Typhimurium과 자연적으로 존재하는 APC, coliforms, yeasts & molds에 대하여 화학적 또는 물리적 병용처리 효과를 탐색하고, 미생물의 부착 정도에 따른 감소 수준을 평가하였다. 화학적 처리인 차아염소산나트륨 (NaOCl)은 200 ppm 범위에서 5분까지 사용하였고, thiamine dilaurylsulfate (TDS)는 1,000 ppm의 농도로 고정하였다. 물리적인 처리인 초음파는 37 kHz, 380 W의 조건에서 수행하였다. 화학적, 물리적 단독, 또는 병용처리가 끝난 후, 각각의 시료는 rinsing, stomaching, grinding을 순차적으로 수행함으로써 loosely, intermediately, tightly 부착된 미생물을 각각 획득하였다. 그 결과, NaOCl 단독처리의 경우 S. The objective of this study was to evaluate the efficacy of combined chemical and physical treatments in reducing microorganisms including Salmonella Typhimurium contaminated on chicken skin. The reduction efficiency against the populations of microorganisms was assessed with those indigenously loosely, intermediately, and tightly attached aerobic plate counts (APC), coliforms, yeasts & molds in chicken skin. Artificially inoculated S. Typhimurium onto chicken skin also underwent different chemicals and physical treatments. Sodium hypochlorite (NaOCl) at the concentration between 0-200 ppm and thiamine dilaurylsulfate (TDS) at 1,000 ppm for 5 min were used as chemical treatments. Ultrasound (US; 37 kHz, 380 W) was considered as a physical treatment. After treatments, the samples from skin rinsing, subsequently stomaching and finally grinding were denoted as loosely, intermediately, and tightly attached bacteria, respectively. Initial microorganisms in chicken skin were 6.97, 5.51, 4.30, and 5.11 log cfu/g for APC, coliforms, yeasts & molds, and S. Typhimurium, respectively. The reduction effects on microorganisms increased depending on the concentration of NaOCl, and higher reduction occurred against loosely attached cells rather than against intermediately and tightly attached cells. The combined treatments of NaOCl/US resulted in greater reduction in naturally and artificially contaminated bacteria in chicken skin rather than either treatment alone without affecting the skin color and texture. The combined treatment of NaOCl/US showed 1.04, 0.87, 1.03 and 1.3 log cfu/g total reduction values of APC, coliforms, yeasts & molds and S. typhimurium, respectively. However, the combined NaOCl/TDS did not effectively reduce the bacteria attached to chicken skins except for loosely attached APC and coliforms. In conclusion, our study proved that intermediately and tightly attached microorganisms in chicken skin showed higher resistance to chemical disinfectants, and could be protected by chicken skin with deeper skin layer, feather follicles and crevices. Therefore, further researches are needed to investigate a novel combination of chemical and physical treatments for effective reduction of intermediately and tightly attached microorganisms in chicken skin.
