최근 경제성장과 더불어 식생활의 변화에 따른 각종만성질환과 비만발생이 증가하고 있다. 이러한 문제점으로 인해 음식과 식이요법에 대한 관심과 이목이 집중되고 있다. 본 연구자는 음식과 식이요법에 대한 자각과 가치관의 반성 및 재조명을 위한 필요성에서 아유르베다와 현대의 식이요법을 비교하게 되었다.
본 연구는 아유르베다 식이요법과 현대의 식이요법을 고찰하고 두 체계의 기본관점,
인간관, 목적, 방법 등에 대한 비교를 통해 좀 더 체계적이고, 세밀하며, 올바른 식이요
법을 알아보고자 하는 것이 목적이다.
아유르베다와 현대 식이요법의 비교를 통해서, 두 식이요법은 건강과 심리적 만족을 위해 기본적으로 음식과 식이요법을 매우 중요하게 인식하고, 이러한 인식에 따라 식이요법에 많은 관심과 노력을 기울인다는 공통점을 알 수 있었다. 그러나 음식에 대한 기본관점, 인간관의 차이로 인하여 식이요법의 목적, 방법에서 다양한 차이점을 보인다.

아유르베다의 음식에 대한 기본관점은 상키야 철학이며 현대 식이요법은 영양학에 기본바탕을 둔다.
인간관에 있어서 아유르베다는 인간을 소우주로 세상을 대우주로 인식하며 또한 부분이 아닌 전체론적(Holistic) 인간관이다. 현대 식이요법은 기계론적 자연관과 생리학적 인간관이 바탕으로 인간은 물질적인 신체조직의 합이라는 관점이다.
식이요법의 목적으로 아유르베다는 질병예방과 치료를 통한 장수와 회춘과 더불어 의식의 변형을 추구한다. 현대의 식이요법은 영양소의 균형을 통한 신체의 건강회복과 건강증진이 목적이다. 따라서 아유르베다는 신체?정신?영혼의 건강을 추구하고, 현대 식이요법은 신체적 건강을 추구한다.
식이요법 방법에서 아유르베다는 기본적으로 개인에게 적합한 체질에 따른 식이요법과 음식을 통한 몸, 마음, 의식의 변형을 위한 삿뜨와적 식이요법, 쁘라나 식이요법이 있다. 그 외에도 음식에서 느낄 수 있는 여섯 가지 맛의 다양한 섭취로 체질의 균형을 이루고자 한다. 또한 단식을 통하여 정화와 독소배출을 권장한다. 현대 식이요법은 6대 영양소를 포함하는 영양소의 다양성, 적절성, 균형성을 토대로 바람직한 식생활의 균형있는 영양식을 섭취함으로써 건강을 유지하는 방법이 제시된다.
이상에서 살펴본바와 같이 아유르베다와 현대 식이요법은 최적의 건강상태 실현을 위한 출발점이 식이요법이라는 인식을 공유한다. 구체적인 방법에서의 상이한 차이는 존재하지만 각각의 장점과 효과를 가진다.

As the occurrence of chronic diseases and obesity is rising rapidly due to the change of eating habits, along with recent economic growth, interest about food and diet is also on the rise. A recent study was conducted on Ayurveda and Modern dietary therapy with the intention of awakening, reflecting, and shedding new light on food and diet.
This thesis aims to investigate Ayurvedic dietary therapy and Modern dietary therapy and further by comparing the basic viewpoints on the two dietary therapies. Their human views, purposes, and methods will also be taken into account and will be given a systematical and detailed look into dietary therapy.
The comparative research on Ayurvedic diet and Modern diet shows that both of them are fully aware of the importance of food and diet to gain health and psychological satisfaction. Through that awareness, the two types of diets have taken a great interest in dietary therapy. Even though both of them are focused on dietary therapy, there are considerable differences between the two.
Basic viewpoints about food in Ayurvedic diet are based on Sankhya philosophy; but those in Modern diet are based on nutrition. In Ayurveda, humans are considered as a microcosm, and, this world as a macrocosm. Likewise, human views are looked upon as not partial viewpoints but holistic ones. On the other hand, Modern diet sees humans as sums of material bodily tissue on the basis of a mechanistic nature view and physiological human view.
Purposes of the Ayurvedic diet lie in alteration of consciousness as well as longevity and juvenescence by the prevention and cure of diseases while those of Modern one lie in rehabilitation and promotion of physical health by balanced nutrients. Thus, Ayurveda pursues health of body, mind, and soul; while the Modern one pursues physical health.
Methods of Ayurvedic diet are as follows; a diet suitable for individual constitution; Sattva diet. A diet used for the transformation of body, mind, and soul; Prana diet. In addition, the Ayurvedic diet tries to achieve constitutional balance by taking a wide selection of food of six tastes which can be sampled from different foods. Furthermore, the diet encourages a person to purify and eliminate toxins from the body by fasting. However, Modern diet presents how to maintain health by taking a balanced nutritious meal for ideal dietary life, based on variety and property and balance of nutrients, including the six essential nutrients.
Both the Ayurvedic and Modern diets compared and examined above are mutually perceived as the starting point of dietary therapy that the best health condition can be derived from. The two diets have many differences in specific methods, but the two both have their own distinct benefits and effects.
