Therefore, this study aimed to investigate the individual PPGRs to four types of different meals with varying carbohydrate levels and examine its association with 14-day glycemic variability and glycemic control using continuous glucose monitoring (CGM) in young, healthy adults. In a pre-intervention period, dietary records were conducted over non-consecutive 3 days to assess the participants’ usual nutrient intakes. In a two-week intervention, participants consumed four types of standardized test meals (bibimbap, sandwich, salad and fresh fruits) with different carbohydrate levels on separate days, and 2-hour PPGR was measured using CGM. PPGRs were recorded for up 2 hours with a 15 minute interval, and individual PPGRs for each meal type were grouped into ‘high-response’ and ‘low-response’ by cluster analysis. The average age of the participants was 22.5 years, with 22.8% being male. The mean postprandial glucose excursion of the fruit meal exhibited a rapid increase and decrease in glucose levels. Bibimbap meal’s excursion showed greater glycemic variability and a slower decrease compared to other meals. The sandwich meal showed gradual glucose excursion than the bibimbap but higher than that of the salad meal, which showed modest glucose excursion. In terms of the incremental area under the curve (iAUC) for each meal types, the average of bibimbap meal was 269.5 ± 124.5, sandwich meal was 196.1 ± 83.6, salad meal was 105.7 ± 47.6, and fruit meal was 224.6 ± 100.2. The glycemic response was highest in the following order: Bibimbap, fruit, sandwich, and salad. Individuals classified as high responders for each meal type showed sustained peak glucose levels for a longer duration compared to low responders. The 2-hour postprandial glucose level for all meals were significantly correlated with 14-day glycemic control.
