초기 에탄올을 1% 첨가하였을 때 glutathione 함유량은 71.7 mg/L로 약 20% 증가하였으며, 2% 이상 첨가한 경우에는 첨가량의 증가에 따라 glutathione 함유량과 항산화활성이 점차 감소되는 경향을 보였다. Glutathione의 전구체 아미노산인 glutamate, cysteine, glycine을 각각 0.04% 첨가하였을 때 단위균체량당 glutathione 함유량은 26.3 mg/g으로 아미노산을 첨가하지 않았을 때보다 약 66% 증가하였으며, 단위부피당 glutathione 함유량은 69.6 mg/L로 약 16% 증가하였다. 세 종류의 아미노산 중 cysteine을 단독으로 0.04% 첨가하였을 때 단위균체량당 glutathione 함유량은 18.3 mg/g으로 무첨가군에 비행 약 16% 증가하였으며, 단위부피당 glutathione 함유량은 84.4 mg/L로 약 41% 증가하였다.

We had selected S. cerevisiae CY strain in the laboratory as the wild type to perform the strain mutation, and total 61 mutant strains were selected. The distribution of glutathione contents of the selected mutant strains were investigated and as a result, the specific glutathione contents were 8.9∼15.8 mg/g and the volumetric glutathione contents were 23.8∼60.0 mg/L. Out of them, the S. cerevisiae Sa59 mutant, showed the best result with the specific glutathione content of 15.8 mg/g and the volumetric glutathione content of 60.0 mg/L. When compared to the wild type strain(S. cerevisiae CY), the specific glutathione content of the S. cerevisiae Sa59 mutant was increased by about 38% compared to the wild type strain(10.8 mg/g), and the volumetric glutathione content was increased by about 34% compared to the wild type strain(44.8 mg/L). The correlation between the glutathione content and the antioxidant activity of the mutant strains, was positively correlated(R2≒0.488).

The specific glutathione contents were 26.3 mg/g when the precursor amino acids of glutathione including glutamate, cysteine, and glycine were added by 0.04% respectively which were the increase by about 66% when compared to the control. And the volumetric glutathione contents were 69.6 mg/L with the increase of about 16%.
