This study is a descriptive research conducted to provide basic data on an efficient COVID-19 infection control system for the prevention of COVID-19 infection of dietitians through identifying the sanitary knowledge, attitude, and practices toward COVID-19 among dietitians working at institutional food service sites during the COVID-19 pandemic. Purpose of study: The purpose of this study is to provide basic data on an efficient COVID-19 infection control system for institutional food service dietitians through identifying the sanitary knowledge, attitude, and practices toward COVID-19 among institutional food service dietitians Method of Study: Data was collected for about a month (April 13, 2021-May 14, 2021) via an online survey distributed to dietitians working at institutional food service sites; 169 respondents from the overall respondents were selected for analysis. From the collected data, the final 169 surveys were analyzed using the SPSS Statistics 25.0 statistical software program. The main statistics used in data analysis are as follows. First, a frequency analysis was conducted to investigate frequency and ratio of the demographics of the survey respondents and the characteristics of the infection control, the degree of stress from COVID-19 response policies and prevention, and the frequency of correct answers on sanitary knowledge. Second, descriptive statistics were calculated to examine the degree of stress from COVID-19 response policies and prevention, along with the average and standard deviation of sanitary knowledge, attitude, and practices of institutional food service dietitians. Third, a reliability analysis was executed to calculate the Cronbach’s alpha coefficient of the attitude and practices of institutional food service dietitians. Fourth, a one-way analysis of variance (ANOVA) and an independent samples t-test were performed to examine the difference between the attitude and the practices of institutional food service dietitians according to the demographics of the respondents and the characteristics of the infection control. Fifth, Pearson’s correlation test was conducted to identify the correlation between the degree of stress from COVID-19 response policies and prevention and the hygiene knowledge, attitude, and practices of institutional food service dietitians. This study was verified under the significance levels of P<.05, P<.01, and P<.001. Results: It was analyzed that the degree of stress from COVID-19 response policies and prevention for institutional food service dietitians was extremely high. The score for sanitary knowledge regarding COVID-19 was 5.41±1.07 out of 7, displaying high level of knowledge in COVID-19 infection symptoms and low level for pathogens. For attitude, the respondents exhibited a high score for COVID-19 patients under investigation or patients under quarantine and a low score for considering a leave of absence or changing jobs due to infection risks of COVID-19. The practices score showed an average of 4.20±0.65 out of 5, a relatively high degree of practices. In terms of practices in personal hygiene, the respondents reported the highest