Most of these LAB are known to be derived from raw materials. Kimchi fermentation is initially started with a hetero lactic fermentation, followed by a homo lactic fermentation step. The production of high quality kimchi depends on the proper succession of different LAB species. Many factors are involved in the development of LAB transition. The most important factor is bacteriophage. In this study, LAB, a dominant species, were isolated from Kimchi circulated in the market and the bacteria were identified. The bacteriophage infecting these dominant LAB species was also isolated. Plaque assay was used to isolate bacteriophages. A transmission electron microscope (TEM) was used to confirm the shape of the bacteriophage. One-step growth curve, temperature stability, pH stability and growth characteristics of kimchi broth were identified. The dominant LAB isolated from nine kimchi samples were Wei. cibaria, Lac. sakei, Lac. curvatus, and Leu. mensenteriodes. Among them, bacteriophage infecting Wei. cibaria (PWC) was isolated. TEM confirmed that the phage was 99 ± 4 nm long × 39 ± 4 nm wide, with a short non-contractile tail of 29 ± 5 nm. Thus, the PWC was found to belong to the Podoviridae family. One step growth curve experiment showed that PWC took 2 h to destroy bacteria with the burst size of ~ 300 PFU/cell. D value of PWC was 80 sec at 50℃ and inhibited when more than 10 sec at 60℃. PWC was unstable at pH 3.0 but stable at alkaline conditions even after 5 h incubation at pH 4.0 to 10.0. When growth of PWC was inhibited at pH 3.0.
