The most effective and commonly used method of disinfection is by chlorine based disinfection which has a drawback of producing harmful byproduct. Thus, an alternative method of disinfection is to be adapted for disinfecting the ice making machine. In recent time usage of organic acid have gained its attention in disinfection technology. However, organic acid disinfectants have disadvantages. Due to their Low pH their interaction with the machineries results in corrosion. And, the usage of organic acid is more because of washing frequently are the limitation to be redeemed. In this study we conducted a series of experiments to overcome these drawbacks and in addition we also assessed the control of the formation of Biofilm and also the stability of the disinfecting organic acid was studied. The Experiments were performed to compare the performance of the mixture of organic acids with single acid. From the results it was evident that mixture of organic acid showed a better disinfecting performance than single organic acid which is attributed to the synergistic effect. It was also observed that the inactivation of biofilm efficiency was appreciable even at lower quantity of organic acid mixture than single organic acid. This is because of the nature of the organic acids, in which Phytic acid responsible for collapse of cell membrane integrity, and Malic acid and Citric acid are responsible for effective cell penetration causing fatality to microorganism. At optimal condition appreciable disinfection of 99.9% at 10 minutes was achieved for various pathogenic microorganism (Malic acid 3.6 g, Citric acid 3.6 and Phytic acid 200 mg for 200 mL). And the pH of the organic acid at optimum condition reduced corrosion caused by the interaction of organic acids with the machineries. Also the usage of the organic acid at optimum condition is eliminating the repeated wash, sufficient for the optimum performance. In addition, this is economically more viable in cost reduction due to reduction is use of raw material entering the product. The Biofilm formed in the ice making machine was analyzed and confirmed by various analytical techniques like Spread plate method, ATP, Stereo and fluorescence microscopic methods. The stability of the organic acid and disinfectant was also evaluated by various physicochemical parameters like pH, Turbidity, Permeability and UV254 at frequent intervals. The inactivation efficiency was same even after 60 days reveling its stability. Thus, this study helps in improvement of the efficiency and overcoming the limitations of using organic acids in disinfection technology, leading to new and un-apprehended area to explore the disinfection methodologies in ice making industry.
