On the other hand, salted-fermented anchovy sauce contained 21.16-21.48% of salinity, 5.69-5.83 of pH, and 77.47-216.53 mg/100mL of VBN. The contamination levels of total viable cell counts in salted-fermented shrimp sauce were 3.2 log CFU/g for 3 fermented months, 2.3 log CFU/g for 6 fermented months, 2.7 log CFU/g for 12 fermented months and 2.6 log CFU/g for 18 fermented months. The total viable cell counts of salted-fermented anchovy sauce were 4.0 log CFU/g for 2 months and 1.3 log CFU/g for 24 months.

Putrescine, cadaverine and histamine were not detected in salted-fermented shrimp sauce. The contents of putrescine, histamine and tyramine were 117±6 mg/kg, 20±28 mg/kg, 10±24 mg/kg, respectively, for aqueous chlorine dioxide treated 36 ppm. This results were reduced the limit for the content of biogenic amines on the salted-fermented shrimp sauce and anchovy sauce as required by the US-FDA guideline.
