To the best of our knowledge, there are no papers on the effect of the initial moisture content of green coffee beans, which impact on the volatile aroma compounds and other sensory properties of roasted coffee. In this study, the initial moisture content of green beans were adjusted to 5, 10, and 15%, and then roasted at light, medium, and dark to investigate changes in volatile aroma compounds, pH, total acidity, antioxidant activity and sensory characteristics. The original green beans (control) had a moisture content of 10%, the green beans having a moisture content of 5% were dried in a dry oven, and the 15% moisture green coffee were prepared by imbibition. From the GC-MS analysis, the major volatile aroma compounds (aldehydes, furans, pyrazines) were highest at 5% in light roasting and medium roasting, but decreased to 10% and 15%. As the moisture content of green coffee beans increased, pH increased in light roasting and medium roasting, and total acidity decreased. Antioxidant activity tended to be the highest at 15% in all roasting degrees, and there were no significant differences in volatile aroma compounds, pH, and total acidity according to moisture content in dark roasting. From this study, it was confirmed that the aroma and taste of coffee, especially pH and acidity, can be modified by controlling the moisture content of initial green beans.
