Instant coffee, which is a typical processed food made from the tropical regions, was selected as a research subject to examine this historical process. Also, this study conceptualized the food system (the production, distribution, sales, and consumption structure of foods) of coffee as the “coffee system” and dealt with the formation and changing aspect of the coffee system. Through this approach, this study revealed the main causes of the alteration in the coffee system and analyzed the changing social recognition on coffee in South Korea. The establishment of Dongsuh Food Corporation (동서식품) could be considered as the starting point of the Korean coffee system. Before, there were rarely any domestic production in Korea and the consumption form was rather abnormal due to government restrictions. The time period starting from the year 1968 until the late 1980s could be defined as the ‘Import Substitution Industrialization’ period. In this period, the coffee system demonstrated three unique characteristics. First, the coffee system was highly dependent on foreign technology and capital. Second, the mass production-consumption structure of the coffee system was centered on instant coffee. Third, there was an ‘Import Substitution Project’ targeting at coffee legalization. In this process, the domestic market was protected from foreign coffee. Meanwhile, the domestic market quickly adopted foreign technology to meet the demands of the domestic coffee market. There was a series of critical changes in the overall coffee system that took place around the late 1980s. The changing aspects are stated below. First, the coffee system changed from monopolistic structure to competing structure. Second, domestic corporations were required to build competitive power by themselves within the market-opening paradigm. First, coffee was a symbol of westernization. Coffee intake was viewed as participating high-level culture. Second, coffee was perceived as an enemy against the national economy. Reduction on coffee expenses was considered to be the action to take for economic development. However, this study could find that these conflicting characteristics weakened since the 1990s. As the Import Substitution Industrialization was brought to completion, the coffee mix and refill coffee settled as the most typical forms of Korean coffee. The completion of Import Substitution Industrialization weakened the image of coffee as conspicuous waste. Also, the coexistence of brewed coffee and instant coffee became the main consumption pattern in South Korea after the IMF financial crisis.