score in wearing disposable gloves when serving food. For practices in cafeteria management, the highest score was in the preparation of equipment including hand sanitizers, disinfectant detergents, and thermometers. For practices in disease prevention, the respondents scored high in attaching notices or posters of hygiene practices within the cafeteria. It is estimated that the sanitary knowledge, attitude, and practices toward COVID-19 among institutional food service dietitians have improved on account of the effects of the COVID-19 pandemic on the mass meal service. After examining the degree of stress from COVID-19 response policies and prevention, sanitary knowledge, attitude, and practices based on the demographics of the respondents, the degree of stress for the respondents in their thirties was the highest and the respondents in their twenties the lowest, showing a statistically significant difference. The sanitary knowledge was the highest in respondents in their thirties and lowest in respondents in their forties, showing a statistically significant difference. Additionally, the knowledge was highest in respondents with work experience less than a year and lowest in respondents with work experience over 8 years, but the difference was not statistically significant. The results for attitude also displayed a statistically significant difference, with respondents in their thirties scoring the highest and respondents in their forties scoring the lowest. The attitude difference based on educational levels also resulted in a statistically significant difference; respondents with a bachelor’s degree scoring the highest and the respondents with an associate degree scoring the lowest. In terms of the attitude of respondents based on the number of meals they serve per day, respondents serving 500-1000 meals per day scored the highest while respondents serving over 1000 meals per day scored the lowest, showing a statistically significant difference. For practices in personal hygiene, respondents in their forties scored the highest, and respondents in their twenties scored the lowest, showing a statistically significant difference. In terms of education levels, respondents with a master’s degree scored the highest and respondents with an associate degree the lowest, showing a statistically significant difference. For practices in cafeteria management, the respondents in their thirties had the highest score and the respondents in their twenties the lowest, but the difference was not statistically significant. Respondents working under direct management companies scored higher than respondents working under contract management companies, but the difference was not statistically significant. In terms of the establishment type, respondents working in the “other” category scored the highest, and respondents working in hospitals scored the lowest. For practices in disease prevention, respondents in their forties scored the highest and respondents in their twenties the lowest, although the difference was not statistically significant. Respondents with work experience less than a year scored the highest in this