We determined the effect of combined treatment with ClO2 and heated-air drying on the inactivation of B. cereus spores on red chili peppers. Ten washed and dried samples, each comprising half of a single pepper (Capsicum annuum L.), were inoculated with 4-5 drops of a B. cereus spore suspension. The inoculated samples were then washed with NaOCl (0, 50, 100, or 200 µg/ml) or ClO2 (50, 100 or 200 µg/ml) for 1 min and air-dried (25±1°C, 47 ± 1% RH). The samples were then dried with heated air at 55°C for up to 48 h. The spore populations on the samples were enumerated and the aw values and colour of the samples were measured. The initial spore numbers (6.1 log cfu/sample) decreased at similar rate immediately after washing with NaOCl or ClO2. After 12 h of heated drying, the spore populations on the samples that were washed with 100 or 200 µg/ml of ClO2 were reduced to < 1.7 log cfu/sample but the spores still recovered after enrichment. Treatment of the dried red chili peppers with aqueous NaOCl or ClO2 prior to heated-air drying did not influence their aw values or colours. During the heated-air drying process, the spore populations reduced more rapidly on the pepper samples that were washed with ClO2 than those treated with NaOCl.
