This research is for 650 second grade high school students in the northern area of Gyeonggi-do from two high schools which have cafeteria and two which do not have cafeteria from December 26thto30th, 2016. Total of 548 students are analyzed in the final statistical analysis excluding 102 students who have insufficient responses and the following is the summary of the results.
Gender distribution turns out to be similar in all schools either they have cafeteria or not and the two groups have similar results based on mothers’ job status(p<0.01). Schools that have cafeteria tend to have many dual-earner parents.
The frequency of the meals is three times a day and it is examined that students eat breakfast more than 5 times a week which is an unexpected result. Also, high skipping rate of breakfast is investigated from students who don’t eat breakfast. Two groups have significant differences (p<0.05) and mothers’ job status seems to be influential.
Frequency of ingesting snacks and the cost of it show significant differences in two groups(p<0.001) and they tend to be higher in the schools that do not have cafeteria. Most answers for the reason to eat snacks are ‘because I’m hungry’ and ‘because it tastes good’. Their standard to eat snacks is the ‘taste’ in both two groups which proves that students consider good taste as the most important factor to choose snacks. In schools that have cafeteria, a time slot to eat snacks turns out to be in the order of ‘9am-noon’ and ‘noon-3pm’ which shows that students eat snacks the most when they are at school because of easy accessibility to cafeteria. In the schools that don’t have cafeteria, students usually eat snacks in the order of ‘after 6pm’ and ‘3pm-6pm’ which proves that most of students eat snacks after school when they have free time outside of school. Frequency of using school meal plan is 5 times a week and the amount of intake turns out to be average. In both two groups, ‘particular vegetables’ and ‘fish’ rank the highest for students’ unbalanced diet and garbage amount appears to be in the order of ‘vegetables’, ‘soup/stew(excluding liquid)’, and ‘fish’ . There was not much significant difference in both groups, but it appears to be that unbalanced diet is high in particular vegetables and fish.
Overall satisfaction level towards school meal plan and satisfaction level in food are high in the schools that don’t have cafeteria and they have significant differences(p<0.05). In terms of snack ingestion rate instead of school meals, at schools that have cafeteria, there are many students who eat snacks while eating school meals. At schools that don’t have cafeteria, there are many students who eat snacks instead of school meals. There are many students who eat snacks instead of school meals during the meal time and the most reason for eating snacks is because ‘there is food that I hate in school meals’. Students who eat snacks while eating school meals tend to eat snacks after their meals and the most reason for eating snacks is because ‘lunch was not enough’. It is considered that students are not affected by regular meals because most students say ‘same’ when comparing their eating amount of meals after eating snacks. Satisfaction level towards school meals after ingesting snacks is high at schools that don’t have cafeteria, but there are not much significant differences. Frequency analysis by the types of snacks based on whether school has cafeteria or not shows that snack/crackers, frozen desserts, general bread, beverages, milk/dairy products and candy/chocolate in order at schools that have cafeteria. At schools that don’t have cafeteria, it shows that snack/crackers, general bread, beverages, milk/dairy products and candy/chocolate in order. At schools that have cafeteria, there is no significant correlation between frequency of ingesting snacks and satisfaction level towards school meals. At school that don’t have cafeteria, there is significant correlation between frequency of ingesting snacks and change of satisfaction level towards school meals after eating snacks(p<0.05) which proves that they are influential.
According to the results above, breakfast skipping rate is high at school that have cafeteria and when students skip breakfast, they tend to buy more snacks at cafeteria. Also, they eat snacks before and after lunch time and it affects their regular meals which shows that they have low satisfaction level towards school meal plans. For this fact, we try to contribute to form healthy eating habits by balanced nutrients ingestion for students by informing them the importance of appropriate ingestion of snacks and importance of school meals.
