This study explores the factors of food services satisfaction caused by repositioning where meals are provided. The key objective is to figure out ways to improve satisfaction with overall food services. The 2015 Improvement of School Rationing Conditions Manual published by Seoul's School Health Development Agency shows that 445 schools (34%) have in-class meals, 787 schools have cafeterias, and 94 schools (7%) do both. This means that 539 schools (41%) still offer either in-class meals or both. Most literature in this area of study relies on cross-sectional research, and yet not much practical research has been done to study how changes from in-class to a cafeteria system actually affected level of student satisfaction. And this study aims to do just that with respect to the high school students in Guro-gu, Seoul. This study is to analyze the factors that affect satisfaction, expectation, and degree of improvement as caused by changing food services at schools. The result in terms of satisfaction with food services by differences in location was that cafeteria meals scored better in terms of satisfaction at 3.05 than did in-class meal services at 2.82. Among the surveyed students who responded that in-class meals were satisfactory, 18.5% said it was because they saved time, and 18.0% said the close distance was convenient. Those who responded that in-class meals were dissatisfactory, 27.3% said the food was bad, and 21.0% said the food was cold; most of them commented on the quality of meals. Expectations for transition to cafeteria food showed results that were statistically insignificant, and the resulting improvement of which scored the highest was that it would provide a 'quieter place to dine (2.88).' Reasons for dissatisfaction with cafeteria meals were 'long waiting time (23.4%)' and 'insufficient seats (21.9%),' confirming that in cafeteria planning securing the right spot and enough space are highly important factors. If we take a look at the different factors behind the levels of satisfaction, transition to cafeteria meals raised satisfaction levels. Especially regarding menu diversification, 'shorter channels of movement that enable a wider range of menu' was the most popular explanation for the increase in satisfaction levels from in-class meals (2.72) to cafeteria meals (3.20). Regarding food facilities, 'a more convenient hand cleaning' was the most popular explanation for the increase in satisfaction levels―in-class meal (2.89) and cafeteria meal (3.46). But over the question of which was the 'more convenient dining place,' in-class satisfaction (3.53) was higher than cafeteria satisfaction (3.12), once again reminding us how important it was to secure enough space to satisfy diners. In the services category regarding the "hygiene of server uniforms," satisfaction with cafeteria meals (3.75) was higher than that of in-class meals (3.51). But with respect to "waiting time," cafeteria meals satisfaction (3.18) was lower than that of in-class meals (3.43). Overall, hygiene-wise transition cafeteria seems to be the most satisfactory choice for diners, and lastly with respect to 'rations guidance,' satisfaction with in-class meal (3.08) was lower than that of cafeteria meal (3.65). The results tell us a number of caveats about making transitions to cafeteria services. One has to secure sufficient space for dining, and the planner has to constantly analyze and improve the menu to meet the diners' tastes and preferences. Amount of food served, a diversified menu, hygiene conditions, and the right facilities that meet the objectives of the food services in terms of food quality, safety and hygiene are all important.