section, and respondents with work experience between 5-7 years scored the lowest, showing a statistically significant difference. The degree of stress from COVID-19 response policies and prevention, sanitary knowledge, attitude, and practices were also evaluated based on the characteristics of infection control. In terms of safety concerns, respondents who thought that they were not safe from 코로나19 infections showed a relatively higher degree of stress compared to respondents who thought they were safe from infections, displaying a statistically significant difference. As for how safety concerns affected sanitary knowledge, the respondents who thought that they were not safe from COVID-19 infections scored higher compared to respondents who thought they were safe from infections, displaying a statistically significant difference. For this category, the respondents who have not subscribed to response guidebooks displayed higher scores compared to respondents who have, but the difference was not statistically significant. For the attitude of institutional food service dietitians based on the characteristics of infection control, the respondents who thought that they were not safe from COVID-19 infections scored higher compared to respondents who thought they were safe from infections, but the difference was not statistically significant. For the question of how well the respondents are complying to the guidelines, “average” had the greatest number of respondents, and “not complying well” had the lowest number of respondents, showing a statistically significant difference. For the analysis of attitude in personal hygiene and cafeteria management, not every category showed a statistically significant difference. For disease prevention, the attitude score was the highest when the number of meals with patients under investigation was 1, and the lowest when the number was over 2, showing a statistically significant difference. The respondents who responded that they are strictly complying with the guidelines scored the highest, and the respondents who were not complying well with the guidelines scored the lowest, showing a statistically significant difference. It can be assessed that the presence of safety concerns affects sanitary knowledge and attitude.
After examining the correlation between the degree of stress from COVID-19 response policies and prevention and the sanitary knowledge, attitude, and practices, there was a statistically significant positive correlation between the degree of stress and the attitude and cafeteria management category of the practices of dietitians. There was also a statistically significant positive correlation between the sanitary knowledge and the attitude, personal hygiene, cafeteria management, and disease prevention of dietitians.본 연구는 코로나19 대유행 시기에 단체급식 현장에서 근무하는 영양사를 대상으로 코로나19 대한 위생 지식, 태도 및 실천도에 대해 파악하여, 영양사의 코로나19 감염예방을 위한 효율적인 코로나19 감염관리 체계의 기초자료를 제공하고자 실시된 서술적 조사연구이다. 연구목적: 단체급식 영양사를 대상으로 코로나19에 대한 위생 지식, 태도 및 실천도에 대해 파악하고 단체급식 영양사의 코로나19 감염 예방 관리 체계의 기초자료를 제공하고자 한다. 연구방법: 단체급식 현장에서 근무하는 영양사를 대상으로 2021년 4월 13일부터 2021년 5월 14일까지 약 1개월 간 온라인 설문지를 배포하였고, 이 중 설문 응답자 169명을 연구 대상으로 선정하였다. 