Triacetin(TA)의 경우 발효와 oven spring이 일어나지는 않았지만 제일 적은 굽기 손실률을 보였다. 부피는 향료를 첨가하였을 때가 첨가하지 않았을 때에 비하여 부피가 유의적으로 작아지는 것을 관찰 할 수 있었다. Glycerin(Gly)의 경우 다른 실험군들에 비해 대조군과 비슷한 부피가 나타났으나, Capping현상이 발견되었다. 대조군에 비해 실험군들이 발효 팽창력이 약해지는 경향을 보였으며, Propylene glycol(PG)와 Triacetin(TA)가 눈에 띄게 작아지는 현상을 보였다. SPME를 이용하여 흡착 된 성분을 GC-MS로 분석 하였을 때,다른 용매들에 비해 Propylene glycol(PG)와 Triacetin(TA)가 많은 양이 남아있었는데, 이는 다른 용매들에 비해 강한 내열성을 가지고 있는 것으로 보인다. Propylene glycol(PG)와 Triacetin(TA)두 용매 모두 항 곰팡이작용을 가지고 있어 최종 제품의 크기에 영향을 끼치는 것으로 보인다. 특히, Triacetin(TA)의 경우 GC-MS 분석결과 Ethyl acetate의 양이 굉장히 많이 남아있는 것으로 측정이 되었다. Triacetin(TA)을 용매로 사용한 향료를 사용했을 경우 많은 양의 Ethyl acetate가 식빵 내부의 수분과 접촉해 가수분해가 일어나면서 아세트산과 에탄올을 생성한다. 아세트산에 의해 최종제품에서는 식초가 가지고 있는 특유의 시큼한 향취가 나게 된다. 시간이 지날수록 Ethyl acetate와 빵 내부의 수분이 지속적으로 반응함에 따라 시큼한 향취가 증가할 것으로 예상된다. 아세트산은 최종부피에도 영향을 끼쳤다. 실험결과, 최종제품의 부피가 눈에 띄게 감소하여 발효 팽창력이 거의 없는 것으로 나타났다. 이는 제빵에서 발효작용을 하는 이스트에 아세트산이 가지고 있는 특유의 살균능력이 작용한 것으로 보인다. 이 연구를 통해서 Medium chain triglyceride (MCT)을 용매로 사용했을 경우 보다 고품질의 식빵을 생산할 수 있는 효율적인 용매라는 것을 알 수 있었다.

Currently, there are so many opportunities in Korea to experience the cultures from different countries due to the globalization and various socioeconomic factors. As a result, the food consumption pattern of the Koreans changes from traditional Korean dishes into Western and diversified ones; this contributes to continuously increasing the consumption of confectionary and bakery, which are processed food made from wheat. The purpose of this study is to compare the effectiveness of different solvents in the characteristics of bakery and the remaining flavor. The food flavoring agent consists of flavoring base and solvent; especially, the solvent accounts for 50 to 95 percent. Heat-resistant solvents are mainly used, as the baking process often appears due to the characteristics of confectionery and bakery. We selected five representative solvents, and used milk scent as a base for the scent. This study measured the characteristics of bakery as a physical property and the remaining flavor after bakingas a chemical property after the flavoring. To do so, we measured the change of weight, rate of baking loss, volume and fermentation expansion in the characteristics of bakery. The remaining flavor after baking is measured with Gas chromatograph-Mass spectrometer (GC-MS) by analyzing the volatile components absorbed using Solid Phase Micro Extraction (SPME). The weight of the final product is seen to slightly increase compared to that of product without flavoring. Also, the experimental group showed less baking loss rate compared to the control group. Triacetin (TA) had no fermentation and oven spring, but the least baking loss rate. It is seen that the volume becomes significantly smaller with flavoring compared to the control condition. Glycerin (Gly) did not show a significant volume difference but the capping phenomenon was observed. Experimental groups showed weaker fermentation expansion compared to the control group, showing that Propylene glycol (PG) and Triacetin (TA) significantly decreased. When the absorbed composition is analyzed by GC-MS using SPME, it had more Propylene glycol (PG) and Triacetin (TA) compared to other solvents, which could mean it had higher heat-resisting property. Both Propylene glycol (PG) and Triacetin (TA) has characteristics of mold inhibition which could have resulted in the size of the final product. Especially, it is observed under the analysis of GC-MS that Triacetin (TA) had a large amount of ethyl acetate. With the flavor using Triacetin (TA) as a solvent, much of the ethyl acetate contacts the water inside the bread to hydrolyze and then create acetic acid and ethanol. Therefore, the final product has to have a sour flavor of vinegar due to the acetic acid. Over time, the continuous reaction ofethyl acetateand water inside the bread is expected to increase the sour flavor. Also, the acetic acid had an effect on the volume of final product. As a result ofthe experient, it seems that it makes the volume of final product to decrease significantly with little fermentation expansion. This means that the acetic acid has its own sterilizing influence on the yeast which ferments in the bakery. This study shows that this solvent is efficient in producing higher quality bread than Medium chain triglyceride (MCT).
