본 연구는 볶음 온도 별 땅콩, 호두, 들기름의 물리화학적 특성변화를 알아보기 위해 수행하였다. 재래시장 및 대형마트에서 땅콩, 호두, 들깨 시료를 구입하여 향기성분, 색, 휘발성분, Healthy compounds, PAHs 및 지방산 함량 등을 분석하였다. 각각의 시료를 110도, 130도, 150도, 170도에 볶은 후 착유기를 통하여 기름을 추출하였다. PAHs성분 중 Benzo(a)pyrene은 호두유, 땅콩유 및 들기름 시료모두 식용유지 기준치인 2ppb를 넘지 않았다. This study was executed to compare the effect of roasting temperatures on the physicochemical properties such as PAHs, volatile element, fatty acid and healthy compounds in the production of walnut, peanut and perilla seed oils. Several studies have been carried out to assess roasting effects on oils from different seeds and nuts. However presently, no studies have been reported on the physicochemical properties roasted at different temperatures. Walnut, peanut, and perilla oils are obtained from a small oil shop on local traditional market in Korea through pressing process. Nuts and seeds were previously gone through the roasting process in roasting pot. Polycyclic aromatic hydrocarbons (PAHs) such as Benzo(a)pyrene, which are harmful substances in the body, were achieved through this process. Furthermore, concentration of several properties may alter in oils such as volatile elements, consist of fatty acid, color, and healthy compounds (α- tocopherol in peanut, ellagic acid in walnut, rosmarinic acid in perilla seed). Concentration of PAHs and healthy compounds were determined by high-perfomance liquid chromatography (HPLC) with fluorescence detection, photodiode array detection having different elution gradients and run times. Volatile compounds and fatty acid were determined by gas chromatography (GC) with mass selective detection. For the volatile compounds analysis, the conditions operated in SPME extraction system (MPS 2L_XT, Agilent Tech.). Color compound was determined by color difference meter (UltraScan, Hunter lab, USA). In this study, physical and chemical properties of peanut, walnut, and perilla oils were monitored. As the oils roasted at higher temperature, PAHs components tend to be increased. In contrast, healthy compounds were tend to be decreased as temperature increased. The roasting of oils may suggest a harmful effect on body after consumption as PAHs contents were increased, while healthy compounds contents were decreased in higher temperature processing. Therfore, we conclude 110°C is is recomended for the roasting of peanut, walnut and perilla seed.
