In this study, we evaluated antioxidant activities and the contents of antioxidant compounds in commonly consumed herb plants in south korea. The antioxidant activities were evaluated by ABTS, DPPH radical scavenging methods, reducing power and Inhibition of lipid peroxidation, and antioxidant compounds were analyzed by total polyphenol, total flavonoid, vitamin C, vitamin E and β-carotene. The result of study, all of herbs was analyzed the antioxidant activity and compounds, the content of the ingredient was the difference in accordance with herb varieties. Commonly showed the highest antioxidant properties in oregano. The contents of total polyphenols and flavonoids were each in the range of 33.7-165.8 mg GAE / g, 8.6-87.2 mg CE / g, oregano has yielded the highest in polyphenols with 165.8 mg GAE / g, flavonoids was highest in the 87.2 mg CE / g in spearmint. Then as lemon balm, thyme and peppermint, it showed a high content. DPPH radical scavenging activity also has the highest trolox equivalent in oregano and it's content was 0.34 mg in 100 g trolox. ABTS radical scavenging activity showed the highest radical scavenging activity equivalent in thyme and it's content was 0.34 mg in 100 g trolox. Consequently, each of herbs shown potential natural antioxidants most of all, oregano has the highest antioxidant activity commercial herb products in south korea. However, the preferences and consumption of oregano has low evaluation because of it's low interest. So it is needed to promote oregano's application in variety field such as functional food.