수집된 자료 가운데 최종 169부의 설문지가 SPSS 25.0 통계 프로그램을 사용해 분석되었다. 분석에서 사용된 주요 통계는 다음의 내용과 같다. 첫째, 조사대상자 특성과 감염 관리 특성을 비롯하여 코로나19 대응 방침 및 예방에 대한 스트레스 정도, 위생 지식의 정답 빈도의 응답에 대한 빈도 및 비율을 살펴보기 위해 빈도분석을 실시하였다. 둘째, 코로나19 대응 방침 및 예방에 대한 스트레스 정도와 위생 지식, 단체급식 영양사의 태도, 단체급식 영양사의 실천도의 표준편차 및 평균를 살펴보기 위해 기술통계를 산출하였다. 셋째, 단체급식 영양사의 태도와 단체급식 영양사의 실천도의 Cronbach's 값 산출을 위해 신뢰도 분석을 실시하였다. 넷째, 조사대상자 특성과 감염 관리 특성에 따른 단체급식 영양사의 태도와 단체급식 영양사의 실천도 차이를 알아보기 위해 일원배치 분산분석(ANOVA), 독립표본 t-검정을 실시하였다. 다섯째, 코로나19 대응 방침 및 예방에 대한 스트레스 정도와 위생지식, 단체급식 영양사의 태도, 단체급식 영양사의 실천도의 상관관계를 살펴보기 위해서 Pearson의 상관분석을 실시하였다. 본 연구는 유의수준 P<.05, P<.01, P<.001 하에서 검증하였다. 연구결과: 단체급식 영양사의 코로나19 대응 방침 및 예방에 대한 스트레스 정도가 매우 높은 것으로 분석되었다. 코로나19 관련 위생 지식 점수는 7점 만점에 5.41±1.07점으로 코로나19 감염 특징 증상에 대해 지식이 높았고 병원체에 대해서는 낮았다. 태도 점수는 코로나19 유증상자 또는 확진환자들의 격리 부분에서 높았고, 코로나19 감염 위험성 때문에 영양사를 휴직하거나 이직을 생각하는 것에 대해서는 낮았다. 실천도 점수는 5점 만점에 평균 4.20±0.65점으로 비교적 높은 실천도를 보였다. 개인위생 실천도에서는 배식 시 일회용 장갑을 착용하는 것에 대해 가장 높았고, 급식실 관리를 살펴보면, 소독용 세제, 손소독제, 체온계 등을 구비하는 것에 대해 높았다. 질병예방을 살펴보면, 급식실 내 위생실천 안내문이나 포스터를 부착하는 것에 대해 높았다. 여러 사람들이 이용하는 단체급식에 코로나19 대유행이 영향을 미처 단체급식 영양사의 코로나19 관련 위생지식과 태도, 실천도가 높아진 것으로 평가된다. 또한, 이에 따른 단체급식 영양사의 스트레스 정도가 높아진 것으로 평가된다. 조사대상사 특성에 따라 코로나19 대응 방침 및 예방에 대한 스트레스 정도, 위생 지식, 태도, 실천도를 살펴본 결과, 30대의 스트레스가 다른 연령대에 비해 가장 높았고, 20대가 가장 낮아 유의한 차이를 보였다. 근무경력이 8년 이상인 경우가 그 이하의 경력보다 가장 높아 유의한 차이를 보였다. 위생지식은 30대 평균이 가장 높았고 40대 이상이 가장 낮아 유의한 차이를 보였다. 근무 경력을 살펴보면, 1년 이하가 가장 높았고 8년 이상이 가장 낮았으나 유의한 차이는 아니었다. 태도 차이에서는 30대가 가장 높았고, 40대 이상이 가장 낮아 유의한 차이를 보였다. 교육정도는 4년제 졸이 가장 높았고, 전문대졸이 가장 낮아 유의한 차이를 보였다. 일식수로는 500-1,000식인 경우 가장 높았고 1,000식 이상인 경우가 가장 낮아 유의한 차이를 보였다. 실천도에서 개인위생을 살펴보면, 40대 이상이 가장 높았고, 20대가 가장 낮아 유의한 차이를 보였다. 교육정도로는 석사 이상이 가장 높았고, 전문대졸이 가장 낮아 유이한 차이를 보였다. 급식실 관리를 살펴보면, 연령에서 30대가 가장 높았고 20대가 가장 낮았으나 유의한 차이는 아니었으며, 운영 형태로는 직영인 경우가 위탁운영에 비해 높았으나 유의한 차이는 아니었다. 업장형태가 기타인 경우 가장 높았고, 병원이 가장 낮아 유의한 차이를 보였다. 질병예방은 40대 이상이 가장 높았고, 20대가 가장 낮았으나 유의한 차이는 아니었으며, 근무경력이 1년 이하인 경우 가장 높았고, 5-7년이 가장 낮아 유의한 차이를 보였다. 감염 관리 특성에 따른 코로나19 대응 방침 및 예방에 대한 스트레스 정도, 위생지식, 태도, 실천도를 분석하였다. 스트레스 정도를 분석해 보면, 안전 여부로는 코로나19 감염에 나 자신은 안전하다고 생각하지 않는 경우가 안전하다 생각하는 경우에 비해 스트레스 정도가 비교적 높아 유의한 차이를 보였다. 위생지식의 안전 여부로는 코로나19 감염에 나 자신은 안전하다고 생각하지 않는 경우가 안전하다고 생각하는 경우에 비해 비교적 높아 유의한 차이를 보였다. 대응지침서 구독 여부에 대해 없다고 응답한 경우가 있다고 응답한 경우에 비해 높았으나 유의한 차이는 아니었다. 감염 관리 특성에 따른 단체급식 영양사의 태도를 살펴보면, 안전 여부로는 코로나19 감염에 나 자신은 안전하다고 생각하지 않는 경우가 안전하다고 생각하는 경우에 비해 비교적 높았지만 유의한 차이는 아니었다. 지침준수 여부로는 보통이라 응답한 경우가 가장 높았고, 잘 수행하고 있지 않다가 가장 낮아 유의한 차이를 보였다. 실천도를 분석하여 개인위생, 급식실 관리를 살펴보면, 모든 항목 유의한 차이는 아니었다. 질병예방을 살펴보면, 유증상자 식사 횟수에서 1회인 경우 가장 높았고, 2회 이상이 가장 낮게 유의한 차이를 보였으며, 지침준수 여부에 대해 잘 수행하고 있다고 응답한 경우가 가장 높았고, 잘 수행하고 있지 않다고 응답한 경우가 가장 낮아 유의한 차이를 보였다. 이는 안전 걱정에 대한 유무가 위생지식과 태도에 영향을 미치는 것으로 평가된다. 코로나19 대응 방침 및 예방에 대한 스트레스와 위생지식, 태도 및 실천도 간에 상관관계를 살펴보면 스트레스 정도와 영양사 태도, 단체급식 영양사의 실천도의 하위요인인 급식실 관리 간에 유의한 정적인 상관관계가 있는 것으로 나타났고, 위생지식과 영양사 태도, 개인위생, 급식실 관리, 질병예방 간에 유의한 정적인 상관관계가 나타났다.

