However, even after the history of post-fermented tea in China faded when the Ming dynasty banned tea production, Korea continued to develop its own tea tradition, including at Borim Baekmo and Cheongtaejeon of Jangheung, Bupunghyang-cha of Buan, Dasanjeong-cha of Gangjin, Chouibyung-cha of Haenam, Yu-cha of Hadong, and Biro-cha of Naju. To understand, commercialize, and globalize Korean post-fermented teas, it is necessary to start by clarifying their origins. To that end, it is urgent to prioritize learning the Korean post-fermented teas’ trajectory recorded in classical books. However, there were almost no cases of research that discovered and synthesized the records of post-fermented teas in Korea, as most studies focused on individual teas. Accordingly, the need to secure the most basic data on Korean post-fermented teas has come to the fore, which is the reason this study was started. First, this study attempted to find classical records of China, which led the world in the development of post-fermented tea, and then discover traces of Korean post-fermented tea in the classics. Through this process, it is believed that the characteristics of post-fermented tea in China and Korea can be understood. In particular, it is hoped to intensively discover the records of post-fermented tea in Korea that have been handed down to the present day, which is the key to brand development, storytelling, and regional revitalization, considering the possibility of further application of research. The research, commercialization, and market positioning of post-fermented tea in Korea are still in their infancy. The market dominance of unfermented tea is gradually weakening, and its entry into the international market is almost negligible. It is desired that this study will revitalize the Korean tea market through post-fermented tea, with hopes that it will serve as a small foundation for the development and vision of Korean teas, both unfermented and fermented.
