The purpose of this study was to produce W/O emulsion and W/O/W double emulsions of food-grade formulation to encapsulate collagen peptide with stability depending on storage period. Different mechanical emulsification devices (high speed homogenizer [HSH], microfluidizer [MF], ultrasonicator [US], combined HSH and MF [C-HSH/MF], combined HSH and US [C-HSH/US]) were compared to produce and W/O/W double emulsions. Polyglycerol polyricinoleate (PGPR) was used as inner emulsifier, and Tween 80 and chitosan were used as outer emulsifiers. Corn oil, MCT oil, palm oil and lemon oil were used as inner oil phases. Chitosan was also added as stabilizer of coating layer to improve W/O/W double emulsions stability. Influences of NaCl and collagen peptide concentration on the W/O/W double emulsions were characterized by droplet size, creaming index, interfacial tension, encapsulation efficiency and rheological properties. The most stable W/O/W double emulsions were obtained with 1% NaCl, 5% collagen peptide, 5% PGPR, 1% Tween 80, corn oil by using C-HSH/MF device. Layered W/O/W double emulsion was optimized by 0.03% chitosan by using modified critical micelle concentration principle and they were stable against creaming.