There was also a statistically significant positive correlation between the sanitary knowledge and the attitude, personal hygiene, cafeteria management, and disease prevention of dietitians.본 연구는 코로나19 대유행 시기에 단체급식 현장에서 근무하는 영양사를 대상으로 코로나19 대한 위생 지식, 태도 및 실천도에 대해 파악하여, 영양사의 코로나19 감염예방을 위한 효율적인 코로나19 감염관리 체계의 기초자료를 제공하고자 실시된 서술적 조사연구이다. 연구목적: 단체급식 영양사를 대상으로 코로나19에 대한 위생 지식, 태도 및 실천도에 대해 파악하고 단체급식 영양사의 코로나19 감염 예방 관리 체계의 기초자료를 제공하고자 한다. 연구방법: 단체급식 현장에서 근무하는 영양사를 대상으로 2021년 4월 13일부터 2021년 5월 14일까지 약 1개월 간 온라인 설문지를 배포하였고, 이 중 설문 응답자 169명을 연구 대상으로 선정하였다. 수집된 자료 가운데 최종 169부의 설문지가 SPSS 25.0 통계 프로그램을 사용해 분석되었다. 분석에서 사용된 주요 통계는 다음의 내용과 같다. 첫째, 조사대상자 특성과 감염 관리 특성을 비롯하여 코로나19 대응 방침 및 예방에 대한 스트레스 정도, 위생 지식의 정답 빈도의 응답에 대한 빈도 및 비율을 살펴보기 위해 빈도분석을 실시하였다. 둘째, 코로나19 대응 방침 및 예방에 대한 스트레스 정도와 위생 지식, 단체급식 영양사의 태도, 단체급식 영양사의 실천도의 표준편차 및 평균를 살펴보기 위해 기술통계를 산출하였다. 셋째, 단체급식 영양사의 태도와 단체급식 영양사의 실천도의 Cronbach's 값 산출을 위해 신뢰도 분석을 실시하였다. 넷째, 조사대상자 특성과 감염 관리 특성에 따른 단체급식 영양사의 태도와 단체급식 영양사의 실천도 차이를 알아보기 위해 일원배치 분산분석(ANOVA), 독립표본 t-검정을 실시하였다. 다섯째, 코로나19 대응 방침 및 예방에 대한 스트레스 정도와 위생지식, 단체급식 영양사의 태도, 단체급식 영양사의 실천도의 상관관계를 살펴보기 위해서 Pearson의 상관분석을 실시하였다. 본 연구는 유의수준 P<.05, P<.01, P<.001 하에서 검증하였다. 연구결과: 단체급식 영양사의 코로나19 대응 방침 및 예방에 대한 스트레스 정도가 매우 높은 것으로 분석되었다. 코로나19 관련 위생 지식 점수는 7점 만점에 5.41±1.07점으로 코로나19 감염 특징 증상에 대해 지식이 높았고 병원체에 대해서는 낮았다. 태도 점수는 코로나19 유증상자 또는 확진환자들의 격리 부분에서 높았고, 코로나19 감염 위험성 때문에 영양사를 휴직하거나 이직을 생각하는 것에 대해서는 낮았다. 실천도 점수는 5점 만점에 평균 4.20±0.65점으로 비교적 높은 실천도를 보였다. 개인위생 실천도에서는 배식 시 일회용 장갑을 착용하는 것에 대해 가장 높았고, 급식실 관리를 살펴보면, 소독용 세제, 손소독제, 체온계 등을 구비하는 것에 대해 높았다. 질병예방을 살펴보면, 급식실 내 위생실천 안내문이나 포스터를 부착하는 것에 대해 높았다. 여러 사람들이 이용하는 단체급식에 코로나19 대유행이 영향을 미처 단체급식 영양사의 코로나19 관련 위생지식과 태도, 실천도가 높아진 것으로 평가된다. 또한, 이에 따른 단체급식 영양사의 스트레스 정도가 높아진 것으로 평가된다. 조사대상사 특성에 따라 코로나19 대응 방침 및 예방에 대한 스트레스 정도, 위생 지식, 태도, 실천도를 살펴본 결과, 30대의 스트레스가 다른 연령대에 비해 가장 높았고, 20대가 가장 낮아 유의한 차이를 보였다. 근무경력이 8년 이상인 경우가 그 이하의 경력보다 가장 높아 유의한 차이를 보였다. 위생지식은 30대 평균이 가장 높았고 40대 이상이 가장 낮아 유의한 차이를 보였다. 근무 경력을 살펴보면, 1년 이하가 가장 높았고 8년 이상이 가장 낮았으나 유의한 차이는 아니었다. 태도 차이에서는 30대가 가장 높았고, 40대 이상이 가장 낮아 유의한 차이를 보였다. 교육정도는 4년제 졸이 가장 높았고, 전문대졸이 가장 낮아 유의한 차이를 보였다. 일식수로는 500-1,000식인 경우 가장 높았고 1,000식 이상인 경우가 가장 낮아 유의한 차이를 보였다. 실천도에서 개인위생을 살펴보면, 40대 이상이 가장 높았고, 20대가 가장 낮아 유의한 차이를 보였다. 교육정도로는 석사 이상이 가장 높았고, 전문대졸이 가장 낮아 유이한 차이를 보였다. 급식실 관리를 살펴보면, 연령에서 30대가 가장 높았고 20대가 가장 낮았으나 유의한 차이는 아니었으며, 운영 형태로는 직영인 경우가 위탁운영에 비해 높았으나 유의한 차이는 아니었다. 업장형태가 기타인 경우 가장 높았고, 병원이 가장 낮아 유의한 차이를 보였다. 질병예방은 40대 이상이 가장 높았고, 20대가 가장 낮았으나 유의한 차이는 아니었으며, 근무경력이 1년 이하인 경우 가장 높았고, 5-7년이 가장 낮아 유의한 차이를 보였다. 감염 관리 특성에 따른 코로나19 대응 방침 및 예방에 대한 스트레스 정도, 위생지식, 태도, 실천도를 분석하였다. 스트레스 정도를 분석해 보면, 안전 여부로는 코로나19 감염에 나 자신은 안전하다고 생각하지 않는 경우가 안전하다 생각하는 경우에 비해 스트레스 정도가 비교적 높아 유의한 차이를 보였다. 위생지식의 안전 여부로는 코로나19 감염에 나 자신은 안전하다고 생각하지 않는 경우가 안전하다고 생각하는 경우에 비해 비교적 높아 유의한 차이를 보였다. 대응지침서 구독 여부에 대해 없다고 응답한 경우가 있다고 응답한 경우에 비해 높았으나 유의한 차이는 아니었다. 감염 관리 특성에 따른 단체급식 영양사의 태도를 살펴보면, 안전 여부로는 코로나19 감염에 나 자신은 안전하다고 생각하지 않는 경우가 안전하다고 생각하는 경우에 비해 비교적 높았지만 유의한 차이는 아니었다. 지침준수 여부로는 보통이라 응답한 경우가 가장 높았고, 잘 수행하고 있지 않다가 가장 낮아 유의한 차이를 보였다. 실천도를 분석하여 개인위생, 급식실 관리를 살펴보면, 모든 항목 유의한 차이는 아니었다. 질병예방을 살펴보면, 유증상자 식사 횟수에서 1회인 경우 가장 높았고, 2회 이상이 가장 낮게 유의한 차이를 보였으며, 지침준수 여부에 대해 잘 수행하고 있다고 응답한 경우가 가장 높았고, 잘 수행하고 있지 않다고 응답한 경우가 가장 낮아 유의한 차이를 보였다. 이는 안전 걱정에 대한 유무가 위생지식과 태도에 영향을 미치는 것으로 평가된다. 코로나19 대응 방침 및 예방에 대한 스트레스와 위생지식, 태도 및 실천도 간에 상관관계를 살펴보면 스트레스 정도와 영양사 태도, 단체급식 영양사의 실천도의 하위요인인 급식실 관리 간에 유의한 정적인 상관관계가 있는 것으로 나타났고, 위생지식과 영양사 태도, 개인위생, 급식실 관리, 질병예방 간에 유의한 정적인 상관관계가 나타났다.
