The chemical composition of ginsenoside, malonyl-ginsenoside, acid-polysaccharide, amino acid, free sugar, amino sugar and maltol such as contents for the manufacturing process was investigated. The chemical constituents of Panax ginseng were changed by processing methods such as steaming and sun drying.
In the present study, in-situ monitoring of steaming induced chemical change of Panax ginseng was performed. For in-situ monitoring, a piece of samples were separated from same ginseng sample by incision during the steaming process. And step-by-step sampling was performed at three stages (FG; fresh ginseng → SG; steamed ginseng → RG; red ginseng) and sixty ginseng samples were prepared and freeze dried.
As a result, the concentration of six malonyl-ginsenoside (Rg1, Rb1, Rb3, Rc, Rd, Rb2) and fifteen amino-acid were decrease during the steaming process. In contrast, ginsenoside-Rh1, 20(S)-Rg2, 20(S, R)-Rg3 and some maillard reaction product such as AF, AFG, and maltol were newly generated or increase its concentration. Our study elucidates the dynamic changes of component in P. ginseng which induced steaming process.These results are definitely helpful for quality control and standardization of herbal drugs using P. ginseng and also provide a scientific basis for pharmacological research of processed ginseng (red ginseng).
