In the modern age, food has become one of the most important reasons for taking trips. Unique and charming foods that you can try only in a special region will make your trip more valuable. Even some foods in some crowded festival spots with specific duration could be a good marketing method for promoting history, culture and identity of the host region and as a result will have some immense effects. Festival attendants have various foods in the many food booths found inside of a festival, this is the very first step. And more like festival programs, festival foods themselves and the quality of their service in food booths could have an effect on desirability of the host region, festival images, festival satisfaction and so on. Nevertheless, festival hosts usually take food booths just as a small contributor to festivals, and also food booth owners take it as a way to make more money and increase profits. In the era of festival management, food booths should be developed as a valuable factor to satisfy attendants and also they should be applied as a method to strengthen a festival's competitiveness. In order to achieve this goal, some objectives and a sensible evaluation criteria for festival foods and food booths should be adopted. This research has explored the impacts of food booths evaluation factors in consumer-oriented festivals on their perceived value. Some results from the study will offer valuable data to build up food booths management strategy such as selecting sale items and food booth owners, setting up and operating food booths, and a food booth system evaluation. 60 food booths evaluation factors being selected are firstly based on various literature reviews and field surveys, 20 core factors were deducted after collecting experts' feedback in this study. 20 core factors were applied to some attendants who visited food booths during the 2018 Daejeon Seo-gu Healing Arts Festival to evaluate the food booths. A Food booths evaluation is rather different from other indoor restaurants because they are generally outdoor temporary structures used to prepare and sell food to general public. Accessibility, sign display, emergency facilities for bad weather, floor condition inside food booths were also included considering they are outdoor temporary structures. Furthermore, some evaluation factors were added, whether foods include features of the festivals or host regions and also if they put price lists up, possibilities of credit card use as festivals take place with specific themes during the specific period. Three core characteristic components concluded an after survey of the 2018 Daejeon Seo-gu Healing Arts Festival attendants based on those evaluation factors. Firstly, 78% of food booths, which is 22 out of 28 food booths in total, offered finger foods without soup so visitors could enjoy the festival more while having their food. Secondly, visitors' satisfaction was very high to cleanliness and hygine of food booths. Thridly, foods do not apply any local features and culture & arts festival characters. The 3 hypothesis test results show that food booths evaluation factors have differences depending on demographic characteristic, and some evaluation factors such as convenience, reliability, utility have influence on a festivals' perceived value. In addition, visitors' satisfaction to food booths was getting higher as festival time goes by and it concluded that satisfaction level made some differences by festival host or booths owners' response ability on the spot and proficiency. This research draws a new food booth evaluation model for planning, developing, operating food booths in consumer-oriented festivals and also shows that foods from the booths were assorted by the type and classification. In addition, this research suggests that a task force team with local human resources for developing festival food featured host region and festival character should be organized and working title 'festival food evaluation committee' should be organized to evaluate cultural tourism festivals for the trial. In addition, this study suggests that public concepts should be applied to food booths so that all profits from food booths should be shared with festival hosts and organizers in the near future. However, this research has limitations. This study only examines the specific festival during specific period so it would be difficult to apply this result to other festivals.
