동해산 다시마 중의 알긴산의 고부가가치적 산업화 이용의 기초자료를 얻고자, 열수추출물 (HWEM),수용성 알긴산(WSA) 및 알칼리가용성 알긴산 (ASA)을 추출해 내어 그 각각의 수율, 겔화능, 겉보기점도, 용해성 (가용한계), 녹는점 등을 비교하여 보았다. 동해산 다시마 중 HWEM, WSA 및 ASA의 함량은 각각 8.3, 2.5 및 $19.1\%$이었다. 이 중 HWEM과 WSA는 전혀 겔화능이 없었고, 반면에 ASA는 $1.5\%$이상 농도에서 강한 점성과 함께 $Ca^{++}$이온에 의한 강한 겔화능도 지녔다.
