As food constitutes the most basic and quotidian part of our life, people living in the age with scanty food used to view food solely for subsistence. So there did not exist in those hard times a consciousness of food as a cultural heritage that should be handed down and preserved like art works, music and architectural pieces. With the modern economic development and the resulting abundance of food supply, however, people came to see that food is part of culture that has various forms of life melting in it, thus gicing rise to the concept of 'food culture'. The changed perception of food increased interest in food culture worldwide, and the resulting national policy based on the understanding of the significance of food culture churns out diversified support to the food industry. According to the Ministry for Food, Agriculture, Forestry and Fisheries, the global food industry is worth 4,800 trillion won, bigger than the 1,300-trillion-won automobile and 2,700-trillion-won information technology. As the sales of the domestic food industry takes up only 2.5% of the global market, its growth potential is deemed unlimited. Therefore, it is judged that the creation of contents tapping into food culture is likely to develop into a source of the national competitiveness and thus a crucial industry. Yet, the domestic research related to food is focused on its nutritional aspect or studies on specific dishes or traditional food lessons, thus obviating the production of research results and contents combining food culture and contemporary contents. Therefore, the current thesis is designed to analyze actual cases of contents creation tapping into diverse food culture and explore methods for applying them to the production of contents related to Korean food. The analysis of the French case that has cut a prominent figure in utilizing the contents related to food culture has focused on the national policy and the cases of contents production, which served to put the French food culture on the list of intangible cultural heritage. And the analysis of the historical and industrial background of such creative cities of gastronomy as Popayán, Chengdu, and Östersund for a comparison with Jeonju, selected as a Creative City of Gastronomy for 2012, in order to suggest contents that would support the sustainable development of Jeonju as such. As Korea's leading city of gastronomy with potential for sustainable growth, Jeonju seems to be cut out to serve as a standard for the creation of contents based on Korean food with the following reasons. First, Jeonju is often cited as the place with best developed food culture in the country. The city is the tribal hometown of Joseon Dynasty, and its food, along with the food of Gaeseong (now north of DMZ), has been well-known for its luxury and taste from old times. Second, Jeonju has well-kept resources of traditional culture with its culinary tradition. The city has a variety of resources in traditional culture such as food, hanok, pansori, and craft, and has a great growth potential in connection to the traditional food. Third, Jeonju has a strong civic commitment to developing food on the basis of the traditional superbness of its food. The designation of Jeonju as UNESCO Creative City of Gastronomy involved the voluntary contribution from its citizens including the Citizen Network for UNESCO Creative City. On these grounds, Jeonju as Creative City of Gastronomy is expected to serve as an emblem of Korean food, and the growth of Jeonju as such will make an important factor in the development of Korean food culture.
