The purpose of this study is to develop functional products of natural extracts from Heracleum moellendorffii. To take the process, we adopted the solvent extraction method and the supercritical carbon dioxide fluid extraction method. The α-terpinene, one of the fragrance components of Heracleum moellendorffii extracts was analyzed with GC-FID. In the solvent extracts from the root of Heracleum moellendorffii, it was discovered that it contained 0.0476% of α-terpinene. In the solvent extracts from its above ground plant parts, it was found that it contained 0.0302% of α-terpinene. In the supercritical carbon dioxide fluid extracts, α-terpinene was not detected. The followings are the results of sensory evaluation of Heracleum moellendorffii extract. The scents of the solvent extracts from the root of Heracleum moellendorffii, were camphoraceous, herbaceous, woody, earthy, light, and fresh. In the case of Heracleum moellendorffii supercritical fluid extracts from the root, it felt camphoraceous, herbaceous, woody, earthy, fresh heavy, and sharp. In the case of solvent extracts from its above-ground parts, it felt spicy, sharp, green, and musty. In the case of supercritical fluid extracts from its above-ground parts, it felt spicy, sharp, green, musty, and heavy. In addition, in examining the antimicrobial activity of Heracleum moellendorffii, we found that the supercritical fluid extract showed the strongest among them. We tried to use the extracts to produce fragrances and soaps. According to the preference survey of fragrances, the highest was ranked the solvent extracts from the roots of Heracleum moellendorffii. The quality evaluation of soap demonstrated that the supercritical fluid extracts from its above-ground parts was the best detergency. In examining the hardness of the soap, the extracts by the supercritical fluid extraction method was relatively stiffer. Thus, it is considered that Heracleum moellendorffii can be applied as a material for manufacturing functional products such as soaps and fragrances.
